PUFFY GREEN BEAN-CHEESE BAKE
Steps:
- Preheat oven to 350º Grease a 1 1⁄2-qt. casserole. Break in: * 2 large or 3 medium eggs Beat with rotary beater. Add: * 1 c. milk * 1⁄4 t. salt * 1⁄2 c. fine cracker crumbs * 1 T. finely chopped onion * 1 c. cheddar cheese cubes Stir well. Arrange on top: * 1 1⁄4 c. fresh green beans, cut in small pieces or equal amount frozen or canned beans Drizzle over: * 1 T. melted margarine Baked, uncovered, 50-60 minutes. May be prepared in advanced except for adding melted mararine.

Steps:
- May be prepared the day before.
- At least 4 hours before cooking, trim crusts and cut bread into 1 inch squares. Cut cheese into bite size pieces.
- In a large greased casserole, alternate layers of bread and cheese. Pour melted butter over top.
- Beat eggs well, stir in salt, pepper, mustard and milk, and combine thoroughly.
- Pour egg mixture over casserole; cover and refrigerate four hours or overnight.
- One hour before serving, bake at 350 degrees Fahrenheit, 30 minutes covered, then 30 minutes uncovered until top is golden and puffy.
- Serve immediately while it is still hot.

Steps:
- Spread softened butter over bread slices. Cut each slice into triangles. Line sides of 8x8 baking dish with some of the triangles, creating a crown effect. Line the bottom with the remaining slices. Beat eggs slightly, mix in remaining ingredients. Pour over bread in baking dish. Cook uncovered at 350 for 40 minutes. Remove and let stand for 10 minutes.
