POTATO CROQUETTE

1 1/2 pounds potatoes, peeled
1/2 cup freshly grated Parmigiano Reggiano cheese
1/2 cup finely chopped fresh parsley
Salt and freshly ground black pepper
2 eggs
1 mozzarella ball, cut into thin strips
1 cup dried bread crumbs
Extra-virgin olive oil, for frying

Steps:

  • Boil the potatoes until fork tender, and let cool for 20 minutes.
  • In a large bowl, mash the potatoes. (For a creamier texture, use a potato ricer.) Add the Parmigiano cheese, chopped parsley, and season with salt and pepper. Add one egg and mix well, until all the ingredients are evenly distributed.
  • Grab a handful of mashed potatoes and press into logs that are 1 1/2-inches thick by 3 inches long. With your finger, create an indentation in the middle of the log and add a slice of mozzarella. Close up the logs and make sure the mozzarella is fully covered. Reshape if necessary.
  • For the batter, dip potato logs in a beaten egg and cover with breadcrumbs.
  • Heat the extra-virgin olive oil in a large pot to 350 degrees F.
  • Fry in the oil in batches until the potato croquettes are crispy and golden brown.
  • Let drain on a paper towel lined plate, and serve warm.

Bacon, Cheddar, and Potato Croquette w/ Chipotle Sour Cream image

Potatoes, bacon and cheese - what a great combination. I coated these in Panko and they had a nice crunch. I couldn't stop eating them! If you like things a little spicy, add a few extra dashes of the hot sauce to the sour cream. Can't wait to make these again!

5 russet potatoes
5 strips bacon
4 oz cheddar cheese, cubed
1 c bread crumbs, seasoned (panko also works great)
2 eggs, beaten
4 oz butter
4 oz heavy cream
salt and pepper to taste
vegetable oil for frying
1/2 c sour cream
5-6 dash(es) chipotle hot sauce

Steps:

  • 1. Boil potatoes with skin on until fork tender (approx 60 min). Place bacon on baking sheet and cook until crisp, remove from oven and chop finely, set aside. When potatoes are fork tender, remove from pot and drain water. When potatoes are cool enough to handle, peel, and return to pot. Add cream, butter, then mash and stir over low heat until smooth. Stir in bacon, salt and pepper to taste.
  • 2. Assemble two bowls, one with beaten egg, and one with bread crumbs. Take a cube of cheese and form a ball of the potatoes around it; they should be about the size of a golf ball. Dip the ball in the egg wash then in the bread crumbs to coat. You can make the entire batch 1-2 days ahead of time, store in refrigerator.
  • 3. Preheat oil to 375 F degrees.
  • 4. Fry croquettes until golden brown and crispy on the outside, you should have a nice center of melted cheese.
  • 5. For sauce simply mix sour cream and chipotle hot sauce, serve

1 pound Yukon Gold potatoes, peeled and boiled
2 ounces butter
2 ounces sour cream
2 egg yolks
4 ounces grated white cheddar
2 scallions minced
Salt and pepper
2 tablespoons butter
2 tablespoons olive oil

Steps:

  • Rice potatoes. Whisk in butter, sour cream, and yolks. Fold in cheese and scallions. Season to taste. Chill for 1 hour.
  • Form into cakes 2 by 1 inch. Heat the oil and butter in a skillet on medium heat, until butter starts to foam. Gently place cakes in the pan and cook for approximately 3 minutes on each side or until golden brown.

1 tablespoon grapeseed oil
1 pound ground pork
2 tablespoons low-sodium soy sauce
Salt and freshly ground black pepper
2 tablespoons thinly sliced scallions, from the white and tender green parts of 4 to 6 scallions
6 medium potatoes (about 2 1/2 to 3-pounds), peeled and placed in a pot of enough water to cover
2 tablespoons butter, plus 2 tablespoons, cubed for sauce
1 cup orange juice
1 cup pineapple juice
1 lime, juiced
2 tablespoons green curry paste
2 cups panko bread crumbs seasoned with salt and pepper
2 to 3 liters canola oil, as needed for deep-frying

Steps:

  • Heat the grapeseed oil in a large skillet over medium-high heat.
  • When it begins to shimmer, add the ground pork and cook for about 10 minutes until it begins to brown. Using a slotted spatula, temporarily transfer meat to a plate, drain the excess fat from the skillet and return the pork to the pan. Add the soy sauce and cook for 2 or 3 minutes to allow the flavors to integrate, then season to taste with salt and pepper. Stir in scallions, and cook for 2 or 3 more minutes, then remove from heat and let cool to room temperature.
  • While the meat is browning, boil the potatoes until tender and drain well. Mash the potatoes with butter. (You want these potatoes to be "tight" mashed potatoes, not loose.)
  • In a medium saucepan, combine orange juice, pineapple juice, lime juice and green curry paste. Allow to reduce by half over medium heat.
  • Heat the oil in the deep-fryer to 375 degrees F or as directed in the manufacturer's instructions for similar foods.
  • Combine the mashed potatoes with the pork mixture and roll into golf-ball sized spheres. Roll in the bread crumbs and add to the deep-fryer basket. Cook until golden brown and drain on paper towels.
  • Remove sauce reduction from heat and whisk in cubed butter.
  • Spoon some sauce onto a serving plate and use as a dipping sauce for the korokee.
