1 lb gemelli pasta or 1 lb other pastas
6 ounces sliced prosciutto
2 (10 ounce) packages frozen chopped spinach, thawed and squeezed of excess moisture
2 cups low-fat milk
2 cups low-fat ricotta cheese
1 garlic clove, minced
coarse salt
ground pepper
1/2 cup grated parmesan cheese

Steps:

  • Preheat oven to 400°.
  • Cook pasta a few minutes less than package instructions suggest.
  • Cut prosciutto into thin strips.
  • In a 9-by-13-inch baking dish, toss pasta with spinach, half of prosciutto, milk, ricotta, and garlic.
  • Season with salt and pepper.
  • Top with remaining prosciutto and Parmesan.
  • Bake until golden, 30 to 40 minutes.

1 (6.5 ounce) jar artichoke hearts, drained and sliced
1 tablespoon garlic powder

Steps:

  • Heat the oil in a large skillet over medium-low heat. Add the spinach, prosciutto, red peppers and artichoke hearts. Season with garlic powder. Cook and stir for 15 minutes, until heated through.

8 ounces packaged dried orecchiette or 8 ounces ziti pasta
1 tablespoon margarine or 1 tablespoon butter
2 medium onions, cut into thin wedges or 5 medium leeks, sliced
1 red bell pepper, cut into thin wedges
10 mushrooms, sliced
2 garlic cloves, minced
1/4 cup all-purpose flour
1/2 teaspoon anise seed, crushed
1 3/4 cups skim milk
1 1/2 cups reduced-sodium chicken broth
1/4 cup grated parmesan cheese
1 (10 ounce) package frozen chopped spinach, thawed and well drained
2 ounces prosciutto, cut into thin bite-size strips
1 medium tomatoes, seeded and chopped

Steps:

  • Cook the pasta according to the package directions.
  • Drain pasta; rinse pasta with cold water. Drain again.
  • In a large saucepan melt margarine or butter.
  • Add onions or leeks, bell pepper, mushroms and garlic.
  • Cover and cook about 5 minutes or until onions are tender, stirring occasionally. Stir in flour and aniseed.
  • Add the milk and chicken broth all at once. Cook and stir until thickened and bubbly. Stir in Parmesan cheese.
  • Stir in the cooked pasta, spinach, and prosciutto.
  • Spoon the mixture into a 2-quart casserole.
  • Cover and bake in a 350 degree F oven for 25 to 30 minutes or until heated through.
  • Let stand about 5 minutes.
  • To serve, stir gently and top with chopped tomato.

1 tablespoon extra-virgin olive oil
3 ounces prosciutto, sliced lengthwise into 1/2-inch-wide strips
2 large eggs, plus 2 yolks
1 ounce Pecorino Romano, grated (1/4 cup), plus more for serving
12 ounces rigatoni
Kosher salt and freshly ground pepper
5 ounces baby spinach

Steps:

  • In a large skillet, heat oil and half of prosciutto over medium; cook, stirring occasionally, until prosciutto is crisp, 3 to 4 minutes. Drain on paper towels; crumble. In a bowl, whisk together whole eggs, yolks, and cheese.
  • Cook pasta in a pot of salted boiling water 1 minute less than package instructions. Reserve 1 cup pasta water, then drain. Slowly whisk 1/4 cup pasta water into egg mixture. Add pasta and spinach to skillet, then slowly add egg mixture to pasta.

1 (12 ounce) package medium seashell pasta
1 (10 ounce) package frozen chopped spinach, thawed
2 eggs
¼ cup olive oil
½ cup bread crumbs
1 ½ (26 ounce) jars tomato basil pasta sauce
1 (8 ounce) package shredded Cheddar cheese
1 (8 ounce) package shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain. Bring 1/2 cup water to a boil in a saucepan, and cook the spinach 4 to 6 minutes, until tender.
  • Place the cooked pasta in a medium bowl. In a small bowl, whisk together the eggs and oil. Toss the pasta with the cooked spinach, egg mixture, and bread crumbs.
  • Cover the bottom of a 9x13 inch baking dish with 1/3 of the pasta sauce. Pour half of the pasta mixture into the baking dish, and cover with another 1/3 of the pasta sauce. Sprinkle with half of the Cheddar cheese and half of the mozzarella. Layer with remaining pasta mixture, and top with remaining sauce. Sprinkle with the rest of the Cheddar and mozzarella cheeses.

1 tablespoon butter
1/2 pound sliced fresh mushrooms
1 small onion, chopped

1/4 pound thinly sliced prosciutto, coarsely chopped

1 pound fresh spinach, coarse stems discarded, leaves washed well and spun dry
1/2 pound thinly sliced prosciutto, cut into 1/2-inch pieces
2 tablespoons finely chopped garlic
2 tablespoons chopped fresh basil leaves or 1 tablespoon dried basil, crumbled
2 tablespoons chopped fresh oregano leaves or 1 tablespoon dried oregano, crumbled
3/4 cup olive oil
1/2 pound Gorgonzola, crumbled
1/2 cup pine nuts, toasted until golden
Garnish: fresh basil leaves
Accompaniment: freshly grated Parmesan

Steps:

  • In a 6-quart kettle bring 5 quarts salted water to a boil for linguine.
  • Cut half of spinach leaves into thin strips and reserve remaining whole leaves.
  • In a large heavy skillet cook prosciutto, garlic, basil, and oregano in 1/2 cup oil over moderately high heat, stirring, until lightly browned, about 3 minutes.
  • Add pasta to boiling water and cook until al dente. Drain in a colander. Return pasta to kettle and toss with remaining 1/4 cup oil, prosciutto mixture, cut spinach and Gorgonzola. Season pasta with salt and pepper.
  • Arrange reserved spinach leaves on 4 plates. Mound pasta on spinach and sprinkle with pine nuts. Garnish pasta with basil leaves and serve with Parmesan.
