1 large carrot, diced
1 cup chopped leek, white part only
1 garlic clove, minced
4 cups fat-free chicken broth
1/2 cup pearl barley
1 bay leaf
1/4 teaspoon thyme, crushed dried
1/4 teaspoon pepper
4 ounces bacon, Canadian cut into 1/4-inch pieces
1/2 cup fat-free evaporated milk
1/4 cup fat-free half-and-half

Steps:

  • In a slow cooker, combine potatoes, carrots, leek, garlic, chicken broth, barley, bay leaf, thyme, pepper, and Canadian bacon. Cover and cook on low for 6 hours or until vegetables and barley are tender.
  • Stir in evaporated milk and Half-and half and heat through, uncovered, about 10 minutes.

8 cups diced potatoes
3 cans (14-1/2 ounces each) chicken broth
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/3 cup chopped onion
1/4 teaspoon pepper
1 package (8 ounces) cream cheese, cubed and softened
1/2 pound sliced bacon, cooked and crumbled, optional
Minced chives, optional

Steps:

  • In a 5-qt. slow cooker, combine the first 5 ingredients. Cover and cook on low for 8-10 hours or until potatoes are tender. , Add cream cheese; stir until blended. Garnish with bacon and chives if desired.

32 ounces baked russet potatoes, about 4 large
4 slices low-sodium bacon
1 bunch scallion, sliced thin
2 teaspoons garlic, minced
2 (14 ounce) cans reduced-sodium chicken broth
1 teaspoon salt
1/8 teaspoon cayenne
1 cup fat-free half-and-half
1/4 cup chopped parsley (optional)

Steps:

  • Coarsely chop the baked potatoes and set aside.
  • Cook the bacon in a soup pot until crisp and set aside, leave 1 teaspoons drippings in the pan.
  • Add 1/2 the scallions & garlic to drippings and sautee until soft.
  • Add broth, salt, cayenne, and chopped potatoes, mash some of the potatoes against the side of the pan w/ a wooden spoon or w/ a potato masher.
  • Bring to a boil, reduce heat to simmer and cook 2-3 moremonites.
  • Add in half-and-half and parsley, return to simmer.
  • Serve w/ remaining green onions & crumbled bacon on top.

CANADIAN BACON POTATO SOUP

Posted for Zaar World Tour 2005. Identifying a Canadian recipe, for an American, was difficult. Good thing I found at least one good one, on the internet. St. Ives makes a wonderful vegetarian substitute for Canadian Bacon. Lower in fat than the original (which I understand is still pretty low in fat). This is a diabetic recipe, from Taste of Home's Light and Tasty. Exchanges: 1 starch, 1 lean meat, 1 vegetable. I have not tried this yet, but I will. Butter granules are new to me; I might as well experiment.

2 medium onions, chopped
4 medium potatoes, peeled and quartered
2 cups vegetable broth
1 (12 ounce) can fat-free evaporated milk
3 ounces vegetarian Canadian bacon or 3 ounces Canadian bacon, chopped
1 (2 tablespoon) packet Butter Buds (equivalent to 1/4 cup butter)
1/4 teaspoon salt
1/8 teaspoon pepper
7 tablespoons low-fat sour cream or 7 tablespoons low-fat yogurt
1/3 cup chives, minced

Steps:

  • In large saucepan coated with nonstick cooking spray saute onions until tender.
  • Add potatoes and broth; bring to a boil. Reduce heat, cover and simmer for 20-25 minutes or until potatoes are very tender. Set aside 1 cup potato mixture.
  • Puree remaining mixture in batches in a blender or food processor and return to the pan.
  • Stir in milk, bacon, butter granules, salt, pepper and reserved potato mixture.
  • Heat through without boiling. Garnish each with 1 tablespoon low-fat sour cream or yogurt and sprinkle with chives.

3 cups chicken broth
3 cups red potatoes, peeled and cubed
2 cups corn
1 large onion, chopped
1 garlic clove, minced
6 ounces Canadian bacon, julienned
1 large bay leaf
3/4 teaspoon thyme
1/4 teaspoon dry mustard
2 cups whole milk, divided
2 tablespoons cornstarch
salt and pepper

Steps:

  • Combine all ingredients except milk, cornstarch, salt and pepper in slow cooker; cover and cook on high for 4-5 hours, adding 1 1/2 cups milk during last 30 minutes.
  • Discard bay leaf. Process half the soup in food processor or blender until smooth; return to slow cooker.
  • Cover and cook on high for 10 mintues; stir in combined 1/2 cup milk and cornstarch, stirring 2-3 mintues. Season to taste with salt and pepper.
