Now he knows when mom say's she is making "pineapple upside down cake", he knows what I'm making! I also made it for my Dad's 4th of July birthday party, everyone loved it! You can also make it as a pudding, and put in individual serving dishes, for about 8 -10 people. It's that good!

  • Stir in pineapple, then fold in cool whip.

  • Make the cake:
  • Line the bottom of 3 buttered 8-inch round (2-inch-deep) cake pans with wax paper, butter the paper, and dust the pans with flour, knocking out the excess. Into a bowl sift together the flour, the cocoa powder, the baking soda, the baking powder, and the salt. In a large bowl with an electric mixer beat together the sugar and the butter until the mixture is combined well, add the eggs, 1 at a time, beating well after each addition, and beat in the vanilla.   • In a heavy saucepan whisk together the sugar, the cornstarch, a pinch of salt, and the chocolate and whisk in the boiling water. Bring the mixture to a boil over moderate heat, whisking constantly, and simmer it, whisking, for 2 minutes. Whisk in the liqueur, transfer the mixture to a metal bowl, and with an electric mixer beat in the butter, beating until the butter is incorporated. Set the bowl in a larger bowl of ice and cold water and beat the frosting until it is light and holds soft peaks.
  • Assemble the cake:
  • On a cake stand arrange 1 cake layer, spread the top with some of the frosting, and top the frosting with a second cake layer. Spread the second layer with some of the remaining frosting and top the frosting with the remaining layer. Spread the side and top of the cake with the remaining frosting. The cake may be assembled 4 hours in advance and kept at room temperature.

1 (14-ounce) can full-fat coconut milk
5 Medjool dates, pitted and chopped
1/4-1/2 teaspoon of sea salt
5 tablespoons chia seeds
For the cupcakes:
1 cup unsweetened almond milk
1 tablespoon apple cider vinegar
1 tablespoon flax meal
3 tablespoons water
1 cup chickpea (garbanzo bean) flour
1/2 cup brown rice flour
1/4 cup cocoa powder
1 teaspoon aluminum-free baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
2 teaspoons vanilla extract
1/4 cup real maple syrup
1/4 cup coconut oil, melted
1 cup dairy-free chocolate chips (I like Enjoy Life), plus more for garnish

Steps:

  • Make the frosting:
  • Combine the coconut milk, dates, and salt in a blender and blend until the mixture is smooth. This might take a few minutes. If end up with small bits of dates, that's OK. But you don't want to see chunks or even white slivers of the coconut milk. The color should be a very light tan. Taste, and if you want to add more salt, do it now and then blend for a few more seconds (I really like the saltiness a teaspoon brings). Pour the mixture into a medium jar or container with a lid. Stir in the chia seeds. Put the frosting in the fridge, covered, for at least 6 hours (overnight is best).
  • For the cupcakes:
  • Preheat the oven to 350ºF. Line a standard cupcake pan with 12 paper liners.
  • In a small bowl, combine the almond milk and apple cider vinegar. In another small bowl, make a flax egg: Mix the flax meal and water together. Let both the almond milk mixture and the flax egg rest for at least 10 minutes.
  • In a large bowl, whisk together the flours, cocoa powder, baking powder, baking soda, and salt.
  • Combine the vanilla, maple syrup, flax egg, and almond milk mixture in a bowl. Add the wet ingredients into the dry and stir to combine. Do not overstir. Pour in the coconut oil and chocolate chips and give it a few more stirs, until just combined.
  • Fill each cupcake liner with 1/4 cup of the batter. Bake for 18 to 20 minutes or until a fork or toothpick inserted in the center comes out clean.
  • Let your cupcakes cool on a wire rack if you have one. When they're completely cool, top them with the frosting. Sprinkle a few more chocolate chips on top.

1 box cooked pudding, any flavor
1 c milk
1 stick butter

Steps:

  • 1. On stove top in a small pot, cook the pudding slowly with the cup of milk. Stir constantly so the pudding doesn't burn. It will become VERY thick! Remove from heat when it comes to a boil.
  • 2. Once the pudding is removed from the heat, cover the top of it with plastic wrap making sure that it touches the pudding. This is so the pudding doesn't develop a "skin". Let cool completely.
  • 3. With a mixer, whip the butter until light and gradually add the cooked pudding. Whip until fluffy.

1 (4 ounce) package instant pudding mix (vanilla, chocolate)

Steps:

  • Pour milk into a deep narrow mixer bowl.
  • Add whipped topping mix, and pudding mix.
  • Beat slowly until well blended. Gradually increase speed to high and whip until mixture will for m soft peaks, about 4-6 minutes.
  • Store frosted cake in refrigerator.
