Used to make this on occasion when the boys were little and asked for "Volcano Potatoes" - the original recipe came "Mary Masters - My Great Recipes", which periodically sent out a group of new recipes by mail.

Steps:
- 1. Place potatoes in salt water and bring to boil. Cook until tender, about 15 minutes.
- 2. Drain and mash potatoes with butter, eggs, salt, and pepper.
- 3. Spread mashed potatoes in a 2-quart casserole dish and make a deep well in the center of potatoes.
- 4. Place cheese into the well, pressing down firmly.
- 5. Bake at 375 for 20-25 minutes, or until cheese has melted and potatoes are heated through.
