POTATO BACON CLAM CHOWDER



Potato Bacon Clam Chowder image

A white, cream-based chowder, this recipe adds more then the usual ingredients. I added skin-on red potatoes, spinach leaves, mushrooms, and bacon for both flavor and texture. I don't always measure exactly, more of an eye for ingredients as I go along. Feel free to experiment.

4 slices bacon, diced
1 tablespoon butter, or as needed
¼ cup diced onion
2 cups cubed, red skin-on potatoes
1 (8 ounce) bottle clam juice, divided
¼ cup diced celery
¼ cup diced carrots
¼ cup diced mushrooms
1 ½ teaspoons ground black pepper
1 teaspoon salt
½ cup butter
1 cup all-purpose flour
2 cups whole milk
1 pint half-and-half
1 cup heavy whipping cream, or to taste
2 bay leaves
1 teaspoon dried thyme
1 teaspoon dried dill weed
2 (6.5 ounce) cans minced clams
6 leaves spinach, or more to taste
salt and ground black pepper to taste

Steps:

  • Place bacon in a large, heavy saucepan and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon to a paper towel-lined plate. Pour bacon drippings into bowl and reserve.
  • Melt 1 tablespoon butter in the same saucepan over medium-high heat. Cook and stir onions in hot butter until soft, 5 to 8 minutes. Add potatoes, 1/2 the bottle of clam juice, celery, carrots, mushrooms, 1 1/2 teaspoons pepper, and 1 teaspoon salt; bring to a simmer. Reduce heat to medium-low, cover, and cook for 15 minutes.
  • Melt 1/2 cup butter in a large pot over medium heat. Whisk flour into melted butter until smooth. Whisk milk, half-and-half, and cream into flour mixture until smooth and slightly thickened, about 10 minutes. Stir vegetable mixture, remaining clam juice, bay leaves, thyme, and dill into cream mixture. Bring to a simmer, reduce heat to medium-low, and simmer until vegetables are tender and chowder is hot, 15 minutes.
  • Stir minced clams, spinach leaves, and reserved bacon drippings into chowder. Cook until clams are heated through, 3 to 5 minutes. Season with salt and pepper to taste and garnish with cooked bacon.

2 cans (6-1/2 ounces each) minced clams
2 bacon strips, chopped
1 medium onion, chopped
2 tablespoons all-purpose flour
1 cup water
1-3/4 pounds potatoes (about 4 medium), peeled and cut into 3/4-in. cubes
1/2 teaspoon salt
1/4 to 1/2 teaspoon dried thyme
1/4 teaspoon dried savory
1/8 teaspoon pepper
2 cups 2% milk
2 tablespoons minced fresh parsley

Steps:

  • Drain clams, reserving clam juice. In a large saucepan, cook bacon over medium heat until crisp, stirring occasionally. Remove bacon with a slotted spoon; drain on paper towels., Add onion to drippings; cook and stir 4-6 minutes or until tender. Stir in flour until blended. Gradually stir in water and reserved clam juice; cook and stir until bubbly., Add potatoes and seasonings; bring to a boil, stirring frequently. Reduce heat; simmer, covered, 20-25 minutes or until potatoes are tender, stirring occasionally., Stir in milk, parsley and clams; heat through. Top with bacon.

I love chowders. I have combined these two chowders with a few extra ingredients to make a wonderful tasting chowder. I like to serve it the same as French Onion Soup with the garlic toast in the bottom of the bowl or garlic croutons and pepper jack cheese melted on top. UMMMMMMM Good! This is really a comfort food on a cold winter day.

2 tablespoons olive oil
1 small onion
3 garlic cloves, minced
6 potatoes (large baking potatoes)
1 (10 ounce) can baby clams
1 (16 ounce) heavy cream
1 (6 1/2 ounce) chopped clams with juice
4 cups fat-free low-sodium chicken broth
3 tablespoons butter
3 tablespoons flour
1/4 teaspoon cayenne pepper or 1/4 teaspoon red pepper
1 teaspoon black pepper
2 teaspoons salt
2 bay leaves
2 teaspoons Old Bay Seasoning

Steps:

  • In a large pot saute (sweat) chopped onions in olive oil.
  • Peel and dice potatoes into small bites and add to onions and olive oil.
  • Add cayenne pepper, black pepper and salt.
  • Cook potatoes with 1/4 cup of water covered until fork tender.
  • In a small pan on medium heat mix butter and flour as if your were making a gravy or white sauce.
  • Add flour and butter mixture to large pot and mix with potatoes.
  • Pour 4 cups chicken broth and stir until it starts to thicken.
  • Add can of whole baby clams and chopped clams with juice.
  • Pour in heavy cream.
  • (Thickness varies. Mashing some of the potatoes or adding instant potatoes for thickening.).
  • Cook for 30 minutes.
  • Top with Old Bay Seasoning.

