1 lb potato, peeled and cut into 1 inch chunks
1 green bell pepper, cored,seeded,and cut into 1 inch pieces
1 red bell pepper, cored,seeded,and cut into 1 inch pieces
1 medium onion, cut into 1 inch chunks
1/4 cup olive oil
salt and pepper
1 lb Italian pork sausage

Steps:

  • Preheat oven to 425.
  • Spread the vegetables in a single layer in one or more large shallow roasting pans; do not crowd them or they will not brown.
  • Drizzle with the oil and sprinkle with salt and pepper to taste.
  • Stir well.
  • Roast the vegetables, stirring once or twice, for 45 minutes.
  • Pierce each sausage in two or three places with a fork.
  • Place the sausages on top of the vegetables.
  • Bake for 15 to 30 minutes, or until the sausages and vegetables are cooked through.
  • Serve hot.

1 1/2 to 2 pounds fingerling potatoes or red skin baby potatoes
1 small red bell pepper, seeded and cut into thin strips
1 Italian mild green pepper, cubanelle, seeded and thinly sliced
1 medium yellow skinned onion, thinly sliced
4 large cloves garlic, cracked away from skin
1 teaspoon crushed red pepper flakes
1/4 cup extra-virgin olive oil, divided
Coarse salt and pepper
2 cups shredded Parmesan, available in tubs near deli -- make sure to get shredded cheese, not grated
4 (6 to 8-ounce) boneless, skinless chicken breasts
4 plum Roma tomatoes or small, vine ripe tomatoes, seeded and chopped
15 to 20 leaves fresh basil, pile leaves, roll then thinly slice -- chiffonade

Steps:

  • Preheat oven to 500 degrees F.
  • Cut fingerling potatoes into halves or quarters, depending on thickness of fingerlings -- thin, small fingerlings may also be left whole, larger potatoes should be quartered to speed cooking process. If you are using small red potatoes, halve or quarter them in the same way.
  • Cover a large cookie sheet with foil. Place potatoes on cookie sheet. Combine with peppers and onions, garlic and crushed red pepper flakes. Coat the potatoes, peppers and onions with extra-virgin olive oil just enough to coat vegetables in a thin layer, 2 to 3 tablespoons. Season liberally with salt and pepper. Place potatoes in the oven and roast 20 to 22 minutes, until potatoes are just tender and peppers and onions are crisp at edges. Toss mixture with tongs, turning the potatoes after 15 minutes. When the potatoes are cooked, transfer them to a serving dish and peel the foil off the cookie sheet and discard for super-quick clean up!
  • While potatoes cook, prepare chicken. Roll out a 2-foot piece of waxed paper or foil near the stove top. Heat a large nonstick skillet over medium high heat -- your pan must be very hot when the chicken is added. Pile the shredded cheese on the work surface created with the waxed paper or foil. Season your chicken breasts with black pepper but no salt; the cheese will add enough salt to the taste of the dish. Press the breasts firmly into the cheese. Coat both sides of breasts with as much cheese as possible. Add 1 tablespoon extra-virgin olive oil to the skillet, 1 turn of the pan. Set breasts into the skillet and cook 7 minutes on each side, until cheese forms an even, golden casing around the tender chicken breasts.
  • While chicken cooks, combine chopped tomatoes with basil in a small bowl. Season with salt and pepper, to your taste.
  • Drain off any excess oil from chicken as you remove it from the skillet. Top chicken with big spoonfuls of raw sauce and serve with potatoes, peppers and onions.

2 yellow bell peppers (ribs and seeds removed), cut into 1-inch-wide strips
2 medium red onions, halved and cut into 1-inch wedges
3/4 pound white new potatoes, well scrubbed and cut into 1-inch chunks
5 garlic cloves, peeled (3 left whole and 2 cut into 12 slivers)
2 tablespoons olive oil
Coarse salt and ground pepper
2 1/2 pounds eye-of-round beef roast
3/4 teaspoon dried thyme

Steps:

  • Preheat oven to 400 degrees. Place peppers, onions, potatoes, and whole garlic cloves on a large rimmed baking sheet. Drizzle with half the oil, season with salt and pepper, and toss to coat.
  • Using a paring knife, make 12 small slits in top and sides of roast; push in garlic slivers. Move vegetables to sides of sheet. Place beef in center, and coat with remaining oil; rub all over with 1 1/2 teaspoons coarse salt, 1/2 teaspoon pepper, and thyme.
  • Roast 40 to 50 minutes, tossing vegetables occasionally, until tender and an instant-read thermometer inserted into thickest part of beef registers 130 degrees for medium-rare. Let meat stand 10 minutes, loosely tented with aluminum foil to keep warm. Cut half into very thin slices (reserve remaining half for leftovers). Serve with vegetables.
  • Cool remaining beef to room temperature; place in an airtight container, or wrap in plastic, and refrigerate.

12 links of your favorite italian sausage
8-10 large potatoes, peeled and chunked
4 large onions, chunked
3 medium bell peppers, seeded and sliced
1 tsp garlic powder with parsley
kosher salt and freshly ground black pepper to taste
1 1/2 c hot water
1/4 c olive oil, extra virgin or more to your taste

Steps:

  • 1. Prepare vegetables. Arrange sausage links in a large shallow casserole dish. Arrange vegetables around sausage.
  • 2. Sprinkle with salt, pepper and garlic. Drizzle with oil. Add water to casserole dish.
  • 3. Seal with tin foil and bake for 1 hour at 350-degrees. Remove foil and bake an addtional 20 or so until sausage and potatoes are browned.
  • 4. Serve with a good Italian or French bread to sop up the juices. Or if you prefer, serve sausage on a hoagie bun that has been dipped in the juices and then top sausage with peppers and onions and serve potatoes on the side.

Add a salad or crusty itallian bread for a side and you are all set. I sometimes use turkey sausage for a lower fat dish.

6 italian sausage links
6 medium potatoes, peeled and sliced thin
1 large onion, sliced
1 red pepper, sliced
1 green pepper, sliced
1 cup 2% cheddar cheese, shredded
salt and pepper (optional)

Steps:

  • Preheat oven to 350.
  • Heat a large pot of water to boiling, add sausage, (poke a few holes in them to let the fat out) cover and turn the heat off. Let poach for 20 minutes; drain and refrigerate untill cool. (I usually do this while making dinner the night before). Slice the sausages into 1/4 to 1/2 inch coins.
  • In a large casserole dish, layer half the potatoes, half the onion, half the peppers and half the sausage. Salt and pepper if desired.
  • Repeat layers.
  • Sprinkle cheese on top, cover with foil and bake at 350 for 1 1/2 hours or untill potatoes are cooked through. Remove foil for last 15 minutes of cooking.

2 Spanish onions, thinly sliced
2 cloves garlic, finely chopped

Charred peppers
Caramelized onions

12 eggs, lightly beaten
1/4 pound goat cheese, crumbled

2 scallions including green tops, thinly sliced
6 cherry tomatoes, cut in half

Steps:

  • For the Charred Peppers: Preheat broiler. Rub pepper with olive oil and place on a baking sheet. Broil peppers until the skins are charred on all sides. Place in a paper bag and let steam for 5 minutes. Remove skin and seeds and cut into julienne.
  • For the Onions: Heat butter and oil in a medium saute pan over medium heat. Add onions and cook until soft and caramelized. Add garlic and cook for 2 minutes. Season with salt and pepper.
  • For the Potatoes: Preheat oven to 375 degrees. Rub potatoes with olive oil. Place in a small baking dish and roast until just cooked through. Remove and slice into 1/4-inch thick slices.
  • For the Tortilla: Heat oil in a large saute pan. Add the peppers, onions and potatoes and cook for 1 minute. Add the eggs and season with salt and pepper to taste. When the eggs begin to cook around the edges, use a spatula to gently push eggs from edge of pan into the center. While the mixture is still loose, add chunks of the goat cheese and parsley. Continue to pull eggs to center of pan. When firm on bottom, invert onto a plate, add more oil to pan and place other side into pan. Cook for 1 minute. Flip onto a serving plate
  • For the Salad: Whisk together the vinegar, mustard and oil and season with salt and pepper to taste. Add the remaining ingredients and toss to coat. Top with the pine nuts.

