2 large baking potatoes, cut into 1/2-inch thick slices
salt and ground black pepper to taste
1 tablespoon vegetable oil
½ pound ground beef
1 (15 ounce) can black beans, drained
2 tablespoons taco seasoning
2 tablespoons water
8 ounces shredded Cheddar cheese, divided
¼ cup shredded lettuce
1 small tomato, chopped
¼ cup sour cream
¼ cup guacamole

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Pour 2 tablespoons of vegetable oil into a large bowl; toss the potato slices in the oil to coat.
  • Arrange the slices in a single layer on a baking sheet and sprinkle with salt and black pepper.
  • Bake in the preheated oven until the potato slices are golden brown, about 20 minutes.
  • While potato slices are baking, heat 1 tablespoon of vegetable oil in a skillet over medium heat; brown the ground beef in the hot oil, breaking it up into crumbles as it cooks, 8 to 10 minutes. Drain excess grease.
  • Mix the black beans into the ground beef; stir in the taco seasoning and water. Bring the mixture to a boil and reduce heat to medium-low. Simmer until the flavors have blended, about 10 minutes.

4 small russet potatoes, (about 3-4 inches long and 2 inches wide), scrubbed
2 tablespoons canola oil, divided
2 teaspoons kosher salt, divided, plus more to taste
½ stick unsalted butter, melted
¼ teaspoon freshly ground black pepper, plus more to taste
½ cup Frank's RedHot® Buffalo Wings Sauce
⅓ cup unsalted butter
½ teaspoon McCormick® cayenne pepper
1 ½ teaspoons distilled white vinegar
2 chicken breasts, boneless, skinless
1 teaspoon McCormick® Garlic Powder
½ cup chicken broth
1 ½ cups shredded mexican cheese blend, divided
2 roma tomatoes
½ red onion, diced
1 jalapeño, seeded and minced
1 clove garlic, minced
3 tablespoons fresh cilantro, chopped
½ teaspoon kosher salt
¼ teaspoon ground black pepper
lime, juiced
1 cup guacamole
¼ cup blue cheese dressing
fresh cilantro, roughly chopped

Steps:

  • Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  • Place the potatoes on the prepared baking sheet. Pierce all over with a fork. Rub with 1 tablespoon canola oil and season with 1 teaspoon salt.
  • Bake the potatoes for 60-70 minutes, until they are soft enough to gently squeeze with an oven mitt. Remove the potatoes from the oven and let sit for 15-20 minutes, until cool enough to handle.
  • Cut the potatoes in half lengthwise and scoop out the insides, leaving a ⅛-inch-thick border of potato flesh around the edges. Cut each piece in half again lengthwise and once more crosswise to create 2-inch-long triangles.
  • Arrange the potato triangles skin-side-up in a single layer on the baking sheet and brush with the melted butter. Flip skin-side-down and brush the insides with melted butter, then season with salt and ¼ teaspoon black pepper.
  • Bake for 12-15 minutes, until the insides are golden brown. Flip the potatoes skin-side-up again and bake for 8-10 minutes more, until the skins are crispy.
  • In a medium microwave-safe bowl, combine the buffalo sauce and butter. Microwave for 30-60 seconds, until the butter is melted. Whisk well to combine. Add the cayenne and white vinegar and whisk to combine.
  • Season the chicken breasts on both sides with 1 teaspoon salt, pepper to taste, and the garlic powder.
  • Heat the remaining tablespoon of canola oil in a large skillet over medium heat until shimmering. Add the chicken breasts and cook without moving until browned, 4-5 minutes. Flip the chicken and cook for another 3-4 minutes, until browned on the other side. Pour in the chicken broth, reduce the heat to medium-low, cover, and cook for 10-12 minutes more, or until the chicken is tender and cooked through.
  • Transfer the chicken to a medium bowl and shred with an electric hand mixer on medium-low speed, 1-2 minutes. (Alternatively, use 2 forks to shred the chicken.) Add the buffalo sauce and ½ cup shredded Mexican cheese and mix to combine.
  • Make the pico de gallo: In a medium bowl, combine the tomatoes, onion, jalapeño, garlic, cilantro, salt, pepper, and lime juice and stir to combine.
  • Set the broiler to high.
  • Arrange the potato wedges around the edges and over the bottom of an 8-inch cast-iron skillet. Top with the buffalo chicken and sprinkle the remaining 1 cup shredded Mexican cheese on top.
  • Broil the nachos for 2-3 minutes, until the cheese is melted and bubbling.
  • Top the nachos with guacamole, the pico de gallo, blue cheese dressing, and cilantro. Serve immediately.