LITTLENECK CLAM AND SWEET POTATO CHOWDER

Chowder Broth
2 medium sweet potatoes
2 tablespoons unsalted butter
1 medium Spanish onion, coarsely chopped
2 cloves garlic, coarsely chopped
2 tablespoons all-purpose flour
Kosher salt and freshly ground black pepper
1/2 cup dry white wine
2 to 3 cups bottled clam juice, as needed
Chowder Garnish
1 tablespoon unsalted butter
2 teaspoons canola oil
1 small sweet potato, peeled and cut into small dice
Kosher salt and freshly ground black pepper
1/4 pound slab applewood-smoked bacon, cut into small dice
1 cup dry white wine
16 fresh littleneck or cherrystone clams, scrubbed
2 teaspoons honey
1/2 cup coarsely chopped shelled fresh clams (steamers or cherrystones)
1/2 cup heavy cream
1 tablespoon finely chopped fresh tarragon

Steps:

  • To make the chowder broth, preheat the oven to 375°F.
  • Prick the sweet potatoes several times with a fork, place on a baking sheet, and roast in the oven until soft, about 45 minutes. Remove from the oven and let cool slightly. When cool enough to handle, halve each potato lengthwise and, using a small spoon, scrape the flesh into a medium bowl; discard the skins. While the potatoes are still hot, mash with a potato masher or fork until smooth.
  • Heat the butter in a medium saucepan or Dutch oven over medium heat. Add the onion and garlic and cook until soft, about 5 minutes. Stir in the flour and cook for 30 seconds. Stir in the sweet potato puree, season with salt and pepper, and cook until the puree is slightly thickened (you are making a sort of sweet potato roux).
  • Increase the heat to high, add the wine, and cook until completely evaporated, a couple of minutes. Add 2 cups of the clam juice and cook, stirring occasionally, until slightly thickened, 10 to 15 minutes. If the mixture appears to be too thick, thin with a little extra clam juice or water. Season with salt and pepper. Strain the mixture into a bowl and then return the liquid to the saucepan.
  • Meanwhile, prepare the chowder garnish. Melt the butter with the oil in a medium sauté pan over medium heat. Add the diced sweet potato, season with salt and pepper, and cook until golden brown and caramelized, about 10 minutes. Transfer with a slotted spoon to a plate lined with paper towels.
  • Wipe the pan out with paper towels and return it to medium heat. Add the bacon to the hot pan and cook until golden brown and crisp, about 7 minutes. Transfer with a slotted spoon to a plate lined with paper towels.
  • Pour the wine into a medium saucepan and bring to a boil over high heat. Add the clams, cover, and cook until all the clams open, about 4 minutes. Discard any that do not open. Remove the clams with a slotted spoon and place in a bowl.
  • Bring the chowder broth to a simmer over medium heat. Add the sweet potato dice, bacon, and honey and cook for 1 minute. Add the chopped clams and cook for 1 minute. Add the heavy cream and cook until just heated through, about 1 minute.
  • Ladle into bowls and garnish each bowl with a few clams in the shell and a sprinkling of fresh tarragon. Serve immediately.

SWEET POTATO AND CHIPOTLE CLAM CHOWDER

25 cherrystone clams, scrubbed
1/4 pound bacon, cut into 1/4 inch dice
½ lb. bay scallops
½ lb. bay shrimp
2 cups white wine
2 cups water
2 large leeks, cleaned and sliced (white portion only)
2 stalks celery, finely diced
3 tablespoons all purpose flour
6 cups clam stock (made from steaming the clams)
clam juice, if needed
2 teaspoons fresh thyme leaves
1 tablespoon chipotle puree
salt and freshly ground white pepper
2 large sweet potatoes, peeled and cut into 1/2 inch cubes
1/2 cup heavy cream

Steps:

  • In a large saucepan bring the wine and water to a boil. Add the clams, cover and cook until all of the clams have opened, discarding any that have not. Remove the clams to a bowl and strain the liquid through a fine mesh strainer into a bowl. This should yield 6 cups. If it does not, add some bottled clam juice. In a large saucepan cook the bacon over medium high heat until golden brown. Remove the bacon to a paper towel lined plate, and drain all but 3 tablespoons of the bacon fat from the pan. Add the leek and celery and cook, stirring frequently, until soft. Add the bacon back in along with the flour and cook for 2 minutes. Slowly add the reserved clam broth, thyme and chipotle puree to the pan, stir well, bring to a simmer. Add the potatoes and cook until soft, about 10 minutes. Add the cream, shrimp and scallops to the chowder and simmer, covered, over low heat. Add the clams back to the chowder and season with salt and white pepper.