Steps:

  • Scrub but do not peel potatoes; slice in food processor.
  • Heat nonstick pan large enough to hold all the ingredients until it is very hot. Reduce heat to medium-high; add oil and add potatoes. Stir often to brown on both sides.
  • Chop whole onion, and add to potatoes as they cook.
  • Wash, trim and seed peppers, and slice in food processor. When potatoes and onions have begun to brown, add peppers and cook a couple of minutes over medium heat.

One-Skillet Sausage, Peppers, Potatoes, and Onions image

3 tablespoons olive oil
4 sausages
1 pound baby potatoes, halved
2 pinches kosher salt
1 bell peppers, roughly chopped
1 large red onion, chopped

Steps:

  • Set a 10-inch cast-iron skillet over medium-high heat. After it gets good and hot, add the olive oil, then the sausages. Brown all over-about 2 minutes per side-then remove to a waiting plate. We're not trying to cook them through, just sear 'em!
  • Add another tablespoon olive oil to the skillet, followed by the potatoes, cut side facing down. Season with a big pinch of salt. Cook these for 5 minutes until browned, then flip and cook another 5 minutes. Transfer these to the plate with the sausages.

4 Tbsp margarine
dash(es) salt and pepper
3 tsp minced gralic
4 or 5 dash(es) italian seasoning
3 dash(es) olive oil or vegetable oil

Steps:

  • 1. you can buy a small ham or use the ham slices you can buy 2 or 3 of them,you can make slices or cut in to cubes before add to pan add 3 dashes oil to bottom of pan,add ham
  • 2. cut peppers i cut the tops off first and make a long cut down the side and then flatten the pepper cut into strips, then cut in half,add into pan, peel & cut ends off onions ,stand onion on flat top cut right down the middle to make a half round then slice ( not thin)then cut in half put into pan.
  • 3. wash the potatoes,I leave the skin on, cut in half,then take half cut in fours,add to pan, add minced garlic and italian seasoning add salt and pepper,mix well, add butter to top little more garlic and italian seasoning to top bake at 350 for a hour or til potatoes are golden brown

1/2 to 2 pounds fingerling potatoes or red skin baby potatoes
1 small red bell pepper, seeded and cut into thin strips
1 Italian mild green pepper, cubanelle, seeded and thinly sliced
1 medium yellow skinned onion, thinly sliced
4 large cloves garlic, cracked away from skin
1 teaspoon crushed red pepper flakes
1/4 cup tablespoons extra-virgin olive oil, divided
Coarse salt and pepper
2 cups shredded Parmesan, available in tubs near deli -- make sure to get shredded cheese, not grated
4 (6 to 8-ounce) boneless, skinless chicken breasts
4 plum Roma tomatoes or small, vine ripe tomatoes, seeded and chopped
15 to 20 leaves fresh basil, pile leaves, roll then thinly slice -- chiffonade

Steps:

  • Preheat oven to 500 degrees F. Cut fingerling potatoes into halves or quarters, depending on thickness of fingerlings -- thin, small fingerlings may also be left hole, larger potatoes should be quartered to speed cooking process. If you are using small red potatoes, halve or quarter them in the same way. Cover a large cookie sheet with foil. Place potatoes on cookie sheet. Combine with peppers and onions, garlic and crushed red pepper flakes. Coat the potatoes, peppers and onions with extra-virgin olive oil just enough to coat vegetables in a thin layer, 2 to 3 tablespoons. Season liberally with salt and pepper. Place potatoes in the oven and roast 20 to 22 minutes, until potatoes are just tender and peppers and onions are crisp at edges. Toss mixture with tongs, turning the potatoes after 15 minutes. When the potatoes are cooked, transfer them to a serving dish and peel the foil off the cookie sheet and discard for super-quick clean up! While potatoes cook, prepare chicken. Roll out a 2-foot piece of waxed paper or foil near the stove top. Heat a large nonstick skillet over medium high heat -- your pan must be very hot when the chicken is added. Pile the shredded cheese on the work surface created with the waxed paper or foil. Season your chicken breasts with black pepper but no salt; the cheese will add enough salt to the taste of the dish. Press the breasts firmly into the cheese. Coat both sides of breasts with as much cheese as possible. Add 1 tablespoon extra-virgin olive oil to the skillet, 1 turn of the pan. Set breasts into the skillet and cook 7 minutes on each side, until cheese forms an even, golden casing around the tender chicken breasts. While chicken cooks, combine chopped tomatoes with basil in a small bowl. Season with salt and pepper, to your taste. Drain off any excess oil from chicken as you remove it from the skillet. Top chicken with big spoonfuls of raw sauce and serve with potatoes, peppers and onions.

