4 cups mashed sweet potatoes
½ cup white sugar
2 tablespoons vanilla extract
4 eggs, beaten
½ pint heavy cream
¼ pound butter
1 cup packed brown sugar
½ cup all-purpose flour
1 ¼ cups chopped pecans

Steps:

  • Butter one 2 quart casserole dish. Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, combine the sweet potatoes, sugar, vanilla extract, eggs and cream. Blend well, and spread evenly in casserole dish.
  • Prepare the topping by combining the butter, brown sugar, flour and pecans. Mix until crumbly, and sprinkle over sweet potato mixture.
  • Bake for 30 minutes in the preheated oven.

6 -8 sweet potatoes
1/4 cup butter
1 dash cinnamon
2 tablespoons brown sugar
1 (16 ounce) bag mini marshmallows
1/2 cup flour
1/2 cup brown sugar
1/2 cup butter, melted
cinnamon
1 cup chopped toasted pecans

Steps:

  • Wash and skin potatoes, chop into large chunks.
  • Boil potatoes until tender and mash.
  • Stir in butter, cinnamon, brown sugar and mini marshmallows to taste.
  • Mix in a separate bowl, flour, sugar, cinnamon, and pecans, drizzle melted butter over mixture and stir to moisten, mixture should resemble chunky crumbs.
  • Pour potatoes mixture into casserole dish and cover with a thin layer of mini-marshmallows.
  • Top with pecan mixture.
  • Bake at 350ºF for 30 minutes or until brown and bubbly.

1/2 cup MIRACLE WHIP Dressing
1/2 cup packed brown sugar, divided

1/4 tsp. ground cinnamon

1/2 cup 2% milk

1/3 cup orange juice
1 teaspoon grated orange zest
1 tablespoon brandy

2 medium sweet potatoes, cooked & peeled
1/2 c milk
1/3 c sugar
2 eggs
2 Tbsp butter
1/2 tsp nutmeg
1/2 tsp cinnamon
CRUNCHY PRALINE TOPPING
2 Tbsp butter, melted
3/4 c com flakes
1/4 c chopped pecans or walnuts- i use pecans
1/4 c firmly packed brown sugar

Steps:

  • 1. Place potatoes in mixer bowl. Turn to low and mix about 30 seconds. Add milk, sugar, eggs,2 tablespoons butter, nutmeg, and cinnamon. Turn to high and beat about 1 minute. Fill small rameikins that have been sprayed with cooking spray about 3/4 full.
  • 2. Bake at 400°F for 20 minutes, or until set. It will puff up & start to brown & feel firm to touch.
  • 3. Mix all topping ingredients by hand. Spread on hot puff. May make extra & put on if wanted. I always did. Bake 10 minutes longer. Serve warm.
  • 4. Cooking time above under prep time does not include the time it took to cook the sweet potatoes to start out with. That will vary on how you do it. I would bake them in a 400° oven until soft for maximum flavor.

1/2 C. butter or margarine, melted
1/2 C. heavy cream
2 Large eggs
1 C. firmly packed light-brown sugar
3/4 C. chopped pecans
1/4 tsp ground cinnamen
1/4 tsp ground nutmeg
1 tsp vanilla exract

Steps:

  • In food processor, puree yams with 6 tbs. melted butter and 2 tbs. cream. Add eggs and 1/2 C. brown sugar. Process until blended. Spread half the potato mixture in shallow 2 quart baking dish, with remaining potato mixture in pastry bag fitted with large star tip, using Photo as a guide. Preheat oven to 375 degrees. In small saucepan combine remaining melted butter, cream and brown sugar, the pecans, cinnamon, nutmeg and 1/4 tsp. salt. Bring to boil, simmer 5 minutes. Remove from heat, stir in vanilla. Spoon over center of mixture. Bake 20 minutes. Garnish with pecan halves.

1 c evaporated milk
1 stick butter, melted
`1 tsp salt
1 1/2-2 c sugar

1 tsp nutmeg, or to taste
3/4 tsp cinnamon, or to taste
PRALINE TOPPING
1 c brown sugar
1/2 c all purpose flour
1 stick butter, softened

  • 1. PREHEAT OVEN TO 350 DEGREES F. In a large bowl combine sweet potatoes, milk 1 stick melted butter, sugar, slightly beaten egg yolks, and extracts. Beat until well mixed.
  • 2. In a separate bowl beat egg whites until stiff peaks form. Fold into sweet potato mixture. Pour into a greased 3 quart casserole dish, or 9 X 13X2 inch dish. Top with praline topping and bake.
  • 3. PRALINE TOPPING: Blend brown sugar, flour, softened butter, and chopped nuts together until crumbly. Sprinkle mixture over top of potato mixture, and bake for 35 to 45 minutes or until topping is bubbly and golden brown.

1/3 c spiced rum
TOPPING
1 c brown sugar, firmly packed
1 c pecans, chopped
1/3 c self rising flour
1/3 c butter, melted

Steps:

  • 1. Preheat oven to 350 degrees. Grease a 9x13 baking dish.
  • 2. In a large bowl, mix the sweet potatoes and sugar.
  • 3. Stir in the eggs.
  • 4. Mix in milk, vanilla extract, and 1/2 cup melted butter.
  • 5. Gradually stir in the rum until well-blended.
  • 6. Transfer mixture to baking dish.
  • 7. In a medium bowl, mix ingredients for topping. Sprinkle over sweet potato mixture

Sprinkle pecans on top. Bake at 350, uncovered, until set, about 40-50 min. Topping will be slightly soft but will harden as dish cools.