2 red bell peppers, charred, stemmed, skinned and chopped
1 jalapeno, stemmed and chopped
2 red onions, thinly sliced

Two 9-ounce tubes Mexican pork chorizo
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 cup vinegar
1 tablespoon salt
1 tablespoon sugar
Homemade American Cheese, recipe follows
Leaves from 1 bunch fresh cilantro
1 cup sour cream
8 ounces firm, solid mild Cheddar, finely grated
8 ounces firm, solid low-moisture mozzarella, finely grated
4 tablespoons tapioca flour
2 teaspoons kosher salt
2 ounces melted unsalted butter
1/2 cup strong beer
1/2 cup milk

Steps:

  • Bring oil to 350 degrees F in a deep-fryer. Slice the potatoes thin on a mandoline. Run under cold water until the water is clean. Fry until crispy.
  • Saute the bell peppers, jalapeno and half the red onions in olive oil in a medium skillet over medium-high heat until the onion is translucent. Add the chorizo, chili powder, cumin and paprika, then reduce heat to medium and cook until the chorizo cooks through. Transfer to a food processor and blend.
  • Combine the vinegar, salt, sugar and remaining onions in a small saucepot and bring to a boil. Strain.
  • Layer the Homemade American Cheese over the chips. Top with hot chili to melt. Top with cilantro, sour cream and pickled onions and serve.
  • Line a 8 1/2-by-4 1/2-by-2 3/4-inch-deep loaf pan with plastic wrap.
  • Combine the Cheddar, mozzarella, tapioca flour and salt in a food processor and pulse to combine.
  • Combine the butter, beer and milk in a small saucepan and bring to a boil over high heat. Remove from the heat and slowly pour the hot liquid into the cheese, processing until fully melted and smooth (use caution when blending hot liquids). Spoon the mixture into the prepared loaf pan, spreading it evenly (it should fill three-quarters of the loaf pan). Let stand in the refrigerator until the cheese sets, 4 to 6 hours. Invert the pan on a cutting board to remove the cheese and peel off the plastic wrap. Cut crosswise into 16 slices.

Steps:

  • Preheat the oven to 300˚F (150˚C).
  • In a small bowl, combine 1 teaspoon of salt, the pepper, onion powder, paprika, garlic powder, chili powder, and cumin.
  • Slice the potatoes on a mandolin or with a sharp knife into ¹⁄₁₆-inch (1 mm) thick slices.
  • Transfer the potato slices to a large bowl and cover with water. Toss the potato slices around to remove excess starch, then drain the water.
  • Sprinkle the remaining 2 teaspoons of salt onto the potato slices and toss, then drain any excess water.
  • Sprinkle half the spice mixture over the potatoes and toss until well-coated.

  • Remove the steak from the pan and let rest on a cutting board for 10 minutes. Once rested, cut the steak into ½-inch (1 cm) cubes.

