Portuguese Potato Bread (ABM) image

This is an amazing, slightly sweet, awesome bread. I couldn't wait when I made my first two loaves for them to cool. I had to tuck in right away, burning my fingers in the process. It will overgrow your bread machine, so use the dough cycle and bake in two prepared bread pans. I made it with currants and substituted half baking splenda for for half the sugar and it turned out great. Would also be awesome with other dried fruits or a mixture. Makes amazing french toast!

1/2 cup potato, peeled diced uncooked
1 cup boiling water
2 eggs
3 tablespoons butter, at room temperature
1 teaspoon lemon peel
3/4 cup sugar
1 teaspoon salt
4 1/3 cups bread flour
3 teaspoons active dry yeast
3/4 cup raisins

Steps:

  • In a small saucepan or in the microwave, cook the diced potatoes until tender.
  • Drain but reserve the potato water.
  • Mash potato with a fork.
  • Add enough water to the potato water to make 3/4 cup.
  • Place potato, potato water, eggs, butter lemon peel, sugar, salt, bread flour in the breadpan of your bread machine.
  • Add yeast last.
  • Select dough cycle and press start.
  • Check every now and again to make sure it's not too sticky, or too dry. If it is tacky, add a bit of flour 1 tbs at a time. If it's too dry add water a tbs at a time.
  • When the bread machine beeps to add stuff, toss in your raisins and let finish.
  • When the dough cycle is over, prepare two bread pans. Grease the pans and shake some course cornmeal across the bottom so it doesn't stick.
  • Split dough between the pans and allow to rise for 15-20 minutes.
  • After the last rise, cut three slits into the top of the bread, and brush with one beaten egg (you won't use all of it) to give the crust a nice sheen.
  • Preheat oven to 350.
  • Bake for 30-35 minutes, covering the bread with foil after about 15 minutes so the top does not burn (and it will, so watch it).
  • If you have a cooking thermometer, you will know the bread is done with the internal temp comes to 200-210. It is not necessary, but since this bread.

RACHEL'S PBR POTATO BREAD (BREAD MACHINE/ABM)

This yields a nice big loaf of bread that's good and hearty...and while I guess any kind of beer works, PBR is what makes it magic! PBR but REAL potatoes, no box flakes ;) A little time-consuming but soooo worth it. I love it fresh out of the oven but it also tastes great after it's softened up and used for sandwich bread. And the recipe is all my doing!! :D Makes one large 2-lb loaf. Prep time is based on my dough cycle (90 min.) plus time to boil the potatoes. EDIT: I forgot to include the vital wheat gluten in the original post and upped the flour after the first batch came out runny.

2 large baking potatoes, boiled and mashed
1 (12 ounce) can cheap beer (PBR!)
4 cups all-purpose flour
1/4 cup vital wheat gluten (omit if using bread flour instead)
2 tablespoons butter
2 tablespoons sugar
1 teaspoon salt
2 teaspoons active dry yeast

Steps:

  • Wash and peel the potatoes, and boil them in unsalted water for about 15-20 minutes or until tender and squishy.
  • Mash 'em up real good with a fork or potato masher.
  • Put all of the ingredients into your bread machine in the order shown, or in the order recommended by the manufacturer, and do a dough cycle.
  • If you want a soft bread that's made in the machine, pick a Medium or Light cycle.
  • If you just did a dough cycle, dough should be a thick ball that's easily molded. If not, dust your hands with some flour and knead it until it's malleable. Mold it into the shape of a loaf.
  • Place some parchment paper onto a cookie sheet. Lay the loaf onto it, and bake at 375F for 25-30 minutes or until golden brown on top.
  • This bread is total heaven fresh out of the oven with some butter and a PBR tallboy!

SWEET POTATO PECAN BREAD (ABM)

A slightly sweet bread good for breakfast, toast or with tea. From The Ultimate Bread Machine book. I use chopped dried cherries or dried cranberries, but the original recipe used raisins. Cook time depends on machine brand.

2 tablespoons brown sugar (dark)

2 pinches nutmeg

3 cups bread flour
4 tablespoons rolled oats
2 1/4 teaspoons yeast

Steps:

Entered for safe-keeping, from "The Best Bread Machine Cookbook Ever: Ethnic Breads" by Madge Rosenberg. Better get a taste first, or this bread will disappear in a flash. No filling or spread is needed on this bread. Cut the loaf into 1/2-inch slices and then into triangles for hors d'oeuvres with beer, sangria, or orange juice lightened with club soda. Makes 1 1/2 pound loaf. (Time to make mashed potatoes not included in recipe times.)
