CELERY ROOT, POTATO AND APPLE PURéE



Celery Root, Potato and Apple Purée image

Classic celery root and potato purées combine two parts potatoes with one part celery root. I've reversed the proportion here for a lighter purée that also incorporates apple - the "secret ingredient." Rather than milk, I usually use the broth from the celery root and apples.

Number Of Ingredients 7

1 pound Yukon gold potatoes, peeled and cut in half
2 large celery roots, about 2 pounds, peeled and cut into large pieces
1 large or 2 small tart apples, such as a Granny Smith, peeled, cored and quartered
1/2 cup, approximately, warm milk or broth from the celery root
2 tablespoons butter or walnut oil (or a combination)
Salt
freshly ground pepper to taste

Steps:

  • Place the potatoes in one saucepan and the celery root and apples in another. Barely cover with water and add salt to taste to each, about 1/2 teaspoon. Bring to a boil, reduce the heat and simmer until tender, 15 to 20 minutes.
  • Drain the potatoes, and return to the pot. Cover tightly, and allow to sit for five minutes to steam and dry out. Drain the celery root and apples through a strainer set over a bowl. Purée all of the produce using a food mill or a potato ricer. Stir together, and whisk in the milk or the broth until the mixture is fluffy. Add the butter or walnut oil to the hot purée, stir until the butter melts, and season to taste with salt and pepper.

3 pork tenderloins, cleaned
6 pieces thinly sliced prosciutto
2 tablespoons vegetable oil
Salt and pepper
1/2 cup sugar
1/3 cup cider vinegar
Apple trimmings
1/2 cup apple juice
3 sprigs fresh thyme
4 cups chicken stock
2 tablespoons butter
Salt and pepper
Crimini Mushroom Potato Puree, recipe follows
Root Vegetable Melange, recipe follows
Apple Frisee Salad, recipe follows
Carrot Oil, recipe follows
2 Yukon gold potatoes, peeled and cut into 1 inch pieces
1 cup sliced crimini mushrooms
1/4 cup butter, plus 1 tablespoon butter
2 cloves garlic, minced
Salt and pepper
1/2 cup heavy cream
2 leeks, white part only, diced and washed
2 tablespoons butter
1 large beet, peeled and diced
2 parsnips, peeled and diced
1 large turnip, peeled and diced
Salt and pepper
1 tablespoon chopped fresh sage leaves
1/2 tablespoon chopped fresh thyme leaves
1 Granny Smith apple, peeled and cut into 2 by 1/8-inch sticks
1 head frisee, cored and washed
1/2 red onion, julienned
2 tablespoons cider vinegar
1/4 cup vegetable oil
1/2 teaspoon sugar
1 carrot, peeled and cooked in salted water until tender
1/2 to 3/4 cup vegetable oil

Steps:

  • Slice the pork tenderloin into 12 (1-inch) pieces, and season with salt and pepper. Cut the prosciutto slices in 1/2, lengthwise, and wrap 1 slice around each piece of pork and secure with a toothpick. Heat 2 tablespoons of vegetable oil in a saute pan until hot. Add pork medallions and saute for 2 to3 minutes on each side until internal temperature registers 155 degrees F. Set aside.
  • Gastrique: Heat a large, heavy pan over medium-high heat. Add sugar to the pan and cook until the sugar browns. Carefully add cider vinegar (it will steam a great deal, watch your hand). Add apple trimmings, juice, fresh thyme and stock. Let the sauce simmer until it reduces to 1 cup; skim any foam that rises to the top, then season with salt and pepper. You may need to add 1 teaspoon more vinegar at the end to add a little sparkle for taste. Swirl in butter until incorporated.
  • Start potatoes in cold salted water, bring to a boil and turn the heat down to a low simmer. Allow the potatoes to cook until they are tender, drain well and puree.
  • Saute the mushrooms in 1 tablespoon of butter until soft, add garlic, then season with salt and pepper. Add heavy cream and 1/4 cup butter to the mushroom mixture and bring to a boil. Puree the mixture in a blender until smooth. Fold into the potato puree and season with salt and pepper.
  • Saute the leeks in butter, in a medium pan, until they are soft. Bring a pot of salted water to a boil. Add vegetables to the pot, 1 at a time, and cook until tender. Let them drain well and add all vegetables to the saute pan with the leeks, except the beets. Toss the vegetables in butter until heated through, and then season with salt and pepper and fresh herbs. Toss in beets just to heat.
  • Toss all ingredients together in a medium bowl and let it sit for approximately 15 minutes.
  • Combine all of the ingredients in a blender until smooth, then season with salt and pepper. Use as a garnish to decorate the plate.

Sweet Potato and Apple Purée image

This autumnal side dish is great for Thanksgiving, pairing tart apples and sweet potatoes, the flavors melding in the soft purée. It is also a cinch to prepare. Bake the apples and sweet potatoes until soft. Peel both and core the apples, chop and then purée until smooth and lustrous. Lime juice adds zing, yogurt adds creaminess and honey adds a note of sweetness. Melted butter? That is to enrich the texture.

