flour
12 oz pizza dough
4 hot dogs
5 cups water
¼ cup baking soda
1 egg yolk, beaten
coarse sea salt, to taste
shredded cheddar cheese
jalapeño, sliced into rings and seeds taken out
2 tablespoons butter, melted
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
shredded mozzarella cheese
pepperoni

Steps:

  • Preheat the oven to 450˚F (230˚C).
  • Dust the cutting board with flour, and cut the pizza dough into 4 equal pieces.
  • Roll each piece of dough out until it's a 12-inch (30 cm) rope. It's okay if the dough naturally shrinks.
  • Take the rolled out dough and wrap it around a hot dog in a spiraling motion, leaving room on the ends.
  • In a pot, combine the baking soda with the water and bring it to a boil.
  • Cook each pretzel dog in the solution for 30 seconds each. Remove with a slotted spoon and transfer to a baking tray.
  • Brush each pretzel dog with the egg wash.
  • Top the pretzels with your toppings of choice.
  • For sea salt, sprinkle the salt on top. For jalapeño cheddar, top the pretzel with cheddar cheese, then follow with jalapeños. For garlic butter, combine the butter, garlic, and parsley, and brush on top. For pizza, top with mozzarella and follow with pepperoni.
  • Bake in the oven for 12-15 minutes, or until it reaches a deep golden brown.

1 tablespoon white sugar
2 teaspoons kosher salt
1 (.25 ounce) package active dry yeast
4 ½ cups bread flour
¼ cup unsalted butter, melted
1 large egg yolk
1 tablespoon water
10 cups water
⅔ cup baking soda
¼ cup kosher salt, divided - or to taste
18 hot dogs

Steps:

  • Heat the beer in a saucepan over low heat until it reaches 110 degrees F (45 degrees C).
  • Combine the warm beer, sugar, and 2 teaspoons kosher salt in a bowl. Sprinkle the yeast on top, and let stand for 5 minutes until the yeast softens and begins to form a creamy foam.
  • Place the bread flour and butter in a bread machine. Add the yeast mixture, then select the dough cycle.
  • Preheat an oven to 450 degrees F (230 degrees C).
  • Line 2 baking sheets with parchment paper or grease with vegetable oil.
  • Beat the egg yolk in a small bowl with 1 tablespoon water; set aside.
  • Stir baking soda into 10 cups water in a large pot until dissolved, and bring to a boil.
  • Turn the dough out onto a lightly-oiled surface, and roll into a 10x20-inch rectangle.
  • Cut the dough into 18 1-inch wide strips, then wrap each strip tightly around a hot dog in a spiral, pinching the edges to seal, and leaving the ends open. About half an inch of hot dog should peek out of each end of the dough wrapper.
  • Drop 2 or 3 dough-wrapped hot dogs into the boiling water for 30 seconds.
  • Arrange the boiled hot dogs on the prepared baking sheets. Brush each pretzel dog with the egg yolk mixture, and sprinkle with the remaining 1/4 cup salt.
  • Bake in the preheated oven until golden brown, about 15 minutes.

We always make a big batch because these are just as good reheated the next day for 45 seconds in the microwave with some mustard! Yum!

2 (.25 ounce) packages active dry yeast
2 ½ teaspoons white sugar
2 cups warm water
2 cups warm milk
½ cup vegetable oil
1 ½ teaspoons salt
10 cups all-purpose flour

2 (16 ounce) packages hot dogs
¼ cup coarse kosher salt, or to taste

Steps:

  • Sprinkle the yeast and sugar over 2 cups of warm water in a small bowl. The water should be no more than 100 degrees F (40 degrees C). Let stand for 20 minutes until the yeast softens and begins to form a creamy foam.
  • Combine the yeast mixture with the warm milk, oil, and salt in a large mixing bowl; stir well to combine. Stir in half of the flour mixture until no dry spots remain. Stir in the remaining flour, 1 cup at a time, mixing well after each addition. The dough should be moderately stiff and slightly sticky. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Spray a large bowl with cooking spray, then place the dough in the bowl and turn to coat. Cover with plastic wrap or a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 45 minutes.
  • After the dough has risen, fill a large pot with about 8 cups water, 1 1/2 teaspoons salt, and the baking soda and bring to a rolling boil over high heat. While the water is coming to a boil cut the the dough into 20 pieces, about the size of a golf ball. Roll each piece into a 12 inch long rope about 1 1/2 inches thick.
  • Preheat an oven to 375 degrees F (190 degrees C). Lightly grease 2 baking sheets.
  • Dip a strip of dough into the boiling water using a pair of tongs, count to 5, remove it from the water, and place it on a paper towel for a few seconds. Wrap the strip around a hot dog, place on a baking sheet, and sprinkle with coarse salt. Repeat with the remaining strips of dough and hot dogs.
  • Bake in a preheated oven until they are golden brown, about 15 to 20 minutes.

Nonstick cooking spray, for the baking sheet
6 frozen dinner roll dough balls, thawed according to package instructions
6 hot dogs
1/4 cup baking soda
1 large egg, beaten
1 teaspoon pretzel salt
1 cup spicy mustard
Pickles, for serving

Steps:

  • Bring a pot of water to a boil. Preheat the oven to 425 degrees F. Spray a baking sheet with cooking spray and set aside.
  • Roll each dinner roll into a long rope approximately 1 1/2 to 2 times the length of a hot dog. Coil each rope around a hot dog, pinching the ends to seal them so they cannot come loose.
  • Add the baking soda to the boiling water, then, working in batches, drop the pretzel dogs into the water for 30 seconds and remove to a rack.
  • When all the dogs have been boiled, place them on the greased baking sheet. Brush with the beaten egg and sprinkle with pretzel salt.
  • Bake until the bread ropes are cooked and have turned golden brown, about 12 minutes. Serve with spicy mustard and pickles.

12 ounces pasteurized cheese food, such as Velveeta, chopped
2 tablespoons milk
1 tablespoon diced pickled cherry peppers in jar
1 tablespoon diced pickled jalapenos
1 tablespoon pickled jalapeno juice
8 natural casing all-beef franks
8 Pretzel Hot Dog Buns, recipe follows
1/4 cup pickled jalapenos, chopped for garnish, optional
1 cup milk
1/4 cup light brown sugar
2 tablespoons honey
1 packet active dry yeast
2 tablespoons unsalted butter
2 small cloves garlic, grated
3 cups all-purpose flour, plus more for dusting
1 cup bread flour
1/2 cup baking soda
Pretzel salt or coarse ground sea salt, for sprinkling

Steps:

  • For the cheese sauce: Add the cheese cubes, milk, pickled cherry and jalapeno peppers and jalapeno juice to a small saucepot and cook over low heat until melted and combined, 10 to 15 minutes, stirring occasionally.
  • For the franks: Heat a grill pan over medium-high heat. Grill the franks on the grill pan, making sure to turn and char on all sides. Cook for 4 to 5 minutes.
  • For the sandwich build: Split the Pretzel Hot Dog Buns in half, nestle the grilled franks in their pretzel blankets, pour over some spicy cheese sauce and top with some pickled jalapenos if you like. Enjoy!
  • In a small saucepan, heat the milk, 1/2 cup water, sugar and honey to 105 to 110 degrees F. Add to the bowl of a stand mixer. Sprinkle the yeast over the water mixture and wait for at least 10 to 15 minutes until the yeast blooms.
  • In a separate saucepan over medium heat, add the butter and garlic and cook until the butter is melted and the garlic is fragrant, 2 to 3 minutes.
  • Combine the all-purpose flour and bread flour in a mixing bowl.
  • Add the flour mixture to the bowl with the blooming yeast, and then add in the melted butter and garlic mixture. Mix on medium speed until the dough has come together and is smooth and elastic in texture and pulling away from the sides of the bowl, 5 to 7 minutes.
  • Line 2 baking sheets with silicone mats.Turn the dough out onto a lightly floured cutting board and form into a ball. Cut into 4 equal pieces, and then cut those in half to form 8 equal pieces. Using your hands, roll each piece into a ball and place onto a prepared baking sheet. Cover with a dish cloth and let them rest in a warm place for 12 to 15 minutes.
  • Once rested, lightly dust your work surface again and roll the balls into 7-inch logs. Place onto the other prepared baking sheet, cover, place back in the warm spot and let rest for an additional 30 minutes.
  • Preheat the oven to 425 degrees F. Place one oven rack high and one low. Line 2 more baking sheets with silicone mats or parchment paper.
  • In a large pot, bring 8 cups water to a boil, and then add the baking soda. In batches, place the dough in the water and cook for 30 seconds on each side.
  • Using a slotted spatula, remove the logs and place onto the prepared baking sheets. Sprinkle the logs with pretzel salt as they come out of the water, to ensure the salt sticks. Then cut 3 diagonal slits on top of the bread, not too deep.
  • Bake for 10 to 13 minutes, rotating between the top and bottom racks of the oven halfway through the cooking.