2 tablespoons taco seasoning
1 1/2 cups Perfect Cheese Sauce, recipe follows
1 cup diced tomatoes
1/4 cup pickled sliced jalapenos
1/4 cup thinly sliced scallions
2 tablespoons fresh cilantro leaves
1/2 avocado, diced
1/2 cup shredded lettuce, optional
1/4 cup crumbled cooked bacon, optional
3 tablespoons unsalted butter
1/4 cup all-purpose flour
1 tablespoon taco seasoning
3 cups milk, heated
4 ounces cream cheese, softened
2 cups grated sharp Cheddar
1/2 cup grated Parmesan

Steps:

  • Arrange the potato tots in a single layer on a baking sheet. Sprinkle with the taco seasoning. Bake according to package instructions. Let cool on the baking sheet for 5 minutes.
  • Transfer the potato tots to a large platter, stacking them no more than two high. Pour the Perfect Cheese Sauce over the tots. Garnish with the tomatoes, jalapenos, scallions, cilantro and avocado. Sprinkle with the lettuce and bacon, if using.
  • Melt the butter in a medium saucepot over medium heat. Stir in the flour and cook, stirring often, until a thick paste forms and turns golden brown. Stir in the taco seasoning and cook 30 seconds more.
  • Gradually whisk in the milk, adding 1 cup at a time. Allow the mixture to come to a simmer before adding the next. It will be extremely thick at first and will thin with each addition. When all the milk is added bring the sauce to a simmer and cook 5 more minutes. Whisk in the cream cheese.
  • Remove the sauce from the heat. Add the Cheddar and Parmesan and whisk until smooth. The sauce keeps refrigerated for up to 2 weeks or frozen for 6 months. If using from cold, carefully bring the sauce back to a boil before serving.

700g Maris Piper potatoes or King Edwards potatoes, scrubbed, spiralled into flat ribbons, then cut into round slices
2 tbsp olive oil
1 tsp smoked paprika
100g extra mature cheddar , grated
400g can black beans , drained and rinsed
½ small pack coriander , roughly chopped
20g pickled jalapeños , chopped
100g roasted red peppers , chopped
1 tbsp extra virgin olive oil
1 small red onion , finely chopped

Steps:

  • Heat oven to 220C/200C fan/ gas 8. Line two large baking sheets with baking parchment. Brush the potato slices with oil, season and sprinkle over the paprika. Bake for 10-15 mins until completely crisp.
  • Reduce oven to 200C/180C fan/gas 6. Transfer half the crisps to an ovenproof dish, layer with half the beans and cheese, then repeat. Return to the oven for 10 mins until the cheese melts.
  • Meanwhile, mix all the salsa ingredients and season. Top the nachos with salsa and coriander.

1/4 teaspoon chili powder
cayenne pepper, to taste
1/2 medium tomatoes, diced
1 green onion, chopped
1 tablespoon green chili, diced
2 tablespoons shredded 4-cheese Mexican blend cheese

Steps:

  • Preheat oven to 425°F
  • Clean and scrub potatoes, then chop them into thick wedges.
  • Combine potato wedges, oil (you want just enough to coat the potatoes), garlic powder, and taco seasoning in a baking dish. Stir until well combined.
  • Spread potatoes out into a single layer and bake for 25-30 minutes, or until potatoes are golden brown with a crispy outside. Stir occasionally during the baking time.
  • While potatoes are baking, combine the black beans, lime juice, cumin, chili powder, and cayenne pepper in a small saucepan over medium-low heat. Stir occasionally, cooking until the majority of the lime juice has been absorbed.
  • Remove beans from heat and mix with the tomato, green onion, and green chilies.
  • When potatoes are done, remove from oven and sprinkle with cheese. Return to oven for an additional 1-2 minutes to allow cheese to melt.
  • Sprinkle with bean mixture and serve. We enjoy them with just the bean topping, but you could also serve with salsa, sour cream, or guacamole too!

