Nonstick cooking spray, for the pan
1 cup ketchup
1/4 cup honey
1 tablespoon yellow curry powder
Freshly ground black pepper
All-purpose flour, for dusting
1 sheet puff pastry, thawed
Yellow curry powder, for dusting
36 cocktail franks

Steps:

  • For the sauce: Use cooking spray to coat the inside of an 8-inch springform pan. Spray the outside of a 3 1/2- to 3 3/4-inch-diameter ramekin and place it in the center of the springform pan. Set aside.
  • Whisk together the ketchup, honey, curry powder and plenty of black pepper in a small saucepot. Bring to a simmer, then remove from the heat; set aside.
  • For the rolls: Lightly dust your work surface and a rolling pin with flour. Unroll the puff pastry and roll out to a 14-by-9-inch rectangle. Dust the top all over with the curry powder. Using one frank as a guide, cut the pastry into strips slightly smaller than the franks, about 1 1/4-by-2 1/4 inches. Roll each frank in a piece of pastry and pinch the seam to close it.
  • Preheat the oven to 425 degrees F.
  • Starting with the outer circle and allowing some space between, place each pig in a blanket vertically in the prepared springform pan in two concentric circles. Chill for 30 minutes. Bake until the tops are golden, about 35 minutes, then cover loosely with foil and bake until the inner puff pastry is baked through, about 25 minutes more. Pour the sauce in the ramekin and serve.

12 hot dogs
2 packages crescent roll dough
1 small onion, diced
1 lb ground beef
½ teaspoon salt
½ teaspoon pepper
½ cup tomato sauce
½ cup ketchup
½ teaspoon cumin
2 teaspoons chili powder
½ teaspoon sugar
½ cup shredded cheddar cheese
¼ cup green onion, finely sliced
cast iron pan, 10 inch (25 cm)

Steps:

  • Preheat oven to 375ºF (190ºC).
  • Cut hot dogs into thirds.
  • Cut crescent roll triangles in half lengthwise so you have roughly 1-inch (2 ½ cm) by 5-inch (13 cm) triangle slices.
  • Roll crescent dough around hot dog thirds, starting with the wider end of the dough closest to the hot dogs, making "pigs in blankets."
  • Arrange pigs in blankets around a 10-inch (25 cm) skillet in two tight circles, leaving a hole in the center of the skillet.
  • Bake 15-20 minutes, until dough puffs up and becomes golden.
  • In another large skillet, sauté onions until translucent.
  • Add the ground beef to the onions, then season with salt and pepper. Continue stirring ground beef until mostly cooked.
  • Add the tomato sauce, ketchup, cumin, chili powder, and sugar to the ground beef and onions. Stir until everything is well mixed. Simmer 10 minutes.
  • When chili and the pigs-in-blankets skillet are both ready, spoon chili to fill the hole in center of the skillet. Top with shredded cheddar cheese.
  • Bake another 5-10 minutes until cheese is well melted.
  • Top with diced green onion and serve.

3 hot dogs
One 8-ounce tube crescent roll dough
1 large egg, beaten
Yellow and spicy brown mustard, for serving
2 tablespoons chili, at room temperature
Quarter white onion, finely diced
2 tablespoons shredded sharp Cheddar
1 tablespoon sesame seeds
3 cornichons, halved lengthwise
3 grape tomatoes, halved
2 tablespoons sweet relish
1 tablespoon poppy seeds

Steps:

  • Preheat the oven to 375 degrees F and line a 9-by-13-inch baking sheet with parchment.
  • Slice off and discard the ends of each hot dog. Quarter the trimmed hot dogs, crosswise. Unroll the crescent roll dough on the prepared baking sheet. Split the dough in half lengthwise. Pinch the perforated seams of the dough together.
  • For the chili dog bites: Evenly space 6 teaspoon-size dollops of chili down the center of one strip of dough. Top each with some onions and Cheddar. Stand a hot dog piece upright in each pile of toppings. Fold the sides of the dough on the chili dog bite lengthwise to cover the filling, leaving holes for the hot dogs to stick out. Pinch the dough together between each hot dog. The filling should be sealed inside and the hot dogs peeking out. Use the dull side of a butter knife to score the dough between each hot dog. Brush the dough with egg and sprinkle with the sesame seeds.
  • For the Chicago dog bites: Arrange the remaining 6 hot dog pieces standing upright on the other dough strip. Nestle against each hot dog half a cornichon, half a tomato and a teaspoon relish. Fold and seal as the chili dog bites above. Brush the dough with the egg and sprinkle with poppy seeds.
  • Bake until golden brown, 15 to 17 minutes. Cool for 5 minutes. Pull-apart and serve with yellow and spicy brown mustard for dipping.

1 pound pizza dough, room temperature
10 all-beef hot dogs
Extra-virgin olive oil, for brushing

Steps:

  • On a lightly floured surface, roll dough into a 10-by-15-inch rectangle. Cut in half lengthwise, then crosswise into ten 5-by-3-inch pieces. Wrap each piece around a hot dog; pinch edges of dough to seal. Transfer to a parchment-lined baking sheet and freeze until firm, about 20 minutes.
  • Preheat oven to 375°F; brush a 9-inch springform pan with oil. Place a 4-ounce ramekin in center of pan. Trim edges of wrapped hot dogs flat (discarding excess); cut each crosswise into thirds. Brush dough with oil and arrange in pan cut-sides up, spaced 1/2 inch apart.
