¾ cup white sugar
⅔ cup salted sweet cream butter, softened
2 cups all-purpose flour
2 teaspoons baking powder
2 eggs
2 teaspoons lemon extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cream sugar and butter together in a bowl using an electric mixer until light and fluffy. Whisk flour and baking powder together in a separate bowl; gradually beat into creamed butter mixture until just combined. Beat eggs, 1 at a time, into butter-flour mixture until dough is thoroughly mixed; stir in lemon extract. Drop small scoops of dough onto a baking sheet.
  • Bake in the preheated oven until cookies spring back when touched, 10 to 12 minutes.

These little cookies are a rich decadent treat! You can be creative by using any kind of jam or preserves you like instead of pecans. Perfect for bringing to a party.

1 ½ cups butter
1 cup sugar
2 egg yolks
3 cups flour
1 teaspoon vanilla
60 pecan halves

Steps:

  • Beat butter and sugar together in a bowl using an electric mixer until creamy. Beat egg yolks into butter mixture and gradually beat flour into butter mixture until dough forms. Beat in vanilla. Cover bowl with plastic wrap and refrigerate dough for at least 2 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Roll chilled dough into walnut-sized balls and place 2 inches apart onto baking sheets. Flatten balls slightly and press an indentation into the center of each flattened ball. Fill each indentation with 1 pecan half.
  • Bake in the preheated oven until lightly browned, 12 to 15 minutes. Cool on cookie sheet for 5 minutes and transfer to a wire rack.

1 cup butter, soften
2/3 cup sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour

Steps:

  • Cream butter and sugar well. Beat the egg and add to the creamed mixture, along with the vanilla extract. Gradually add the flour. Drop the dough by the teaspoon, about an inch apart onto ungreased baking sheets (or lined with baking parchment). Bake at 350 degrees for about 15 minutes or until lightly browned around the edges. Let cookies rest on the baking sheet briefly, then remove to a cooling rack to cool completely. Store in a covered container.

I was making a pound cake for a gift for a friend when I came up with this one. It is so good. The person who received it told me that I am going straight to hell for making this (she ate the WHOLE THING IN ONE DAY!) so I guess I will be seeing my mother in law in my hereafter! LOL! It has a nice texture and flavor, it is messy to finish, but the end result is worth it. You really do not NEED to do the icing, but it adds a nice finish. (It will also fill in the chunks you pick off!)

1 1/2 cups sugar
1 cup butter (softened NO SUBSTITUTIONS)
2 cups cake flour
1/2 teaspoon salt
5 large eggs
1 teaspoon vanilla
1 cup crushed Oreo cookies (do not even think of using reduced fat or those ones that are already crushed up!)
1 cup vanilla frosting (Betty Crocker works great!)

Steps:

  • Cream butter, sugar and vanilla.
  • Gradually add flour and salt.
  • Add eggs one at a time.
  • Mix until well blended.
  • Fold cookies in until well blended.
  • Pour into greased and floured (be sure to generously grease and flour pan) 10x6-inch loaf pan.
  • Bake at 325°F for 1 hour or until knife comes out clean.
  • let cake cool completely (you may want to leave the house as the smell could cause you to tear into it before you have a chance to ice it).
  • Place cake on wax paper.
  • Heat frosting in it's container in microwave 20 seconds or until it can be poured.
  • Pour over cake.
  • Garnish with additional crushed cookies.

This recipe came from my great-grandmother. It's very similar to reposteria cookies that you can get in Mexican bakeries in San Antonio, Texas. We make them year round but they are especially nice at Christmas time. Use Crisco brand shortening for best results.

1 lb vegetable shortening
1 cup sugar
1 teaspoon vanilla
1 egg
5 cups flour
additional sugar, mixed with
cinnamon

Steps:

  • Pre-heat oven to 375 degrees.
  • Mix all ingredients together, starting with the shortening and adding each one in order. You can do this by hand or with a heavy-duty mixer.
  • Roll dough into 1 1/2 inch balls.
  • Place on ungreased cookie sheet.
  • Press with bottom of a small glass dipped in flour.
  • Bake 20 minutes.
  • When cookies are cool, dip in sugar-cinnamon mixture.

30 vanilla creme-filled chocolate sandwich cookies, divided
1 pkg. (16 oz.) pound cake mix
1/2 cup powdered sugar
1-1/2 tsp. water

Steps:

  • Heat oven to 350ºF.
  • Line 9x5-inch loaf pan with foil; spray with cooking spray. Coarsely chop 12 cookies. Prepare cake batter as directed on package; stir in chopped cookies. Pour into prepared pan.
  • Quarter remaining cookies; place evenly over cake batter.
  • Bake 1 hour or until toothpick inserted in center comes out clean, covering loosely with foil for the last 30 min. Cool cake in pan 10 min. Remove from pan to wire rack; discard foil. Cool cake completely.
  • Mix sugar and water until blended. (Glaze will be thick.) Drizzle over cake; let stand until glaze is firm.

2 cups softened butter (letting it sit is always better but if you are in a rush microwave is alright)
2 cups packed brown sugar
1 cup granulated sugar
4 eggs
3 teaspoons vanilla
4 cups all-purpose flour (if you want to add some healthiness u can use whole wheat)
2 teaspoons baking soda
1 teaspoon salt
4 cups chocolate chips (i usually use 5 cups)
1/2 teaspoon cinnamon (optional)

Steps:

  • cream together butter,brown sugar,white sugar.
  • Beat in eggs and vanilla.
  • combine with flour,baking soda and salt. Gradually blend into creamy mixture.
  • Stir in choco chips.
  • Spoon huge clumps of cookie dough onto greased pan.

Once I tried these, I never bothered making 'traditional' sugar cookies again. A soft, flavorful cookie that is a MUST for me at Christmas. Note, the original recipe said they were cut-out cookies but I never was able to get them to work well that way. That is why I make the round ones as described.

1 (16 ounce) package betty crocker golden poundcake mix
1/3 cup butter, softened
1 teaspoon almond extract
1 egg

Steps:

  • Heat oven to 375°F Mix half of the cake mix (dry), the butter, almond extract and egg in large bowl until smooth.
  • Stir in remaining cake mix.
  • Divide dough into halves.
  • Roll each half 1/8 inch thick on lightly floured board. (I like using a half flour, half powdered sugar mix.).
  • Cut into desired shapes.
  • Or roll into 1-inch balls, place on ungreased cookie sheet and flatten with the bottom of a glass.
  • Bake until edges are light brown, 6 to 8 minutes.
  • Cool slightly before removing from cookie sheet.
  • Cool completely.
  • Ice with Buttercream Icing (I use Recipe #261024) and decorate, if desired, with sprinkles etc.
  • Yields: 3 to 4 dozen cookies.
  • TIP: Add sprinkles to the icing and mix well.
  • Then ice cookies as usual. They are now decorated without a lot of the mess!
