Yes, I know that there are already recipes for potato bread on Zaar, but couldn't find one like this one! This is a good crusty loaf with a soft centre making it perfect for sandwiches. We don't buy any bread, so I rely heavily on good bread recipes-this one we like a lot! Tip: if you are using leftover mashed potato that has had milk and or butter added, you may need to reduce the liquid a little.

200 ml potato water (cooking water-at room temp)
2 tablespoons sunflower oil
3 1/4 cups white bread flour
1 1/2 cups cold mashed potatoes
1 tablespoon nonfat dry milk powder
1 teaspoon salt
2 tablespoons sugar
1 1/2 teaspoons easy blend dried yeast
milk, for glazing

Steps:

  • Pour the water and oil into the bread pan. If your instructions specify that the yeast is to placed into the pan first, reverse the order in which you add the liquid and dry ingredients.
  • Sprinkle over the flour, ensuring that it covers the water. Add the mashed potato and milk powder. Add the salt and sugar in separate corners of the bread pan. Make a small indent into the centre of the flour and add the yeast.
  • Set the machine to basic and medium crust and start.
  • To glaze the loaf, brush the top with milk either at the beginning of cooking time or halfway through.

This is a light and delicious loaf of bread made with instant mashed potato flakes. It was my first truly successful attempt at using my new bread machine, and I plan on making it again and again! If I didn't screw it up it must be foolproof! I found this online somewhere, but I'm ashamed to say I forgot where. This makes one 1 1/2 pound loaf.

3/4 cup milk or 3/4 cup soymilk
1/2 cup water
2 tablespoons vegetable oil or 2 tablespoons canola oil
1 1/2 teaspoons salt
3 cups bread flour
1/2 cup instant potato flakes
1 tablespoon sugar
1/4 teaspoon white pepper (optional-i omit)
2 teaspoons active dry yeast

Steps:

  • Add all ingredients to bread machine in order listed, or as recommended by your bread machine.
  • Select desired setting and press start.
  • I make this using the basic cycle and the lightest crust setting.

NOTE: PLACE INGREDIENTS IN PAN IN ORDER LISTED
1 c warm milk (105º-110º f)
1 large egg, slightly beaten
1/4 c sour cream, warmed
3 c flour (sifted)
1 tsp sea salt
1 Tbsp granulated sugar
1/2 c instant mashed potato flakes
2 to 3 tsp chopped chives
1 pkg active dry yeast (2-1/2 tsp)

Steps:

  • 1. Sift flour, salt and sugar together and set aside. All purpose flour will work with this recipe since it is a rustic type bread.
  • 2. If using fresh chives, finely chop and set aside
  • 3. Warm milk in microwave for 20 seconds.to 105-110º F. If not warm enough, add an additonal 10 seconds. If you don't have a thermometer, sprinkle a few drops on the inside of your wrist; it should be lukewarm (similar to a baby's formula) CAUTION: DO NOT OVERHEAT OR IT WILL KILL YEAST ACTION.
  • 4. Warm cream cheese in microwave for 10 seconds just enough to make it a custardy consistency.
  • 5. Pour milk, slightlly beaten egg, and sour cream in the bread machine pan.
  • 6. Carefully add flour mixture, making sure to completely cover liquid.
  • 7. Add potato flakes and chives to top of flour.
  • 8. Make indentation (well) in the flour and place yeast in it.
  • 9. Machine settings: Basic or Rapid are both acceptable with Medium dark crust

This is my dad's recipe from long ago. Sadly, he passed away in 2006, but his bread lives on through our family. I bake this in the machine on 2lb loaf with medium crust. I've also just set the machine for 'dough' and made loaves out of it freehand. They are still wonderful. Try adding dill seeds to this bread for a nice treat. Seeds... not dill weed. This bread is terrific for sandwiches... toast... really anything. I hope you'll enjoy it as much as we do.

2 tablespoons butter (softened or melted)
2 teaspoons salt
2 tablespoons sugar
2 tablespoons powdered milk
3 1/2 cups bread flour

  • Put into your machine as your directions suggest.
  • I usually put water, butter, salt and sugar in first.
  • Then I add the flour, dry milk powder and potato flakes.
  • I make a little well on top and add the yeast to that.
  • Set the machine for 2lb loaf. medium crust and let it do it's thing.