2 pounds sweet potatoes, scrubbed
2 tart apples, such as Granny Smith or Braeburn
Juice of 1 lime
1/4 cup plain low-fat yogurt
1 to 2 tablespoons unsalted butter, melted (to taste)
1 tablespoon mild flavored honey, such as clover
Pinch of salt

Steps:

  • Preheat the oven to 425 degrees. Scrub sweet potatoes and pierce in several places with a sharp knife. Pierce the apples in a few places. Line a baking sheet with foil and place the potatoes and apples on top. Bake for 40 minutes and remove the apples. Continue to bake the sweet potatoes until thoroughly soft and beginning to ooze, 5 to 15 minutes, depending on the size. Remove from the heat and allow to cool until cool enough to handle.
  • Turn the oven down to 350 degrees. Remove the skins from the potatoes. Peel and core the apples, scraping all the flesh from just inside the skins. Chop the potatoes and apples coarsely and place in a food processor fitted with the steel blade. Puree until smooth. Add the remaining ingredients and blend well. Transfer to a lightly buttered 2- or 3-quart baking dish.
  • Heat the puree in the 350-degree oven for 20 to 30 minutes, until steaming. Serve hot.

Sweet Potato, Pumpkin and Apple Puree image

This mixture of sweet potatoes, savory pumpkin and tart apples is a variation on my sweet potato puree with apples. For the best flavor, I suggest you make it a day ahead.

1 pound sweet potatoes, scrubbed
1 pound pumpkin, seeds removed
2 tart apples, such as Granny Smith or Braeburn
2 tablespoons lime juice
5 tablespoons plain Greek-style yogurt
2 tablespoons unsalted butter, melted
2 tablespoons maple syrup
Pinch of salt
Pinch of freshly grated nutmeg

Steps:

  • Preheat the oven to 400 degrees. Scrub sweet potatoes, and pierce in several places with a sharp knife. Pierce the apples in a few places. Line a baking sheet with foil, lightly oil the foil, and place the potatoes, pumpkin (cut side down) and apples on top. Bake the pumpkin and apples for 30 to 40 minutes, until a knife can easily be inserted right to the core of the apples (it's fine if the skin pops off the apples, or if they collapse) and the pumpkin is soft. Remove the pumpkin and apples from the oven. Continue to bake the sweet potatoes until thoroughly soft and beginning to ooze, 15 minutes or longer, depending on the size. Remove from the heat, and allow to cool until you can handle them easily.
  • Turn the oven down to 350 degrees. Remove the skins from the potatoes and pumpkin. Peel and core the apples, and scrape off any apple flesh that adheres to the skin. Chop everything coarsely, and place in a food processor fitted with the steel blade. Puree until smooth. Add the remaining ingredients, and blend well. Transfer to a lightly buttered 2-quart baking dish.
  • Heat the puree in the 350-degree oven for 20 minutes, or until steaming. Serve hot.

2 pounds sweet potatoes
1 cup finely chopped onion
2 large Granny Smith apples
2 tablespoons unsalted butter
3 tablespoons crème fraîche or sour cream, or to taste
freshly grated nutmeg to taste
hot water for thinning the purée if necessary

Steps:

  • In a large saucepan boil the sweet potatoes, peeled and cut into 1-inch pieces, in water to cover for 10 to 12 minutes, or until they are very tender. While the sweet potatoes are boiling, in a large skillet cook the onion and the apples, peeled, cored, and sliced thin, with salt and pepper to taste in the butter over moderate heat, stirring, for 5 to 10 minutes, or until the apples are very tender. Drain the sweet potatoes well, in a food processor purée them with the apple mixture until the mixture is smooth, and with the motor running add the crème fraîche, the nutmeg, salt and pepper to taste, and enough hot water to thin the puré to the desired consistency.

2 tart apples
1/8 teaspoon ground cardamom
1/2 teaspoon salt, plus more to taste

Steps:

  • Preheat oven to 450 degrees. Place the sweet potatoes on a baking sheet and roast for 15 minutes. Place the whole apples on the baking sheet with the sweet potatoes. Roast until potatoes and apples are soft, about 25 minutes.

2 pounds apples (McIntosh, Rome Beauty or Macoun), unpeeled but cored and cut into 1-inch pieces

  • Place the potatoes, apples and salt in a saucepan with 2 3/4 cups of water.

3 large baking potatoes, pricked several times with a fork
5 McIntosh apples, peeled, cored, cut in 1 1/2-inch chunks and tossed with 1 teaspoon fresh lemon juice
1 medium-size onion, peeled and sliced thin (optional)
1 1/2 teaspoons kosher salt
Freshly ground black pepper to taste

Steps:

  • Place potatoes directly in microwave oven. Cook at 100 percent power in a high-power oven for 16 minutes.
  • While potatoes are cooking, combine apples and onions, if using, in a 2 1/2-quart souffle dish with a tight-fitting lid. Remove potatoes from oven. Cook apples, covered, for 8 minutes if not using onions, or 14 minutes with onions.
  • While apples are cooking and potatoes are still hot, use a paring knife to slip the skin from the potatoes. Pass potatoes through a food mill fitted with the medium disk.
  • Remove dish from oven and uncover. Pass apples through the food mill into the potatoes. Using a fork, combine the potatoes and apples until mixture is smooth. Stir in salt and pepper with the fork.
  • Place mixture in 2 1/2-quart souffle dish. Cook, covered, for 5 minutes to heat.
