The house always smells awesome while this very tasty, filling meal is cooking. It makes kielbasa worth stocking up on when it goes on sale and uses basic/cheap ingredients overall. Vary the vegetables depending on what you have on hand. For example add/replace broccoli with a can of corn and/or peas, etc. If you like a little heat, sprinkle a little hot sauce on top after it's cooked. This should make about 4 servings, but it almost always turns out to be split into 2 large servings between the me and the boyfriend. We like to crisp up/brown the kielbasa slightly before adding the vegetables.

½ onion, chopped
1 (16 ounce) package kielbasa sausage, sliced
½ head broccoli, cut into florets
3 potatoes, peeled and sliced
salt and ground black pepper to taste

Steps:

  • Spray a large skillet with cooking spray and heat over medium-low heat. Cook and stir onion in the hot skillet until translucent, about 5 minutes. Add kielbasa; fry until sausage is lightly browned, stirring occasionally, about 5 minutes more.
  • Stir broccoli and potatoes into sausage mixture; season with salt and pepper. Cook, without stirring, until broccoli begins to soften, about 15 minutes. Stir mixture and continue to cook until vegetables are completely tender, 10 to 15 minutes more.

1 pound red potatoes (3-4 medium), cut into 1-inch pieces
3 tablespoons water
2 tablespoons brown sugar
2 tablespoons cider vinegar
1 tablespoon Dijon mustard
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1/4 teaspoon pepper
1 tablespoon olive oil
1/2 cup chopped onion
3/4 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
4 cups fresh baby spinach
5 bacon strips, cooked and crumbled

Steps:

  • Place potatoes and water in a microwave-safe dish. Microwave, covered, on high until potatoes are tender, 3-4 minutes; drain., Meanwhile, mix brown sugar, vinegar, mustard, thyme and pepper. In a large skillet, heat oil over medium-high heat; saute onion and kielbasa until onion is tender., Add potatoes; cook and stir until lightly browned, 3-5 minutes. Stir in brown sugar mixture; bring to a boil. Reduce heat; simmer, uncovered, 2 minutes, stirring occasionally. Stir in spinach until wilted. Stir in bacon.

1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
1 medium green pepper, diced
1 medium onion, diced
1 medium sweet potato, shredded (large shreds, not fine)
1 (10 ounce) package kielbasa, sliced into 1/3 inch rounds

Steps:

  • You will need some cooking oil (2-3 TBS Any type); Salt & Pepper to taste; and a deep skillet.
  • 1. In deep skillet, sauté green pepper and onion in oil until onion is just beginning to turn translucent (Do not overcook as the mixture will continue to cook with the other ingredients.).
  • 2. Drain off the excess oil retaining a coating in the bottom of the pan. Save the excess oil in case you find you need to add some back in during the next phase of cooking.
  • 3. Add in the shredded sweet potato, Kielbasa, and Simply Potatoes and cook as directed on the package. Add salt and pepper to your taste. While cooking, you may find that you need to add some of the oil that you retained in step 1.

1 lb turkey kielbasa (linked sausage)
Simply Potatoes Diced Potatoes with Onion
0.5 (16 ounce) bag baby carrots (Sliced or Julienned)
1 (16 ounce) bag frozen green beans
1 (4 ounce) can mushrooms, Undrained

Steps:

  • Brown potatoes and carrots in electric skillet (300-325 degrees), use juice from mushrooms if you need to add liquid - this avoids using oil. While potatoes are cooking cut sausage into bite size pieces. Once potato mixture is cooked, add fz green beans, sausage and mushrooms. Make sure to stir so all ingredients are mixed thoroughly. Turn skillet down to low or steam. Put the lid on and vent, steam for 15 minutes or until beans are tender. Season to taste.

Water, milk and butter called for on potato mix pouch
2 cups chopped cooked turkey
1 bag (12 oz) frozen mixed vegetables, thawed
1 jar (12 oz) home-style turkey gravy
1/4 teaspoon poultry seasoning

Steps:

  • Heat oven to 350°F. Spray 2-quart casserole with cooking spray; set aside. Make mashed potatoes as directed on pouch using water, milk and butter.