1 package regular active dry yeast
1 1/2 teaspoons sugar
1 1/3 cups warm water (105°F to 115°F)
4 1/3 cups Gold Medal™ all-purpose flour
8 bun-length hot dogs
3/4 cup baking soda
1 egg, beaten
1/4 cup sesame seed, toasted

Steps:

  • In large bowl of stand mixer, stir together yeast, sugar and warm water; let stand 3 minutes. Add flour; mix with dough hook attachment until dough forms a smooth, elastic ball. Grease large bowl with shortening; place dough in bowl, turning dough to grease all sides. Place in cold oven 50 minutes or until doubled in size.
  • Remove bowl from oven. Heat oven to 425°F. Gently push fist into dough to deflate; divide dough into 8 equal pieces. Using your hands, roll each piece of dough into a rope twice as long as hot dog length.
  • Pour baking soda into 6- to 8-quart Dutch oven or stockpot; fill with water. Stir with whisk until baking soda is dissolved. Heat to boiling.
  • Meanwhile, wrap each hot dog with dough, pinching ends together tightly (secure with toothpicks if necessary). Line large cookie sheet with cooking parchment paper. Using tongs, dip each pretzel dog in boiling baking soda-water mixture for 30 seconds. Place on cookie sheet. Brush dough with egg; sprinkle with sesame seed.
  • Bake 12 to 15 minutes or until golden brown. Serve warm.

I made these as part of our superbowl food spread, and they were enjoyed by all. Prep time does not include rise time. NOTE: If doubling the recipe, you do NOT need to double the baking soda dipping solution.

1 1/2 cups warm water
1 tablespoon sugar
2 teaspoons salt
1 (1/4 ounce) package active dry yeast
4 1/2 cups all-purpose flour

10 cups water
2/3 cup baking soda
1 large egg yolk, beaten with 1 tablespoon water
8 hot dogs, cut in thirds
sea salt, for topping

Steps:

  • Combine the warm water, sugar and salt in the bowl of a stand mixer and sprinkle the yeast on top. Let the mixture sit for about 5 minutes, until the yeast is foamy and begins to smell of yeast.
  • Add the flour and butter to the yeast mixture. Attach the dough hook to the stand mixer and, on medium-low speed, combine the mixture until the dough pulls away from the sides of the bowl and appears shiny, roughly 4 to 5 minutes.
  • Spray a large bowl with non-stick spray (or lightly grease with vegetable oil) and place dough in greased bowl. Cover with plastic wrap. Place bowl in a warm area and let dough rise for about 1 hour, or until doubled in size.
  • Place an oven rack in the top third of your oven, and preheat the oven to 450 degrees F. Line two cookie sheets with parchment paper. Spray parchment paper with non-stick spray. Set aside.
  • In a large pot, bring the 10 cups of water and the baking soda to a rolling boil.
  • Place the dough on a greased surface, and divide into 16 equal pieces (If you weigh dough, like I do, they will be about 2.20 oz. each).
  • Roll each piece into a long rope, roughly 12 inches long. Carefully wrap half of each piece around a third of a hot dog. Pinch the ends together to seal the dough. If you run out of hot dogs before dough, make regular pretzels. Cut a little more dough off (3 oz.), and shape as desired.
  • Place each shaped pretzel on the parchment lined baking sheet.
  • Boil the shaped pretzels and pretzel dogs, one at a time, in the baking soda water for 30 seconds each. Using a slotted spatula or spider strainer, remove each pretzel dog from the water and place it on a drying rack to allow any extra baking soda mixture to drip off.
  • Place the boiled pretzel dogs back on the parchment lined baking sheets. Brush with beaten egg yolk and sprinkle with pretzel or kosher salt.
  • Bake until golden brown, roughly 10 1/2 minutes (14 to 15 minutes for large pretzels).
  • Transfer pretzel dogs to a cooling rack for a few minutes before serving. Serve with a variety of mustards or cheese sauce.

