1 young opossum (about 3 pounds)
salt
pepper
Worcestershire sauce
garlic salt
water
aluminum foil
sweet potato

Steps:

  • Skin and dress young possum, sprinkle with salt and pepper, worcestershire sauce and garlic salt and place into large stockpot or roasting pan.
  • Preheat oven to 350°F.
  • Put potatoes around possum and add 1 inch water.
  • Completely cover pan with foil.
  • Bake, covered, for 2 hours or till good and tender.
  • Tastes like fresh pork.

UH...OK... Now this is old southern cooking. I typed this one exactly how it was written. HUM!! How many people Will a possum serve anyway? Poor Poor Possum, or is it Opossum?

Number Of Ingredients 8

1 possum, cut up
1/2 teaspoon salt
1/4 teaspoon black pepper
5 -6 sweet potatoes, scrubbed and cut up in chunks
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup oleo, that means margarine I looked it up
1 gallon water, as needed

Steps:

  • Heat oven to 375.
  • Skin and shuck all innards and wash yer possum.
  • Put possum in a big sauce pot and cover with water.
  • Add yer salt and yer pepper.
  • Cover pot and cook until possum is tender.
  • Place possum in center of large baking pan and place yer sweet taters around it.
  • Sprinkle with yer white and brown sugars and oleo over taters.
  • Pour 2 cups of yer juice from cooked possum over everything.
  • Place in a hot oven and bake until taters are fork tender light brown, and juices from possum has cooked away.

3 pounds sweet potatoes (about 8), peeled and cut into 1-inch chunks
Coarse salt and ground pepper
1/2 cup whole milk
4 tablespoons butter
1/2 teaspoon ground nutmeg
2 cups mini marshmallows or chopped regular marshmallows

Steps:

  • Preheat oven to 375 degrees. Place sweet potatoes in a large saucepan, and cover with cold water by 1 inch; salt generously. Bring to a boil; reduce to a simmer, and cook until easily pierced with the tip of a paring knife, 15 to 20 minutes. Drain, and return to pan. Heat over medium, stirring, until liquid has evaporated and a thin film covers bottom of pan, about 2 minutes.
  • Remove pan from heat; add milk, butter, and nutmeg. Mash until smooth; season with salt and pepper. Transfer sweet-potato mixture to a 2-quart baking dish. (To make ahead, refrigerate, up to 1 day.)
  • Top casserole with marshmallows; bake until center is warmed through and marshmallows are lightly browned, 15 to 20 minutes.

4 pounds sweet potatoes (about 5 large), peeled and cubed
1 cup 2% milk
1/2 cup packed brown sugar
6 tablespoons butter, softened
1 egg, lightly beaten
1-1/2 teaspoons ground cinnamon
1-1/2 teaspoons vanilla extract
3/4 teaspoon ground allspice
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
18 large marshmallows

Steps:

  • Place sweet potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender; drain. , Transfer to a large bowl and mash. Add the milk, brown sugar, butter, egg, cinnamon, vanilla, allspice, salt and nutmeg; beat until smooth., Transfer to a greased shallow 2-1/2-qt. baking dish. Bake, uncovered, at 350° for 40-45 minutes or until heated through. Top with marshmallows. Bake 5-10 minutes longer or just until marshmallows begin to puff and brown.
