1 pound bulk Italian sausage
4 cups half-and-half
3 cups cubed potatoes
2 cups low-sodium chicken broth
2 cups whole milk
1 onion, chopped
½ teaspoon dried oregano
½ teaspoon red pepper flakes, or more to taste
½ teaspoon ground black pepper
2 cups torn kale leaves (bite-size pieces)

Steps:

  • Heat a large soup pot over medium-high heat. Crumble sausage into pot; cook and stir until browned, about 10 minutes. Drain and discard grease.
  • Stir half-and-half, potatoes, chicken broth, milk, onion, oregano, and red pepper flakes into sausage, bring to a boil, and reduce heat to low. Simmer until potatoes are tender, about 30 minutes. Season with black pepper; stir kale into soup. Simmer until kale is tender, 10 to 15 more minutes.

1 medium onion, finely chopped
2 teaspoons chicken bouillon granules

3 cups 2% milk
1 cup heavy whipping cream
1 tablespoon cornstarch
1/4 cup cold water

Steps:

  • In a large saucepan, cook sausage and onion over medium heat 4-6 minutes or until sausage is no longer pink and onion is tender, breaking up sausage into crumbles; drain., Stir in seasonings. Add potatoes, kale, milk and cream; bring to a boil. Reduce heat; simmer, covered, 10-15 minutes or until potatoes are tender., In a small bowl, mix cornstarch and water until smooth; stir into soup. 8 ounces hot Italian sausage, casings removed
8 ounces mild Italian sausage, casings removed
1 teaspoon salt
½ teaspoon ground black pepper
1 large yellow onion, chopped
2 stalks celery, thinly sliced
4 cloves garlic, minced
5 cups chicken broth
3 cups cubed sweet potato
1 bay leaf
1 (15 ounce) can great northern beans, drained
1 (15 ounce) can diced tomatoes, undrained
5 cups chopped kale, or to taste

Steps:

  • Heat olive oil in a large pot over medium-high heat. Add hot sausage, mild sausage, salt, and pepper; cook, breaking up sausage with the back of a wooden spoon, until no longer pink, about 5 minutes.
  • Stir onion and celery into the pot; cook and stir until onion is soft and translucent, about 5 minutes. Stir in garlic until fragrant, about 30 seconds. Add chicken broth, sweet potato, and bay leaf. Bring to a boil; cook over medium-high heat for 10 minutes.

12 red potatoes, thinly sliced
1 1/2 pounds bulk Italian sausage
1 onion, chopped
4 cups low-sodium chicken broth
3 cups whole milk
2 cups half-and-half
1/2 teaspoon fresh or dried oregano
1/2 teaspoon red pepper flakes, or more to taste
Salt and freshly ground black pepper
Splash of heavy cream
2 bunches kale, picked over, cleaned and torn into bite-size pieces

Steps:

  • Bring a medium pot of water to a boil. Add the potatoes and boil until they're just starting to soften, then drain and set aside.
  • In a large pot, crumble and brown the Italian sausage with the onions over medium heat, about 5 minutes. Drain as much of the fat as you can (blotting the surface with paper towels helps). Add the chicken broth, milk, half-and-half, oregano and red pepper flakes to the pot with the sausage and onions, bring to a simmer and simmer for 30 minutes. Give it a taste and adjust the seasoning as needed with salt, pepper and more red pepper flakes if needed.
  • Add the potatoes and a splash of heavy cream for richness, then stir in the kale. Cover and simmer for an additional 10 minutes, then serve.

1/2 pound smoked, cooked garlic sausage like kielbasa
4 tablespoons extra virgin olive oil
1 medium onion, diced
3 cloves garlic, minced
1 pound small boiling potatoes, peeled and sliced 1/2-inch thick
Salt and freshly ground black pepper to taste
4 cups, packed, very finely shredded kale leaves (about 1 bunch)
2 cups cooked kidney beans (see note)

Steps:

  • Slice the sausage into rounds about 1/2-inch thick. Heat two tablespoons of the oil in a heavy 3- to 4-quart saucepan, add the sausage and saute over medium heat until the sausage is just beginning to brown. Remove the sausages from the pan, draining well.
  • Add the onion to the pan and saute over low heat until it is soft but not brown. Stir in the garlic. Add the potatoes and six cups of water. Bring to a boil and simmer about 15 minutes, until the potatoes are tender.
  • Drain the potatoes, leaving the cooking liquid in the saucepan, and roughly mash them. Stir the mashed potatoes back into the liquid. Season with salt and pepper.
  • Add the kale, sausage, beans and 2 tablespoons olive oil to the soup. Bring to a boil and simmer until the kale has wilted, 6 to 8 minutes. Check seasonings and serve

