2 pounds medium red potatoes (about 7), cut into wedges
1/4 cup thinly sliced green onions
6 slices ready-to-serve fully cooked bacon, chopped
3/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter
1 cup shredded cheddar cheese

Steps:

  • In a large bowl, toss potatoes with green onions, bacon, salt and pepper. Place half of the mixture on a greased double thickness of heavy-duty foil (about 18 in. square); dot with 1 tablespoon butter. Fold foil over potato mixture and crimp edges to seal. Repeat to make a second packet., Grill, covered, over medium heat 20-23 minutes on each side or until potatoes are tender. Remove from grill., Open foil carefully to allow steam to escape. Sprinkle potatoes with cheese. Grill opened packets, covered, 3-5 minutes longer or until cheese is melted.

heavy-duty aluminum foil
1 pound lean ground beef
½ cup plain bread crumbs
¼ cup milk
2 tablespoons taco seasoning mix
2 baking potatoes, peeled and diced
1 cup salsa
½ cup shredded Cheddar cheese, or to taste

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate. Cut four 12x18-inch sheets of aluminum foil.
  • Mix ground beef, bread crumbs, milk, and taco seasoning mix together in a medium bowl until well blended. Shape into four 4-inch patties. Mix potatoes and salsa in another medium bowl.
  • Place 1 patty onto each piece of foil and top with 1/4 of the potato mixture and 1/4 of the Cheddar cheese. Wrap each packet securely using double-fold seals, allowing room for heat expansion.
  • Place packets, seam-side up, on the preheated grill. Cover the grill and cook, rearranging the packets several times, until patties are cooked through and potatoes are tender, about 25 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).

1 pound fully cooked kielbasa, cut into 1-inch pieces
2 small sweet potatoes, peeled and cut into 1/2-inch chunks
1 large sweet onion, cut into 1-inch chunks
4 stalks celery, cut into 1 1/2-inch pieces, plus celery leaves for topping
2/3 cup dried apricots
6 sprigs thyme
3 tablespoons extra-virgin olive oil
1 1/4 cups fresh orange juice (from about 2 oranges)
Kosher salt and freshly ground pepper
1/4 cup sherry vinegar

Steps:

  • Preheat a grill to medium. Toss the kielbasa, sweet potatoes, onion, celery, apricots and 4 thyme sprigs in a large bowl with 2 tablespoons olive oil. Drizzle with 1/4 cup orange juice and season with 1/2 teaspoon salt and a few grinds of pepper.
  • Tear off four 24-inch sheets of foil and fold each in half. Pile the kielbasa mixture on one side of each foil sheet. Fold the foil over and crimp the edges to seal well. Grill the packets, rotating them occasionally so they don't burn, until the vegetables are tender, 18 to 22 minutes.
  • Meanwhile, combine the vinegar with the remaining 1 cup orange juice, 1 tablespoon olive oil and 2 thyme sprigs in a medium skillet; season with 1/4 teaspoon salt. Bring to a boil and cook until syrupy and reduced to about 3 tablespoons, 5 to 7 minutes. Discard the thyme. Open the foil packets, drizzle with the sauce and sprinkle with celery leaves.

This is a recipe that I have had for years. I originally got it off of a Lipton Soup Mix box and changed a bit. I like red potatoes the best but any can be used. I also add chopped carrots if I have them on hand. Originally designed for grill, I have cooked them in the oven in packets on a cookie sheet.

4 potatoes
1 (1 ounce) package Lipton Onion Soup Mix
4 tablespoons parmesan cheese, divided
4 tablespoons butter, divided

Steps:

  • Tear off 4 large squares of aluminum foil and spray with Pam.
  • Scrub potatoes.
  • Slice with skins on (like you would to fix fried potatoes).
  • Divide potatoes among foil squares.
  • Shake soup mix package before opening to mix it up well. Divide among 4 foil squares. You may or may not use whole package, depend on personal preference.
  • Sprinkle 1 tablespoon cheese on each square of foil.
  • Put 1 tablespoon of butter on top of each foil square.
  • Fold sides to completely cover potatoes and form a square packet.
  • Put on grill, my DH, puts them on the shelf of our grill and cooks for 45 minutes.

seasoning salt to taste
½ cup butter
1 ¼ cups sour cream

Steps:

  • Peel and cut up the potatoes and carrots into bite-size chunks. Chop up onion.
  • Combine all veggies in tin foil or foil baking bag. Season with desired amount of seasoning salt and top with butter. Seal foil well (you may need more than one bag, so the vegetables are done evenly).
  • Grill until potatoes and carrots are soft, about 40 minutes (flip bags at least 3-4 times during grilling). Remove from grill and place the veggies in a large bowl and add the sour cream, mixing well.

I have been making these for years, it's a family favorite! all ingredients are wrapped in a foil pouch then grilled for about 30-40 minutes, add in some cooked cubed ham for a complete meal, you could even make the packets well in advance then refrigerate until ready to grill :) Make certain to use only large heavy-duty foil for this and spray the inside of the foil generously!

