I wanted something a little healthier than regular potato soup. This has some extra veggies and fewer processed ingredients and is wonderful on a cold day. I had to guess on the cooking time as I was home for this and ended up cooking on high because I couldn't wait to eat it.

1 cup chopped onion
2 teaspoons minced garlic
1 cup chopped celery, 2 stalks
12 ounces frozen broccoli florets
8 medium potatoes, cubed golden potato
1/2 teaspoon pepper (or more)
1/2 teaspoon paprika (or more)
4 cups chicken stock
2 cups water (more or less)
1 small cabbage, chopped
8 ounces neufchatel cheese (cream cheese)
1 cup shredded Mexican blend cheese (not the taco seasoning type, or cheddar if you like)
tony chachere's original creole seasoning

Steps:

  • Place everything except cabbage and cheese in a 6 quart crockpot.
  • Add as much cabbage as will fit and still leave about an inch of space between the top of the food and the lid.
  • Add water to almost cover the ingredients (about 2 cups when I made it).
  • Cook on low until soft my guess is 6-8 hours then use an immersion blender to cream everything.
  • add in cheeses and blend again, or let melt and stir.
  • This is a nice hearty soup for the cold snap we are having. It needed a bit more flavor so I added the tony's at the end. Adding bits of ham at the beginning might work for that as well.

This is a yummy and easy soup to throw together. Cheese compliments broccoli and potatoes so well. Ultimate comfort food when the weather starts to get colder. I love to serve it with homemade rolls or bread and a salad. I make it with skim milk to cut back on calories but feel free to substitute whole milk or half-and-half for a creamier soup. If I'm really short on time, I just throw in a can of diced, already cooked potatoes towards the end of the cooking time until they are heated through. If you want a thicker soup, just add desired amount of flour mixed until smooth with an equal amount of water. Mmmmmm....

1 stalk celery, sliced
1 yellow onion, chopped
1 carrot, peeled and diced
4 cloves garlic, minced

2 tablespoons dried parsley
1 egg
1 cup all-purpose flour

Steps:

  • Heat butter in a large stock pot over medium heat. Cook and stir celery, onion, carrot, and garlic until the onion is translucent. Stir in potatoes, chicken stock, cayenne, thyme, and parsley. Bring to a boil, then cover and reduce heat. Simmer until the potatoes are tender, about 15 minutes.

1/2 cup butter
1 (16 ounce) package frozen chopped broccoli
1 cup all-purpose flour
1 large potato, cubed
3 -4 green onions, chopped
8 cups water
1 1/2 teaspoons salt
3 chicken bouillon cubes
1 teaspoon ground black pepper
1 lb skinless chicken breast half, cut into bite-sized pieces
1 cup light cream
3 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup sour cream

Steps:

  • In large pot or Dutch Oven, melt butter over med. heat. Mix in flour, stirring constantly until a thick paste forms. Remove from pot, and set aside.
  • In same pot, combine water, bouillon cubes, chicken, broccoli, potato, green onions, salt and pepper. Bring to a boil over high heat. Reduce heat to medium low, and simmer for 45 minutes.
  • Stir in flour mixture a little bit at a time until soup thickens. Simmer 5 minutes. Reduce heat and stir in cream and sour cream. Mix in cheese, one cup at a time and stir until melted.
  • 2 heads fresh broccoli, cut into florets can be used instead of the frozen broccoli.
  • Note: You can easily omit the chicken - it won't be missed. But add another potato in its place.

Steps:

  • Place potatoes and onion into a large soup pot and cover with 3 cups water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Transfer contents of the pot to a large mixing bowl and allow to cool.

This is a low-fat recipe I got out of one of my moms weight watchers cookbook and I've been making it for years. The DH loves it and it's great to make on cold days and fine for big portions. SPECIAL NOTE: This soup can easily be modified. Add more ham and cheese if you'd like, or add cubed chicken or Turkey instead of ham. If you add more veggies and need more water to boil them, use 2 bouillon cubes to every cup of water you add and 2 Tablespoons of Flour to every cup of milk to thicken it up. I serve the soup with Cheddar Cheese Popovers. NOTE: If you are doing the 2012 version of WW, it has 11 points per serving as written.

4 cubes chicken bouillon

1 carrot, chopped
1 stalk celery, chopped
2 garlic cloves, minced
1 tablespoon butter

Steps:

  • Chop onion, carrot, celery, garlic in a chopper or mini food processor.
  • In a large soup pot, melt butter. Add chopped vegetables and sauté on low heat until soft, about 5 minutes.

