EASY PUMPKIN PROTEIN MUFFINS



Easy Pumpkin Protein Muffins image

These soft and fluffy pumpkin protein muffins are easy to make and packed with protein to keep you full and satisfied!

2/3 cup flour
2/3 cup protein powder
1/2 tsp baking powder
1/4 tsp salt
2 tsp pumpkin spice
1/2 tsp cinnamon
1/2 cup plain whole milk greek yogurt
1 egg
3/4 cup pumpkin
1/3 cup sugar
1 tsp vanilla

Steps:

  • Preheat oven to 400 degrees. Line a muffin tin with liners or use non-stick spray.
  • In a large bowl combine flours, protein powder, baking powder, pumpkin spice, cinnamon and salt.
  • In a medium sized bowl whisk together pumpkin, yogurt, egg, sugar and vanilla.
  • Add wet ingredients to the flour mixture and mix until just combined.
  • Fill the prepared muffin tin, nearly filling each muffin to the top. This should make ~7 or so muffins, depending on the size of your muffin tin.
  • If desires, top with chopped nuts (I used pecans!), chocolate chips or even shredded coconut!
  • Bake muffins at 400 for 18-20 minutes until golden brown and a toothpick inserted comes out clean.
  • Allow to cool fully and enjoy! Store in an airtight container for up to 1 week or freeze for up to 2 months.

1 cup brown sugar
1/2 cup applesauce
2 cups pumpkin puree
1 teaspoon cinnamon

Steps:

  • Cream together margarine and sugar.
  • Add applesauce, pumpkin, and spices. Mix well.

1 (15 ounce) can pumpkin puree
4 eggs
1 cup white sugar
¾ cup water
¾ cup applesauce
½ cup medium-chain triglyceride (MCT) oil
12 drops liquid stevia
2 teaspoons vanilla extract
3 cups whole wheat flour
2 scoops whey protein powder
½ cup pecans, finely ground
2 tablespoons flaxseed meal
2 teaspoons baking soda
1 ½ teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
½ teaspoon ground cloves
¼ teaspoon ground ginger

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Coat 2 muffin tins with cooking spray.
  • Whisk pumpkin puree, eggs, sugar, water, applesauce, MCT oil, stevia, and vanilla extract together in a large bowl.
  • Stir flour, protein powder, ground pecans, flaxseed meal, baking soda, salt, cinnamon, nutmeg, cloves, and ginger together in a separate bowl. Pour over pumpkin mixture and mix until batter is just moistened.
  • Scoop batter into the prepared tins, filling each cup 2/3 full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 15 to 17 minutes.

3/4 cup whole wheat flour
3 tablespoons sugar (or splenda)
2 teaspoons baking powder

1 beaten egg (or egg substitute)
3/4 cup skim milk
2 tablespoons butter, melted (or applesauce)

Steps:

  • Preheat oven to 375 degrees.
  • Spray 12 2-1/2 inch muffin cups with nonstick cooking spray. Dust with flour and set asie.
  • In a large bowl, stir together dry ingredients and make a well in center of flour mixture.
  • In a small bowl, combine egg, milk and butter and then stir in pumpkin.
  • Add pumpkin mixture all at once to flour mixture and stir until just moistened (batter should be lumpy).
  • Spoon batter into prepared muffin cups, filling about 2/3 full.
  • Bake for 15 to 18 minutes or until a wooden toothpick inserted in centers comes out clean. Cool in pan on a wire rack for 5 minutes. Remove from muffin cups. Serve warm.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin.
  • Place dried cranberries in a bowl with hot water to cover. Let stand to rehydrate, 3 to 5 minutes.