These are going to be a huge hit in your household. The bread is hard and salty on the outside and soft and chewy on the inside - the perfect baked pretzel dog. If you've had pretzels from those places in the mall, these are just as good (maybe better!) at a fraction of the cost. Fun for kids and adults! Serve with your favorite...

1 1/2 c warm water (about 110 degrees)
1 Tbsp honey
2 1/4 tsp active dry yeast (1 pkg)
4 1/2 c bread flour
1 tsp kosher salt
1/4 c melted butter
10 c water
1/2 c baking soda
1 egg yolk
1 Tbsp water
14-18 hot dogs
Kosher salt to sprinkle on top (optional)

Steps:

  • 1. Add honey to the warm water and stir to dissolve (you can use sugar if you don't have honey). Stir in yeast and set aside until foamy. (5-10 min)
  • 2. In a large bowl, mix about 3 cups of bread flour and the 1 tsp. of kosher salt together. Add the melted butter & yeast mixture. Add the remaining 1 1/2 cups flour a little at a time until the dough pulls away from the sides of the bowl. Knead the dough on a lightly floured surface until smooth and elastic (about 8-10 min). I use my Kitchen-Aid mixer with a dough hook for this.
  • 3. Put dough in an oiled bowl and cover with plastic wrap. Let rise in a warm place until double (about 1 hour).
  • 4. When dough is ready, roll out on a lightly oiled surface to about 10 x 20 inches.
  • 5. Slice the dough into 1 inch wide strips. Wrap the dough around each hot dog, making sure to pinch the edges at each end. There should be about 1/2 inch of hot dog at each end showing. If you have any dough left over after wrapping your hot dogs, roll them into strips and shape into a pretzel. :)
  • 6. Bring the 10 cups of water to a boil and then add the baking soda and stir to dissolve. Add the dough-wrapped hot dogs a few at a time, and boil for about 30 seconds.
  • 7. Remove with a large slotted spoon and place on 2 greased baking sheets (or use parchment paper).
  • 8. Mix the egg yolk and 1 tablespoon water together, and brush on the pretzel dogs.
  • 9. Sprinkle with kosher salt if you like, and then bake in a preheated 425-450 oven for about 15 minutes, until golden brown.
  • 10. Remove from pans and let cool slightly...and then enjoy!

1 tablespoon sugar
2 teaspoons kosher salt
1 3/4 teaspoons instant yeast
1 1/2 cups warm water (about 110 F)
2 oz (4 tablespoons) unsalted butter, melted
10 cups water
2/3 cup baking soda
8 hot dogs, halved
1 large egg yolk beaten with 1 tablespoon water (for egg wash)
pretzel salt or coarse salt

Steps:

  • Add the flour, sugar, salt, yeast, water, and butter to the bowl of a stand mixer fitted with the dough hook. Mix on low speed until the dough comes into a rough ball. Knead on low speed for about 5 minutes, or until the dough is smooth and elastic (it should pull away from the sides of the bowl). Transfer the dough to a large bowl that's been sprayed with nonstick cooking spray. Cover the bowl with plastic wrap and let the dough rise for about 50 minutes, or until the dough has doubled in size. Preheat oven to 450 F. Line 2 baking sheets with parchment paper. Combine the 10 cups of water and the baking soda in a large stockpot or roasting pan and bring to a boil. Meanwhile, turn the dough out onto your work surface. Divide it into 16 equal pieces. Working with one piece at a time, roll the dough into approximately a 12-inch rope. Wrap the rope around one halved hot dog - be sure to pinch the ends very well to seal (to reduce the likelihood that the dough unravels when you boil in the next step). Repeat with the remaining pieces of dough until you've wrapped all of the dogs. One at a time, boil the pretzel dogs in the baking soda/water mixture for 30 seconds, transferring them to a wire rack afterward using a slotted spoon or spider strainer. Repeat with all 16 pretzel dogs. Transfer the dogs to the parchment-lined baking sheets. Brush them with the egg wash and sprinkle with the pretzel salt. PRETZEL DOGS AND MALL PRETZELS

