This is a perfect fruit salad to prepare all winter long! It's pretty enough to serve as a dessert, yet satisfying enough to enjoy as a snack.

Number Of Ingredients 6

1 can (20 ounces) unsweetened pineapple chunks
1 package (3 ounces) cook-and-serve vanilla pudding mix
1 quart mixed fresh fruit chunks (apples, bananas, oranges, pears)
3/4 cup chopped pecans or walnuts
1/3 cup sweetened shredded coconut
Whipped topping, optional

Steps:

  • Drain pineapple and set juice and pineapple aside. In a saucepan, combine pudding mix and reserved pineapple juice. Cook and stir over medium heat until thickened. Transfer to a bowl and cool. , Fold in fruit, nuts, coconut and reserved pineapple. Chill until serving. Garnish with whipped topping if desired.

1 can (20 ounces) pineapple chunks
1 can (11 ounces) mandarin oranges
1 package (3 ounces) cook-and-serve vanilla pudding mix
1 cup sliced fresh strawberries
1/2 cup maraschino cherries
1 to 2 medium ripe bananas, sliced

Steps:

  • Drain pineapple and oranges, reserving juices in a 2-cup measuring cup; set fruit aside. Add enough water to juices to measure 1-1/2 cups. In a saucepan, whisk the juices and pudding mix. Cook and stir over medium heat until mixture comes to a full boil. Cool to room temperature, stirring occasionally., Fold in the strawberries, cherries and reserved pineapple and oranges. Cover and refrigerate. Just before serving, fold in bananas.

1 (6 ounce) can orange juice concentrate
1 (3 1/2 ounce) instant lemon pudding
3 bananas, sliced
1 (2 1/2 lb) can pears, cut up
1 (2 1/2 lb) can apricots, cut up
1 (2 1/2 lb) can peaches, cut up
1 (15 ounce) can mandarin oranges, drained

Steps:

  • Drain pineapple, reserve juice. Dissolve orange juice concentrate in the pineapple juice.
  • Mix instant pudding into the juice, add sliced bananas, pears, apricots, and peaches (bite sizes). Add drained oranges and pineapple. Mix and let stand for 24 hours in refrigerator.

1 (29 ounce) can peach slices, undrained
1 (20 ounce) can pineapple chunks, undrained
1 (3 1/8 ounce) box dry vanilla instant pudding mix
1 lb strawberry, stemmed and quartered
1 banana, sliced
1/2 pint blueberries
1 bunch grapes (I use the red ones)
1 -2 tablespoon sugar (optional)

Steps:

  • In a large bowl, combine peaches, pineapples, and vanilla pudding mix.
  • This includes the juices from the cans.
  • Mix well until pudding is dissolved.
  • Stir in strawberries, banana, blueberries, grapes, and sugar if desired.
  • Chill.

1/2 cup sugar
2 tablespoons cornstarch
1/3 cup orange juice
1 tablespoon lemon juice
1 (11 ounce) can mandarin oranges (drained)
3 -4 unpeeled apples, chopped (use green and red)
2 -3 bananas (sliced)

Steps:

  • Drain pineapple, reserving 3/4 cup juice.
  • In a saucepan, combine sugar and cornstarch. Add pineapple juice, orange juice and lemon juice. Cook and stir over medium heat until thickened and bubbly; cook and stir 1 minute longer. Remove from the heat; set aside.

This creamy fruit salad was served at a family reunion a number of years ago. Flaked coconut or chopped walnuts be substituted for the maraschino cherries. Also, sliced fresh fruit may be added to the salad, if desired (see note).

1 (3 ounce) package vanilla pudding mix (Cook & Serve Pudding Mix)
1 (15 ounce) can pineapple chunks, drained (RESERVE JUICE)
1 (12 ounce) can mandarin oranges, drained (RESERVE JUICE)
2 bananas, sliced
1/4 cup maraschino cherry, well drained (Cut cherries into halves or quarters)

Steps:

  • Pour the pineapple juice into a 1-cup measuring cup. If the pineapple juice does not equal 1-cup, then add mandarin orange juice until the cup is full.
  • In a microwave-safe bowl, combine the dry pudding mix with the 1 cup of reserved pineapple juice; stir well.
  • Microwave the pudding mixture on HIGH for 3 to 4 minutes until the mixture thickens and boils, stirring once during cooking. After the pudding boils, add the pineapple and mandarin oranges.
  • Cover with plastic wrap and refrigerate at least 4 hours to chill .
  • Prior to serving mix in the bananas and maraschino cherries (coconut or walnuts may be substituted for the cherries) Fresh fruit may be added at this time, if desired (see note).
  • NOTE: Feel free to add sliced, fresh fruit (about 2 cups or so) to the pineapple-orange pudding mixture.

1 (3 1/2 ounce) box cook and serve vanilla pudding
4 cups mixed fresh fruit (apples, bananas, grapes, kiwi etc.)
3/4 cup chopped pecans or 3/4 cup walnuts
1/3 cup coconut
4 ounces maraschino cherries, optional for garnish
whipped topping (optional)

Steps:

  • Drain pineapple, reserving juice & set pineapple aside. In saucepan, combine pineapple juice and pudding mix. Cook over medium heat until thickened. Cool.
  • Combine pineapple and other fruits, nuts and coconut in large salad bowl. Add dressing and stir to coat.