  • Please let bread cool completely before cutting.

MY GRANDMA'S POTATO ROLLS OR POTATO BREAD (FOR BREAD MACHINE)



My Grandma's Potato Rolls or Potato Bread (For Bread Machine) image

This is my Grandma's recipe and it is DELISH! I am not sure where she got it from, but these rolls have been a tradition in our family for as long as I can remember. This recipe uses REAL mashed potatoes (not instant flakes). So, when you plan to make this be sure to reserve 1/2 to 1 c. of the mashed potatoes you served at dinner the night before!! Today I was hungry for these rolls but didn't feel like rolling out dough, so I attempted to make the recipe (cut in half) in my bread machine to make a loaf of bread instead....PERFECT results! I have listed the ingredients the way my bread machine lists them, but do be sure to check manufacturer's instructions on the correct order of ingredients for your specific machine. I hope everyone enjoys this as much as our family does. Below are both the rolls and the bread machine versions of this recipe.

1 tablespoon yeast
1 cup water, lukewarm
1 cup honey or 1 cup sugar
1 cup mashed potatoes, REAL (leftovers work great!)
1/2 cup vegetable oil
3 eggs
6 cups bread flour
1 teaspoon salt
1/2 cup water, lukewarm
1/4 cup vegetable oil
1/2 cup honey (do NOT add honey if planning to use sugar. Honey is listed here because it should be added with liqu)
1 egg, whole
1 egg, separated, use white only
1/2 cup mashed potatoes, REAL (leftovers work great!)
3 cups bread flour
1/2 cup sugar (do NOT add sugar if using honey)
1/2 teaspoon salt
2 1/4 teaspoons yeast (or one envelope)

Steps:

  • If making POTATO ROLLS: Preheat oven to 350°F.
  • In a large mixing bowl, dissolve yeast in 1 cup warm water. Allow the yeast to activate and then mix in sugar or honey.
  • Add mashed potatoes, vegetable oil, eggs and salt. Use mixer or bread hooks.
  • Add flour one cup at a time stopping at 5 1/2 cups. Slowly add remaining flour until the dough is only slightly sticky to the touch. The dough should be workable but not dry.
  • Place in a greased bowl and cover with a towel. Allow to rise in a warm place until doubled in size, or it can sit overnight at room temperature.
  • Punch down and then roll dough out on floured surface to 1/2" thickness.
  • Use a canning jar ring to cut rolls - should make 30-36 rolls.
  • Place on a greased pan and allow to rise till almost doubled.
  • Bake in a preheated 350°F oven 12-15 minutes or until lightly browned.
  • If desired, slather outside tops with butter while still warm.
  • Enjoy!
  • NOTE: Prep time does not include rise times as they will vary.
  • If making POTATO BREAD: Place into bread pan in order as listed above OR as per manufacturer's guidelines.
  • Set for 1 1/2 lb. bread loaf and start bread machine.
  • Walk away until you hear the "ding" of the bread machine - approximately 3 hours later.
  • Remove from pan and slather outside of the loaf with butter while still warm from machine.
  • Enjoy!

I have adapted my mother's potato bread recipe so it can be made in the bread machine. This is a great all-purpose bread. For variety, you can add a pinch of various herbs such as dill, thyme, rosemary, but it's really good just plain. Enjoy.

1 medium russet potato( or 2 small yukon gold)
1/2 cup(s) potato water
1/4 cup(s) oil (or melted butter)
1/3 cup(s) granulated sugar
1 teaspoon(s) salt

- milk as required

1 package(s) rapid rise yeast (2-1/4 tsp)

Steps:

  • PREP: Peel and cube potato, boil in 1 cup of water until very tender. Remove from heat and mash using 1/2 cup of potato water, set aside Sift flour, sugar and salt together and set aside Lightly whisk egg and add enough milk to make 1 cup liquid. Set aside.
  • PLACE INGREDIENTS IN BREAD PAN IN THIS EXACT ORDER: Egg/milk mixture Oil Potatoes Flour mixture - making sure flour completely covers liquid and potatoes Make small depression in middle of flour and place yeast in it.
  • Turn bread machine on to basic or rapid cycle with medium dark crust. Press start and enjoy the great smell of baking bread.