If you love pretzels from the mall, then you will love these! The best combination is those hot fluffy pretzels wrapped around a juicy hot dog! On some of the pretzel dogs, we place 3 jalapenos ontop for a kick. Dip in nacho cheese for delicious bliss! With leftover pretzel dough, you can shape into regular pretzels and brush with melted butter and sprinkle coarse sea salt, garlic salt or cinnamon sugar (for a sweet treat). Everyone will drool over these, I know my husband does! :)

2 tablespoon(s) baking soda

Steps:

  • In a large mixing bowl, dissolve the yeast, brown sugar and salt in 1 1/2 cups warm water. Stir in flour, and knead dough on a floured surface until smooth and elastic, about 8 minutes. Place in a greased bowl, and turn to coat the surface. Cover, and let rise for one hour.
  • Combine 2 cups warm water and baking soda in an 8 inch square pan. Line 6 baking sheets with parchment paper.
  • After dough has risen, cut into 12 pieces. Roll each piece into a 3 foot rope, pencil thin or thinner. Twist into a pretzel shape, and dip into the baking soda solution. Place onto parchment covered baking sheets, and let rise 15 to 20 minutes.
  • Preheat an oven to 450 degrees F (230 degrees C).
  • Bake in the preheated oven for 8 to 10 minutes, or until golden brown. Brush with melted butter, and sprinkle with coarse salt, garlic salt or cinnamon sugar.
  • NOTES ***When forming the ropes, roll each one to about half the length you want, then set it aside while you roll the rest. By the time you get back to the first rope, it will have rested enough to roll further. A 3-foot long rope will make a pretzel approximately 8-inches in diameter. Plan on using one baking sheet for every two pretzels. ***

2/3 cup warm water (110ºF to 115ºF)
1-1/2 tsp. dark brown sugar
1 tsp. fast-rising yeast (1/2 of 1/4-oz. pkg.)
1-1/2 Tbsp. butter, divided
1-1/2 cups bread flour
1/2 tsp. kosher salt, divided
1 pkg. (16 oz.) OSCAR MAYER Wieners, cut into thirds
2/3 cup baking soda

Steps:

  • Add warm water to sugar, yeast and 1/2 Tbsp. butter in small bowl; stir. Let stand 5 min. or until foamy.
  • Use pulsing action of food processor to process flour and 1/4 tsp. salt just until blended. Add yeast mixture; process 1 min. or until mixture is well blended and forms ball that pulls away from side of container.
  • Transfer dough to medium bowl sprayed with cooking spray; turn dough over. Cover with plastic wrap. Let rise in warm place 30 min. or until doubled in size.
  • Punch down dough. Divide dough into 30 small balls, using about 1 Tbsp. dough for each ball. Roll each ball into 6-inch-long rope. Wrap 1 rope around each wiener piece; pinch together ends and seams together to seal. Place on 2 baking sheets sprayed with cooking spray.
  • Heat oven to 425ºF. Place racks on lowest and highest positions in oven. Fill Dutch oven with 2-1/2 qt. (10 cups) water. Add baking soda; stir until dissolved. Bring water just to simmer. Carefully add 6 wrapped wieners, 1 at a time, to hot water; cook 45 sec. or until dough start to puff. Remove from water with slotted spoon; return to baking sheets. Sprinkle with remaining salt. Place 1 pan on each oven rack.
  • Bake 13 to 14 min. or until lightly browned, switching pans on oven racks after 7 min. Transfer pretzel dogs to wire racks. Melt remaining butter; brush onto pretzel dogs.