6 large potatoes (sliced 1/4-inch thick)
2 medium onions, chopped
1/3 cup grated parmesan cheese
1 cup grated cheddar cheese, shredded
1 cup mozzarella cheese, shredded
12 slices bacon, cooked and crumbled (I just use a 1-pound package of bacon)
6 tablespoons butter, cut into small pieces (use 3 tablespoons for each packet)
2 teaspoons seasoning salt
black pepper
shredded cheese

Steps:

  • Divide the sliced potatoes and onions equally between two pieces (about 18-inches each) heavy-duty foil, that has been sprayed liberally with cooking spray.
  • Sprinkle with seasoning salt, pepper and garlic powder; tossing lightly with hands to coat with seasonings.
  • In a bowl combine grated cheddar mozzarella and Parmesan cheese; divide and sprinkle over the potatoes and onions.
  • Divide/top with bacon and butter cubes.
  • Bring opposite ends of the foil together over filling and fold down several times.
  • Fold unsealed ends toward filling and crimp tightly (making a sealed packet, you may poke a small hole on top of the packet to let steam escape).
  • At this point to you may refrigerate for a few hours until ready to grill.
  • Place on grill over medium heat for about 35-40 minutes or until potatoes are fork-tender.
  • Remove from grill, carefully open the packets (be careful these packets have lots of steam inside, so open with care!) and sprinkle with more grated cheese.

1 medium potato, sliced into very thin rounds about 1/16th-inch thick, divided
4 tablespoons olive oil, divided
salt and pepper, divided
2 salmon fillets, about 170 g each
1 large orange, halved
1 lemon, halved

  • Preheat oven to 400F/200°C To a 12-inch long sheet of foil (I use Reynold's Heavy Duty Non-Stick), add half the potato slices in a pile in the center of foil. Slightly fan out the potatoes so air can circulate. Make sure potatoes are sliced very thin so they cook through in the same amount of time it takes the salmon to cook.
  • Evenly drizzle the potatoes with about 1 tablespoon of olive oil, season with salt and pepper, and repeat process with another sheet of foil and the remaining potato slices.
  • Top each pile of potatoes with 1 salmon filet.
  • Evenly drizzle each salmon filet with about 1 tablespoon olive oil.
  • Squeeze half the juice of the orange over one salmon filet and half the juice over the other filet.

4 medium potatoes
8 slices ham
8 slices processed cheddar cheese
1 medium onion
salt and pepper
cayenne pepper
butter

Steps:

  • Heat your grill to medium high.
  • Tear off 8 sheets of aluminum foil, 12x15 or so.
  • Butter 4 sheets and lay them out on counter.
  • Slice spuds and onion thin.
  • Take 1/3 of each potato slices and lay out on buttered foil the size of your cheese slice.
  • Top with onion's and ham, then with cheese, salt, pepper and cayenne.
  • Repeat ending with a few spuds on top.
  • Fold foil into tight packets and cover packets with one more sheet of foil.
  • Place on grill, cover and cook for 20 minutes, turn and cook another 20 minutes.
  • Unwrap and eat.
  • I have pre-made these to take camping.

4 medium potatoes, cut in 1/4 inch slices
2 Tbsp olive oil
2 clove garlic, minced
1 tsp dried oregano
1/2 tsp salt
1/2 tsp pepper
1/2 c sliced, pitted kalamata olives or ripe black olives
1/2 c sliced green olives with pimento stuffing
1 medium tomato, cut into thin wedges
1/3 c crumbled feta cheese

Steps:

  • 1. Preheat oven to 450 or grill to medium high.
  • 2. Combine the chicken breast, olive oil, potatoes and garlic. Mix well. Center one chicken breast half on a sheet of non-stick aluminum foil.
  • 3. Arrange potatoes around chicken. Sprinkle chicken and potatoes with oregano, salt & pepper. Top with olives.
  • 4. Bring up the foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeats steps with all chicken breasts to make 4 packets.
  • 5. Bake 25 to 28 minutes on a cookie sheet in oven OR Grill 22 to 35 minutes in a covered grill.
  • 6. Sprinkle with tomatoes and feta cheese just before serving.

My family, especially my husband, loves lots of flavor with his potatoes. We were getting bored with the same old baked potatoes. So we started doing this with them and they are fantastic. I put measurements for the seasonings, but I always just use a pinch or two of them. It's all according to taste.

4 potatoes, washed and patted dry
4 tablespoons butter, divided
1 onion, sliced
1/2 lb fresh mushrooms, sliced
1 teaspoon garlic salt, divided
1 teaspoon thyme, divided

Steps:

  • Preheat oven to 350 degrees.
  • Cut 4 pieces of tinfoil big enough to wrap everything up.
  • Slice one potato into thin slices and place on a piece of tinfoil.
  • Top with some sliced mushrooms and onions, to your taste.
  • Sprinkle with a pinch of garlic salt and thyme.
  • Top with 1 tbs butter.
  • Wrap tinfoil tightly around.
  • Repeat with remaining potatoes.
  • Place potato packets in oven.
  • Bake 30-40 minutes or until potatoes are tender.

1/3 cup olive oil
2 lbs new potatoes, sliced thinly (1/4-inch, the food processor makes that go very quickly)
2 slices of a sweet onions or 4 slices yellow onions, thinly sliced
3/4 teaspoon dried rosemary leaves or 1 teaspoon chopped fresh rosemary leaf
1/2 teaspoon salt
1/2 teaspoon pepper or 1 pinch cayenne pepper

Steps:

  • When the fire is lit but not ready, lay out 8 pieces of foil (about 12 by 8 inches) and brush with olive oil.
  • Shingle an eighth of the potatoes in a circle in the center of each piece of foil. Break the onion slices into rings and scatter evenly over each potato ring. Equally divide the remaining olive oil, rosemary, salt, and pepper over the potatoes.
  • With the potato rings intact, bring the two large edges of foil to the center, sealing firmly.
  • Fold over the other two short edges to seal. Place on a medium or medium-hot fire for 20 to 25 minutes or until the potatoes are cooked through (Cooking in foil packets is not an exact science, so remember to check one packet after 20 minutes for doneness and to make sure the bottom isn't burning.
  • If necessary, finish cooking with another foil sheet under the packets.).