1 large baking potato
1/8 teaspoon salt
1 bottle (8 ounces) taco sauce
1/2 cup sliced green onions
1/2 cup chopped green chilies
1/2 cup shredded cheddar cheese
1/2 cup sliced ripe olives

Steps:

  • Scrub potato and cut into 1/4-in. slices. Arrange slices in a single layer on a greased broiler pan; sprinkle with salt. Broil 4 in. from the heat until golden brown. Turn potatoes; broil until tender. Drizzle with taco sauce; sprinkle with green onions, chilies, cheese and olives. Broil until cheese is melted. , Microwave Method: Arrange potato slices in a single layer on a microwave-safe plate; sprinkle with salt. Drizzle with half of the taco sauce. Cover and cook on high for 3-1/2 minutes or until tender, rotating plate once. Drizzle with remaining taco sauce; sprinkle with green onions, chilies, cheese and olives. Cover and cook for 30 seconds or until cheese is melted.

  • How to Make Classic Potato Skins:
  • Pierce 4 large russet potatoes with a fork. Bake directly on the oven rack at 350 degrees until tender, about 1 hour. Let cool, then quarter lengthwise and scoop out the flesh, leaving a 1/4-inch shell. Brush both sides with melted butter and season with salt and pepper. Bake, skin-side up, at 450 degrees until crisp, about 15 minutes. Add your favorite team toppings. (For cheesy skins, flip the baked shells over before topping, sprinkle with 1 cup grated cheddar cheese and bake an extra 5 minutes.)

1 seven-ounce bag of kettle-cooked potato chips
1 medium russet potato, peeled, and cut into 1-inch cubes
1/2 cup whole milk
1 tablespoon butter
Salt and pepper
4 strips thick-cut bacon
1 cup grated extra sharp cheddar cheese
2 to 3 scallions, sliced
1/4 cup sour cream

Steps:

  • 1. Preheat the oven to 400°F. 2. Place the peeled and cubed potato in a small sauce pan, and just cover it with cold water and a pinch of salt. Place the lid on the pot, crank the heat up to high, and cook the potatoes until they are fork tender. 3. To make the mashed potato topping, drain the potatoes and put them back in their hot pot (but not on a lit burner), just so a bit of the excess moisture will evaporate. Then pass the potatoes through a ricer, and add the butter and milk to the potatoes and mix to combine. Season with salt and pepper. If you do not have a ricer, don't despair. Just add the butter and milk to the chunks of potatoes and mash with a potato masher. 4. For the bacon bits, slice each thick-cut strip of bacon in half lengthwise, and then cut the thin strips about every quarter inch to create little squares. Put the bacon pieces into a small sauté pan over medium to medium-high heat, and cook until crisp, but not crisp all the way through, because they will continue to crisp slightly when you melt the cheese in the oven, and you don't want them to burn. Drain on a paper towel. 5. Fill an oven-safe wide plate with the chips. You don't need to use all of each topping; really, when building nachos, it depends on which chips and which dish you end up choosing. So just dollop away to your preference. Begin first with the mashed potatoes, then the extra sharp cheddar cheese, then the bacon bits, and lastly the scallions. Place the plate on a baking sheet, and bake for 10 minutes in the 400°F oven. 6. Lastly, dollop some sour cream over the top of the nachos, and serve straight from the oven, hot and gooey and really, really good.

SWEET POTATO WAFFLE FRY NACHOS

One 20-ounce bag frozen sweet potato waffle fries
8 ounces refried pinto beans
15 slices yellow American cheese
1/2 cup sour cream
1 red Fresno chile, thinly sliced
1/4 cup slivered black olives
2 scallions, thinly sliced
1/2 cup loosely packed fresh cilantro leaves
Sriracha, for drizzling

Steps:

  • Preheat the oven to 425 degrees F.
  • Spread the waffle fries on a rimmed baking sheet and bake, tossing once halfway through, until the fries are crisp and the edges are browned, 20 to 25 minutes (depending on the brand).
  • Push the fries toward the center of the baking sheet. Dollop the beans around the fries. Top with the American cheese. Place in oven until the cheese is melted, about 5 minutes.
  • Remove from the oven and top with the sour cream, Fresnos, olives, scallions, cilantro and sriracha.

