2 lbs ground potatoes (peeled & uncooked)
2 lbs ground beef
1 lb ground pork
1/2 cup ground onion

Steps:

  • Mix well& season with salt& pepper to taste.
  • Fill casing with above mixture Prick casing before cooking.
  • Cover with hot water& boil slowly about 1 hr.
  • Place in skillet or baking dish with a little water.
  • Cover& bake about 1/2-hr at 350-degrees.
  • Remove lid& continue baking about 1/2-hr.
  • Boil about 1/2-hr, then place in 350-degree oven in uncovered baking dish without water.
  • Turn once so both sides brown.

15 pounds potatoes, peeled
3 pounds onions, peeled
1 boneless pork shoulder butt roast (3 pounds)
3 pounds ground beef
1/3 cup all-purpose flour
5 to 7 tablespoons salt
4 tablespoons pepper
3 teaspoons ground allspice
1-1/2 teaspoons ground nutmeg
1/2 to 3/4 cup milk

Steps:

  • In a food grinder using the coarse disc, alternately process the potatoes, onions and pork. Combine with the ground beef. Mix until well distributed. , Combine all dry ingredients and sprinkle over potato/meat mixture. Add milk and mix well. , Sausage may be made into patties or stuffed into hog casings. Using immediately or freeze in serving-size portions.

1 lb ground beef
1 lb ground lean pork
1 lb potato, parboiled and ground
1/2 cup onion, grated
6 cups milk
2 teaspoons allspice
3 tablespoons salt
1 1/2 teaspoons white pepper

Steps:

  • To prepare casings: Let casings soak in cool water about five minutes to remove salt on outer surface (no longer, or they will become too tender to stuff) and flush salt from the inside by placing one end on faucet nozzle and turn on cold tap water (if you see holes or water leaking, cut and discard).
  • Remove casing from faucet and gently squeeze out water; cover rinsed casings and refrigerate until ready to use.
  • Mix ingredients in order given (ground beef, ground pork, potatoes, onion, milk, allspice, salt and white pepper).
  • Fill the casings make links by twisting the sausage where you wish the links to be (four inches is a good size for a regular serving, smaller links may be made for appetizer servings).
  • To cook, bake in 350F oven 1 hour; remove from oven and brown.
