Dress up easy beef and potato hash with a bit of cream, tomatoes, and every smart cook's standby, Worcestershire sauce.

1 lb. lean ground beef
1 (1 lb. 4-oz.) pkg. refrigerated diced potatoes with onions
1/2 cup chopped red onion
1/3 cup whipping cream
1 tablespoon Worcestershire sauce
1 teaspoon celery salt
1/4 teaspoon pepper
1 1/4 cups chopped tomatoes

Steps:

  • In 12-inch nonstick skillet, cook ground beef, potatoes and red onion over medium heat for 10 to 15 minutes or until beef is thoroughly cooked and potatoes are tender, stirring frequently. Drain well.
  • In medium bowl, combine cream, Worcestershire sauce, celery salt and pepper; blend well. Stir into beef mixture. Cook an additional 2 to 5 minutes or until mixture is bubbly around edges, stirring frequently. Gently stir in tomatoes.

1 large egg
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups frozen shredded hash brown potatoes, thawed
1/4 cup shredded Asiago cheese
FILLING:
3 large eggs
1 tablespoon minced fresh chives
1/3 cup shredded Colby-Monterey Jack cheese
1/3 cup fresh baby spinach, thinly sliced
2 bacon strips, cooked and crumbled

Steps:

  • Preheat oven to 400°. Grease 8 muffin cups., In a bowl, whisk egg, salt and pepper until blended; stir in potatoes and Asiago cheese. To form crusts, press about 1/4 cup potato mixture onto bottom and up sides of each prepared muffin cup. Bake until light golden brown, 14-17 minutes., For filling, in a small bowl, whisk eggs and chives until blended; stir in cheese and spinach. Spoon into crusts; top with bacon. Bake until a knife inserted in the center comes out clean, 6-8 minutes., Freeze option:Freeze cooled baked tarts for up to 3 months. To use, reheat tarts on a baking sheet in a preheated 350° oven until heated through, 5-10 minutes.

2 small baking potatoes, diced and soaked in water, drained
1/2 small onion, chopped
1 garlic clove, diced
1 tablespoon horseradish
1/2 teaspoon hot sauce, Harrisa paste
3/4 lb ground round
2 pieces bread, toasted
4 slices white American cheese
olive oil
salt and pepper

Steps:

  • Place olive oil in pan heated over medium high heat.
  • Brown onion and garlic.
  • Add potatoes and brown slightly.
  • Add harrisa , stir for about 1 minute.
  • Add ground round and horseradish.
  • Continue to stir and cook until meat is cooked.
  • Toast bread.
  • Place one slice cheese on bread slice.
  • Place hash on top of cheese.
  • Place remaining cheese on top and serve.