CLAM AND POTATO CHOWDER

3 tablespoons all-purpose flour
3 cups clam juice, fish or chicken stock (page 91), or water
1 small yellow onion, diced
1 leek, white and light green parts only, thoroughly washer, thinly sliced
2 small inner celery stalks, sliced
2 large russet potatoes, peeled and cut into 1/2-inch pieces, or 1 pound red potatoes, cut into 1/2-inch pieces
1 sprig thyme
3 thick-cut bacon slices or pancetta slices
3 cups half-and-half or milk
3 (6 1/2-ounce) cans clams, coarsely chopped
Chopped fresh parsley, for garnish

Steps:

  • Combine 3 tablespoons of butter and the flour in a saucepan over medium-high heat. Cook, stirring constantly, for 5 minutes, until the butter begins to froth and brown lightly. Slowly add the water or stock, stirring constantly to ensure smooth blending, for about 10 to 15 minutes, until the sauce is thick enough to coat the back of a spoon.
  • Place a large sauté pan over medium-high heat and add the remaining tablespoon of butter. Add the onion, leek, and celery and sauté for about 5 minutes, until just translucent.
  • Transfer the contents of the pan to the slow cooker and add the potatoes and thyme. Pour in the sauce. Cover and cook on low for about 6 hours, until the potatoes are tender.
  • Place a sauté pan over medium-high heat. Add the bacon and cook, turning, until crispy. Transfer to paper towels to drain, and then dice.
  • Stir the half-and-half, bacon, and clams into the chowder and continue to cook for 30 minutes, until heated through.
  • Ladle into bowls and serve garnished with the parsley.
  • VARIATIONS
  • To make a good vegetarian chowder, omit the clams and bacon and add 3 cups of fresh or frozen corn or mixed vegetables.

My partner and I both love Clam Chowder, but recently we were told we need to watch our cholesterol levels. This is my revamping of traditional clam chowder with a slightly healthier twist. My partner says it tastes just as good if not better this way.

2 (6 1/2 ounce) cans bumble bee chopped clams
6 slices turkey bacon
3 cups fresh yams, peeled and diced
1 1/2 cups onions, diced
1 1/2 cups water
1 cup 2% low-fat milk

2 tablespoons Worcestershire sauce
2 tablespoons organic golden flax seeds

Steps:

  • Peel and chop Sweet Potatoes.

•2 tablespoons unsalted butter
•1/2 medium Spanish onion, coarsely chopped

•2 medium sweet potatoes, roasted, peeled and pureed (with a ricer or food processor)*see Cook's Note
•Salt and freshly ground black pepper
•1/2 cup dry white wine
•2 to 3 cups bottled or canned clam juice
To Finish:
•1 tablespoon unsalted butter
•1 medium sweet potato, peeled and cut into small dice
•1 teaspoon sugar
•Salt and freshly ground black pepper
•4 slices slab apple wood smoked bacon, cut into small dice
•1 cup dry white wine
•24 fresh littleneck clams, scrubbed
•Sweet potato chowder base
•2 teaspoons honey
•1/3 cup coarsely chopped fresh clams (steamers or cherrystone)
•1/4 cup heavy cream
•1 tablespoon finely chopped fresh tarragon leaves

Steps:

  • Chowder Base: Heat the butter in a medium saucepan or Dutch oven over medium heat. Add the onions and garlic and cook until soft. Stir in the sweet potato puree and salt and pepper and cook until the puree is slightly thickened (you are making a sort of sweet potato roux). Bring wine to a boil in a medium saucepan, add the clams, cover and cook until all clams open, discarding any that do not, about 4 to 5 minutes. Remove the clams with a slotted spoon and place in a bowl. Bring sweet potato chowder base to a simmer. Add the cooked bacon, sweet potatoes and honey and cook for 1 minute. Add the chopped clams and cook for 2 minutes. Add the heavy cream and cook an additional minute or until just heated through. Ladle into bowls and garnish each bowl with 3 clams in the shell and a sprinkling of fresh tarragon. Serve immediately.

1/2 teaspoon salt, if desired
1 cup frozen corn

2 cans (6 1/2 ounces each) minced clams, undrained

Steps:

  • Heat water, Potatoes and salt to boiling in 3-quart saucepan. Boil 20 minutes; drain.
  • Stir in Sauce Mix and remaining ingredients. Heat to boiling over medium-high heat, stirring occasionally.
  • Reduce heat; simmer uncovered about 10 minutes, stirring occasionally, until potatoes are tender.