Everyone will love these easy veggie nachos. They're full of calcium and fibre and contain 3 of your 5-a-day, so make a great better-for-you film night snack

3 small sweet potatoes (about 600g)
1 tbsp rapeseed oil
400g can black beans , drained
100g tomato salsa
40g cheddar , grated
1 avocado
1 lime , juiced
small bunch coriander , leaves picked and roughly chopped
½ red onion , finely chopped

Steps:

  • Pierce the potatoes a few times and microwave for 10 mins or bake at 180C/160C fan/gas 4 for 40 mins.
  • Heat (or increase) oven to 200C/180C fan/gas 6. Halve each potato and scoop out roughly half the flesh to save for another meal (you can mash and freeze it). Cut the potato skins in half lengthways, then season and rub with the oil. Line a roasting tin with baking parchment, arrange the potato skins in a single layer and bake for 15 mins until starting to crisp.
  • Scatter over the beans, salsa and cheese and return to the oven for 10-15 mins until the cheese is bubbling. Chop the avocado and toss in the lime juice. Top the potato skins with the avocado mix, coriander and red onion.

BEAN AND SWEET POTATO NACHOS



Bean and Sweet Potato Nachos image

A good twist on traditional nachos, these come from Linda McCartneys World Of Vegetarian Cooking. In fact, I did not make the sweet potato part, but I did make the rest of the recipe, and really loved the tomato/bean sauce. Omitting the sweet potatoes decreases cooking time by approx 60 minutes. I used only one whole green pepper, since I had no red pepper. I also made a spicy avocado guacamole, (see notes at end of recipe), and whipped some sour cream to accompany this, we loved it. Hope you enjoy them too!

1 lb sweet potato, peeled and diced
3 tablespoons olive oil
2 teaspoons cumin seeds
2 teaspoons coriander seeds
1 medium onion, sliced thinly
2 garlic cloves, crushed
1 small red chili, de-seeded and finely chopped
1 teaspoon paprika
400 g tinned chopped tomatoes
1/2 medium red pepper, diced
1/2 medium green pepper, diced
280 g tinned red kidney beans, rinsed and drained
225 g tortilla chips (corn)
225 g cheddar cheese
2 tablespoons chopped coriander, leaf
1 medium avocado, peeled, stoned and sliced
125 ml sour cream
1 fresh tomato, peeled and chopped
3 drops hot pepper sauce
1 tablespoon lemon juice

Steps:

  • In a large baking dish, mix the sweet potato, 2 tblsp of oil, cumin and coriander seeds, and bake, uncovered, at 180C/350F/gas mark 4, for 50-60 minutes until tender. (NB I did not make this part of the recipe)(If you also choose to omit this step, preheat the oven to 180C/350F/gas mark 4 now.).
  • Heat the remaining oil gently in a pan and add the onion, garlic, chilli and paprika.
  • Cover and cook until the onion is soft, about 10 minutes, stirring occasionally.
  • Add the tomatoes with their juice, and the peppers, and simmer, uncovered, for 5 minutes.
  • Stir in the beans.
  • Divide the corn chips between four individual ovenproof dishes, top with the bean mixture, then the sweet potato, and finish with the cheese.
  • Bake for 10 minutes until the nachos are well heated through, and the cheese has melted.
  • Serve sprinkled with coriander, with avocado and soured cream served separately.
  • NOTE: I made a simple guacamole with the avocado.
  • I mashed it with a tblsp lemon juice, then I added a chopped fresh tomato, a few drops of hot pepper sauce, and some ground salt and pepper.
  • I beat some lemon juice into a cup of cream.(I used more than recipe states, I like sour cream!).
  • I then served these separately, they were delicious with the nachos!

  • Slice the potatoes into 1/4-inch thick, then arrange in a single layer onto a large greased baking sheet/s.
  • Sprinkle both sides with seasoned salt (or white salt) and black pepper.
  • Place 4 inches from broiler heat and broil until golden brown; turn over the slices and broil other side of slices until browned and fork-tender.
  • Remove from oven and top with taco sauce, green onions, chilies, shredded cheese and sliced olives.
  • Broil until the cheese has melted.
