Number Of Ingredients 10

8 large egg whites
4 large eggs
1/2 cup shredded cheddar cheese
1/2 cup fat-free milk
2 green onions, chopped
2 teaspoons minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
1-1/2 cups refrigerated diced potatoes with onion

Steps:

  • Preheat broiler. In a large bowl, whisk the first 8 ingredients. In a 10-in. cast-iron or other ovenproof skillet, heat oil over medium-high heat. Add potatoes with onion; cook and stir until tender, 3-4 minutes. Reduce heat; pour in egg mixture. Cook, covered, until nearly set, 5-7 minutes., Broil 3-4 in. from heat until eggs are completely set, 2-3 minutes. Let stand 5 minutes. Cut into wedges.

When it comes to easy, family-pleasing dishes, it's hard to beat a frittata! This one is made with new red potatoes, shredded cheddar and bacon bits.

1 lb. red new potatoes, cooked, cooled and sliced
1/2 cup KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA
1/3 cup OSCAR MAYER Real Bacon Bits
3 green onions, sliced
6 eggs
1/4 cup milk
1/3 cup MIRACLE WHIP Dressing
1/4 tsp. black pepper

Steps:

  • Heat oven to 350°F.
  • Place potatoes in 9-inch pie plate sprayed with cooking spray; top with cheese, bacon and onions.
  • Whisk eggs and milk in medium bowl until blended. Add MIRACLE WHIP and pepper; mix well. Pour over potato mixture.
  • Bake 25 to 30 min. or until center is set. Let stand 10 min. before cutting into wedges to serve.

1 tablespoon canola oil
1-1/2 cups refrigerated diced potatoes with onion
8 large egg whites
4 large eggs
1/2 cup fat-free milk
2 green onions, chopped
2 teaspoons minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded cheddar cheese

Steps:

  • In a large skillet, heat oil over medium-high heat. Add potatoes; cook and stir until lightly browned, 4-6 minutes. Transfer to a greased 1-1/2-qt. baking dish. Whisk next 7 ingredients; stir in shredded cheese. Pour egg mixture over potatoes. Loosely cover baking dish with foil., Place trivet insert and 1 cup water in a 6-qt. electric pressure cooker. Fold an 18x12-in. piece of foil lengthwise into thirds, making a sling. Use sling to lower dish onto trivet. Lock lid; close pressure-release valve. Adjust to pressure-cook on high 30 minutes., Let pressure release naturally for 10 minutes; quick-release any remaining pressure. Using foil sling, carefully remove baking dish. Let stand 10 minutes.
