My grandma used to always make this and it is one of my many "Comfort Foods". Cheap, Easy, and really good with homemade cornbread. Enjoy! Sometimes I add only half a can of green chillies, it is your choice.

1 lb ground beef
1 (4 ounce) can diced green chilies
1 (15 ounce) can ranch-style pinto beans
1 (15 ounce) can yellow hominy
1 (15 ounce) can stewed tomatoes
1 small yellow onion, chopped

Steps:

  • Cook the ground beef in a large pot with the onion until done.
  • Open the all cans and add entire contents to the same pot. Heat to a boil and reduce heat and simmer for 10 minute Ok it doesn't get more simple than that.

1 lb ground meat or 1 lb ground turkey
1 chopped onion
1 (52 ounce) can ranch style beans
2 (4 ounce) cans diced green chilies
1 (15 ounce) can corn
1 (15 ounce) can hominy
1 (8 ounce) can tomato sauce
salt
pepper

Steps:

  • Saute meat and onions until no longer pink and onions are translucent.
  • Add all other ingredients and simmer for 15 minutes.
  • Ladle into bowls, serve with crackers or tortilla chips.
  • Can top with: cheddar cheese, sliced scallions, sour cream, etc.
  • Good on a cold wintry day!

1 pound pork tenderloin, cut into 1/2-inch pieces
1 pound smoked turkey kielbasa, cut into 1/2-inch pieces
1 tablespoon olive oil
3 medium carrots, chopped
1 large onion, cut into wedges
4 garlic cloves, minced
2 cans (14-1/2 ounces each) no-salt-added stewed tomatoes, cut up
1 can (14-1/2 ounces) reduced-sodium chicken broth
3 teaspoons herbes de Provence
1-1/2 teaspoons garlic powder
1-1/2 teaspoons dried basil
1/2 teaspoon dried oregano
1/4 teaspoon pepper
4 cans (15-1/2 ounces each) great northern beans, rinsed and drained, divided
3/4 cup white wine or additional chicken broth, divided

Steps:

  • In a Dutch oven coated with cooking spray, saute pork and kielbasa in oil until lightly browned; drain. Add carrots and onion; saute 4 minutes longer. Add garlic; cook for 1 minute longer. Stir in the tomatoes, broth and seasonings. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. , Place 1 can of beans in a food processor; add 1/4 cup wine. Cover and process until pureed. Stir into meat mixture. Stir in the remaining beans and wine. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until meat and vegetables are tender. Freeze option: Freeze cooled cassoulet in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.

1 tablespoon minced fresh thyme
1 tablespoon sweet paprika
1 3-inch cinnamon stick
4 cups low-sodium chicken stock
3 bay leaves
1 15.5-ounce can white hominy, drained and rinsed
2 ears fresh sweet corn, kernels cut off
Chopped fresh cilantro, for topping
4 tablespoons salted butter
1/2 large sweet onion, diced
1 large carrot, diced
2 stalks celery, diced
1/2 large red bell pepper, diced
1 jalapeno pepper, minced
Fine sea salt and freshly ground black pepper
4 cloves garlic, minced
1 cup crushed fresh or canned plum tomatoes
2 skinless chicken legs (1 1/2 pounds)
1 pound pork butt, sliced 1 inch thick

Steps:

  • Heat the butter in a large stockpot over medium heat. When it melts, add the onion, carrot, celery, bell pepper, jalapeno and 1/2 teaspoon each salt and pepper. Cook, stirring, until the vegetables are soft and sweet, about 20 minutes. Add the garlic and tomatoes and cook until thick and jammy, about 10 minutes.
  • Meanwhile, preheat a grill or a stovetop grill pan over medium-high heat. Blot dry the chicken legs and pork and season with salt and pepper.
  • Grill the chicken and pork until wellmarked on both sides and partially cooked through, about 10 minutes. Cut the pork into 1-inch cubes.
  • Add the thyme, paprika, cinnamon stick, 1 teaspoon salt and 1 teaspoon pepper to the stockpot. Add both meats, the stock, 4 cups water and the bay leaves. Bring to a simmer and cook, partially covered, stirring once in a while, until the pork is very tender when poked with a fork, about 1 hour, 30 minutes.
  • Remove the chicken legs, pick the meat from the bones, chop it into large pieces and return it to the stew.
  • Add the hominy and simmer the stew another 30 minutes to 1 hour, or until everything is really tender and the meat is falling apart. Mash the pork against the side of the pot to break it up. (Don't worry if the chicken looks like it's almost dissolving: That's typical of booya.) Add the corn and cook 5 more minutes.
  • Remove the bay leaves and cinnamon stick. Taste to check the seasoning and add more salt, if needed. Serve with the chopped cilantro.