5 medium russet potatoes (peeled and cut into chunks)
4 clove fresh garlic
32 oz chicken broth (32 box)

  • 2. Once golden brown, add the peeled and chopped potatoes. Mix to coat the potatoes with the olive oil and onions.
  • 3. With a garlic press, press the cloves of garlic over the potato mixture. Mix to evenly coat the garlic. This smell will cause your mouth to water, but hold tight!
  • 4. Add the broth to the potato mixture and season with salt and pepper. The broth should cover the potatoes slightly. Bring the broth to a boil, cover, and allow the soup to simmer just long enough to soften the potatoes through. Be sure to stir frequently to avoid the potatoes burning. The broth will thicken slightly as the potatoes cook through. Before the broth is too thick, add the broccoli.
  • 5. Allow the broccoli to cook with the potatoes for about 5 minutes. You can always add a tad more broth if needed.
  • 6. Add the butter and Cheddar Soup to the mixture. Keep mixing until the soup is blended evenly and the butter is melted.
  • 7. Add the 3 cups of shredded cheese and mix until melted and blended.
  • 8. Add the heavy cream and mix thoroughly.
  • 9. Add the slices of gouda and mix the soup until it is the right consistency.
  • 10. Serve hot with the options of bacon and extra cheddar cheese as toppings.

1 small onion, chopped
1 carrot, chopped

1 tablespoon butter
2 tablespoons flour
2 1/2 cups fat free chicken broth (or vegetable broth)
1 cup nonfat milk
2 medium potatoes, peeled and diced small

4 cups about 2 heads broccoli florets, chopped into small pieces
fresh pepper
1 tablespoon parmesan cheese

Steps:

  • Chop onion, carrot, celery, garlic in a chopper or mini food processor.
  • In a large soup pot, melt butter. Add chopped vegetables and sauté on low heat until soft, about 5 minutes.
  • Add flour, salt and pepper to the pot and stir until smooth.
  • Add chicken broth, milk and potatoes and set heat to high until it comes to a boil, then cover and cook on low until potatoes are soft, about 10-15 minutes.
  • Add broccoli florets, parmesan cheese, and stir well. Adjust salt and pepper to taste. Cook uncovered until broccoli is cooked, about 5 minutes. Add cheddar and American cheese, stir well and remove from heat.
  • Using an immersion blender, quickly blend part of the soup for a quick second or two. If you don't have an immersion blender, remove about 1-2 cups of potatoes and broccoli, place it in your chopper, then add it back to the soup. This helps thicken it a bit.

Favorite Broccoli Cheese Soup with Ham & Potato! image

So today here in Michigan, we are getting slammed with a big snowstorm. First snow day for the kiddos home from school - and what's a better thing to do than make a delicious and comforting, creamy, broccoli cheese soup? I add savory cubes of ham to make it a meal - even my picky husband loves this! I know you will, too!

2 cup(s) broccoli, fresh, chopped
1 sweet onion, chopped
2 medium carrots, peeled & shredded
2 celery stalks, chopped
3 clove(s) garlic, minced
1 teaspoon(s) thyme
4 tablespoon(s) butter, unsalted
1/4 cup(s) flour
1 cup heavy cream (or milk of choice)
32oz box(es) chicken stock (or broth)
8oz ham, cubed
1 large potato, peeled & cubed
1 & 1/2 cup(s) sharp cheddar cheese, shredded from a block of cheese
1/2 cup(s) swiss cheese, shredded from a block
salt & pepper to taste
1/8 - 1/4 teaspoon(s) nutmeg (optional)

Steps:

  • Pre-chop and measure out all ingredients to have them ready.
  • In stock pot, melt butter.
  • Sauté onions, celery, carrots until soft. Add in broccoli, stirring until it is partially cooked. (Maybe 5 minutes.) Add ham cubes, garlic and thyme. Stir and sauté a few minutes more.
  • Sprinkle in flour and whisk in 1 cup of the chicken stock and all the heavy cream.
  • Add remaining 3 cups of chicken stock, stir 'til blended.
  • Add potato cubes. Simmer for 10 minutes or until potatoes and broccoli are tender.
  • At this point I remove about 2 cups of the vegetables and set them aside while I blend the soup remaining in the pot using an immersion stick blender until it thickens up a bit. Return the (removed) vegetables/ham to the soup pot.
  • Add cheeses, stirring until melted.
  • Add salt & pepper to taste and the nutmeg, if desired. (It adds more richness!)
  • Serve topped with extra shredded cheese and enjoy with a slice of crusty bread, crackers, croutons, or in a bread bowl along with a nice tossed salad! (Instead of ham, it's delicious with leftover rotisserie chicken!)
