Smothered Chicken with Provolone Cheese image

4 units chicken breasts
1 units salt
1 units cayenne pepper
1 units olive oil
1 units white mushrooms
1 units bacon
12 cloves garlic
1 slices provolone cheese

Steps:

  • Rinse chicken breasts, season with salt and pepper, cayenne pepper. Get a big skillet and pour extra virgin olive oil into pan.
  • Add chicken (all 4 pieces at one time). After chicken is brown on one side, turn chicken over until tender and brown.
  • Take chicken out the pan and add mushrooms, bacon and garlic to pan to sautee. When bacon is brown take out the garlic and mushrooms and bacon put on paper towel to drain.
  • Put chicken back in the pan and add back the bacon, mushrooms and garlic. On top of chicken put the mushrooms, bacon and last put the provolone cheese on top.

Make these easy basil, tomato and cheese-topped marinated chicken breasts in your contact grill. Serve as-is or on toasted French bread slices.

4 boneless skinless chicken breast halves (about 1 1/4 lb)
1/2 cup zesty Italian dressing
1/2 teaspoon garlic pepper blend
2 tablespoons chopped fresh basil leaves
4 thin slices tomato
4 slices (1/2 to 3/4 oz each) provolone cheese

Steps:

  • Place chicken in shallow dish. Pour dressing over chicken. Cover and refrigerate about 30 minutes.
  • Heat closed medium-size contact grill for 5 minutes. Remove chicken from marinade; reserve marinade. Sprinkle chicken with garlic pepper. Place chicken on grill. Close grill. Grill 4 to 6 minutes, brushing with marinade once, until juice of chicken is no longer pink when centers of thickest pieces are cut. Discard remaining marinade.
  • Sprinkle each chicken breast with basil; top with tomato and cheese. Let stand on grill 3 to 5 minutes or until cheese is melted.