Roasted Sausages, Peppers, Potatoes, and Onions image

This is extremely filling. This originally came from one of my Italian cookbooks, then I tweaked it a little.

1 lb potato, peeled and cut in chunks
1 green bell pepper, cut up
1 red bell pepper, cut up
1 medium purple onion, cut up
1/4 cup extra virgin olive oil
salt and pepper
1 lb Italian sausage
4 garlic cloves, crushed

Steps:

  • Preheat oven to 450 degrees.
  • Spread the vegetables on pan. Drizzle with oil and sprinkle with salt and pepper.
  • Roast the vegetables for 45 minutes, stirring occasionally.
  • Pierce each sausage with a fork a couple of times. Put sausages on top of vegetables. Scatter the crushed garlic here and there on the vegetables.
  • Bake up to 30 minutes or until everything is thoroughly cooked. Serve hot.

This is so easy to make and one of our favs. This side dish goes well with almost anything like, chicken, sausage, pork and beef. Leftovers go into an omelet for a fantastic breakfast.

2 large potatoes
1 large onion
1 large bell pepper
oil for frying
salt and pepper to taste

Steps:

  • 1. To make this quick, I microwave my potatoes, for 2 I nuke for about 5 min. to soften them up
  • 2. I leave the skin on the potatoes and quarter them and cut into smaller pieces. Place in hot oil,( I use olive oil) and sautee just until they get crispy.
  • 3. Add onion and pepper, salt and pepper to taste.
  • 4. Cook until the potatoes are soft or to the consistancy you like. Remove from heat and add about 1/4 cup of water and cover. Let sit for about 5 minutes.
  • 5. With the leftovers (if there is any) I use in an omelet for breakfast.

Skillet Italian Sausages with Peppers, Onions, and Potatoes Recipe - (4.4/5) image

2 tablespoons olive oil
1 1/2 pounds Italian sausage cut into 1 inch lengths
1 pound red potatoes cut into 1 inch wedges
salt and ground black pepper
3 bell peppers, cored and sliced thin
1 onion, sliced thin
1-2 tablespoons tomato paste
2 garlic cloves, minced
1/2 cup dry white wine
1/2 cup water
1/2 teaspoon dried oregano or 1 teaspoon fresh
1 tablespoon sherry or balsamic vinegar

Steps:

  • 1. Brown Sausages: Heat one tablespoon of olive oil in 12 inch skillet over medium high heat until just soking. Brown sausages lightly on all sides, about 3 minutes total. Transfer to plate and set aside. 2. Microwave potatoes: Meanwhile toss potatoes with remaining 1 tablespoon olive oil, 1/2 teapoon salt, and 1/4 teaspoon pepper in microwave-safe bowl. Cover tightly with platic wrap and microwave on high until potatoes brgin to soften, about 5-7 minutes. Shake bowl without removing plastic halfway through cooking time to toss them. 3.Saute peppers and onions: Pour off all but 1 tablespoon fat from skillet. Add bell peppers nd onion and return to medium high heat until peppers begin to soften, about 5 minutes. Stir intomato paste and garlic, and cook until fragrant, about 30 seconds. 4. Cook Sausages: Stir in wine, water, and oregano, scraping up any browned bits from the bottom, and bring to a simmer. Nestle sausages and potatoes into the vegetables, cover and reduce heat to medium-low. Cook until sausages are no longer pink in center, about 10-12 minutes. 5. Season: Stir in vinegar and season with salt and pepper to taste. Mix well and serve.