8 c chicken broth, low salt
2 large sweet potatoes, peeled and diced small
3 c chopped kale
1 c canned cannellini bean, drained and rinsed
1 large carrot, peeled and diced small
1 stalk(s) celery, diced small
1 c cooked brown rice
1/2 small red bell pepper, diced small
1/4 c white wine
1/2 Tbsp sugar
1 tsp turmeric, ground
1 tsp oregano, dried
1 Tbsp parsley flakes
1 Tbsp minced onion
1/2 tsp minced garlic
1/4 tsp nutmeg
2 Tbsp olive oil

Steps:

  • 1. Heat oil in a skillet.
  • 2. Add the onion, garlic, celery and bell pepper and saute 5 minutes.
  • 3. Remove casing from the sausage. Cut sausage into slices.
  • 4. Add slices to the skillet and brown.

1-2 Tbsp olive oil
6 slice bacon
4 large garlic cloves, minced
2 celery stalks
1 onion, chopped
3 c kale, chopped

3-4 c water or just enough to cover
1 carrot, finely grated
salt and pepper to taste

Steps:

  • 1. Heat a large pot to medium heat. Add italian sausage, brown sausage, remove from pan and set aside.
  • 2. In that same pot add bacon, olive oil, celery, onion and garlic, cook until soft, about 7 minutes.

Kale, Smoked Sausage, and Potato Soup Recipe image

Number Of Ingredients 11

2 quarts chicken stock
2 Tablespoons olive oil
2 pounds peeled white potatoes,
cut into 1 inch thick chunks
2 cloves peeled and chopped garlic
1/2 teaspoon black pepper
1 pound well-washed kale, drained in a colander,
center stems removed, and chopped
1 pound link of smoked beef sausage,
cut into 1/8 inch slices and lightly browned
2 cloves peeled and chopped garlic

Steps:

  • In a large pot, bring the chicken stock, olive oil, and potatoes to boil, then simmer until the potatoes are fork-tender. Remove the potatoes from the stock, mash lightly in a bowl, leaving some lumps, and return to the pot. Add the salt and pepper and kale, and cook until the kale is tender, about 10-15 minutes. Saute the sausage with the garlic, and add to the soup. Simmer until heated through, about 5-10 minutes.

2 tablespoons olive oil, for sautéing
1½ pounds fully-cooked, smoked Linguica sausage - slice one fourth of the sausage into thin rounds - the rest into ¼-inch dice (Chorizo or Chourico are good substitutes if you can't find Linguica)
2 cups finely chopped yellow onion (2 medium onions)
2 tablespoons minced garlic (5-6 cloves)
4 cups low salt chicken broth (I recommend Swanson's)
3 cups water
2½ pounds russet potatoes, peeled, sliced into quarters lengthwise, then cut crosswise into 1-inch chunks.
1 teaspoon kosher salt
1 bunch kale, washed, thick center ribs removed, and slivered (I prefer the dark green dinosaur kale but any kale is fine)

Steps:

  • Heat 1 tablespoon olive oil in a large Dutch oven or heavy pot over medium heat. Sauté the sausage rounds for 1 minute or two, until they are nicely browned. Transfer to a small plate and set aside. Add diced sausage to the pot and cook, stirring, for about 3 minutes, until they start to brown a bit. Transfer to small bowl and set aside. Add 1 tablespoon olive oil to the pot, along with the chopped garlic and onions. Sauté over medium-low heat for 4-5 minutes until onions soften and start to get transparent. (Don't let them brown) Add broth, water, potatoes and salt to the pot. Bring to a boil. Lower heat to a steady simmer and cook for 15 minutes, until the potatoes are tender. Using a potato masher, mash half the potatoes right in the pot, so you have a creamy broth with some chunks of potato remaining. Add the cooked chopped sausage and the slivered kale. Cook for 3-4 minutes, until the kale wilts and the soup is heated through. Ladle soup into bowls and top each with a few rounds of cooked sausage. Enjoy!

1 diced onion
4 slices bacon
2 cloves garlic
1 quart chicken stock
1 quart water
1 cup heavy cream
3 large potatoes, quartered
1 of a bunch of kale

Steps:

  • Brown Sausage and set aside. In your soup pot, Cook bacon and set aside bacon, retaining fat. Sautee onion and later garlic in bacon fat Add Chicken stock, water, onion, sausage and potatoes. When potatoes are tender, add Kale and bacon. When kale is wilted, add cream. Heat gently and serve with a rusty bread!

  • brown the sausage in a dutch oven or large soup pot.
  • add onion and garlic and saute until onions are opaque
  • add potatoes.
  • add chicken base.
  • cover ingredients with water.
  • add evaporated milk, cover.
  • cook on medium until potatoes are tender.
  • add kale, cover and simmer on low 5 minutes.
  • add salt and pepper to taste.
