4 boneless skinless chicken breast halves (6 ounces each)
2 cups chicken broth
3 tablespoons lime juice
1 tablespoon chili powder
1 teaspoon grated lime zest
Fresh cilantro leaves, optional

Steps:

  • Place chicken in a 6-qt. electric pressure cooker. Combine broth, lime juice and chili powder; pour over chicken. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 6 minutes., Quick-release pressure. A thermometer inserted in chicken should read at least 165°. , Remove chicken. When cool enough to handle, shred meat with 2 forks; return to pressure cooker. Stir in lime zest. If desired, serve with cilantro., Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, stirring occasionally; add a little broth if necessary.

1 1/2 lbs. boneless skinless chicken breasts (, cut in chunks)
1/4 cup chopped cilantro
1/4 cup fresh lime juice
3 cloves garlic (, minced)
2 Tbs. olive oil
1 tsp. chili powder
3/4 tsp. kosher salt
1 avocado (, pitted, peeled and chopped)
lime wedges

Steps:

  • Arrange chicken pieces in bottom of Instant Pot.
  • Combine cilantro, lime juice, garlic, olive oil, chili powder and kosher salt. Pour over chicken.
  • Seal Instant Pot according to manufacturer's instructions and cook on Poultry cycle for 10 minutes.
  • Cool according to manufacturer's instructions.
  • Serve chicken and lime sauce over hot cooked rice or rice noodles.
  • Top with chopped avocado and serve with lime wedges.

1½ pounds boneless, skinless chicken breasts
1 cup chicken broth
Juice from 2 limes
1 bunch fresh cilantro (roughly chopped)
12 ounces frozen corn
2 garlic cloves (minced)
½ red onion (diced)
15 ounces black beans ( (drained and rinsed))
1 teaspoon cumin
salt and pepper (to taste)

Steps:

  • Place all ingredients in your Instant Pot
  • Put your lid on the pot and put the VALVE on sealing (not venting).
  • Press the MANUAL (or PRESSURE COOK) button and set timer for 20 minutes (or 25 minutes if chicken is frozen).
  • When timer is finished, do a QUICK RELEASE of the pressure by moving the valve to VENTING
  • Remove chicken from pot and shred, then add back into Instant Pot and mix with other ingredients.
  • Serve on top of nachos, salads, in tacos, wrapped in burritos - the possibilities are endless!
