PINEAPPLE PORK TENDERLOIN

Whether you make pineapple pork tenderloin on the outdoor grill, or inside in the oven...just make it. The pineapple gives the pork a wonderful flavor that you're going to flip over!

1-1½ pound pork tenderloin
15 slices approximately pineapple (1 fresh, or 2 large cans)
1 large sweet onion (sliced)
¼ cup teriyaki sauce
1½ teaspoon kosher salt (or to taste)
½ teaspoon black pepper

Steps:

  • Prepare a 13x9 baking dish by spraying with cooking spray.
  • Preheat oven to 350-degrees, or prepare an outdoor grill by heating to medium/high.
  • Layer a few slices of pineapple on the bottom of the dish.
  • Place the pork tenderloin pieces on top of the pineapple slices.
  • Drizzle the teriyaki sauce evenly over the pork tenderloin.
  • Season with salt and pepper.
  • Lay the slices of onion over the seasoned pork tenderloin.
  • Top with the remaining pineapple slices.
  • Place in a preheated oven for 40 minutes, or until an instant-read meat thermometer reads 145-degrees. OR place on top of two bricks on an outdoor grill, cover, and cook until an instant-read meat thermometer reads 145-degrees.
  • Once the pork reaches 145-degrees remove it and allow it to rest for 5 minutes before slicing.
  • Slice and serve the pineapple pork tenderloin by spooning the pan juices over the top, if desired.

1 jar (16 ounces) chunky salsa
1 can (8 ounces) unsweetened crushed pineapple
1/2 cup port wine or grape juice
1/4 cup packed brown sugar
1/4 cup lime juice
1/4 cup thawed orange juice concentrate
2 tablespoons Worcestershire sauce
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper
PORK:
1 teaspoon ground cumin
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
2 pork tenderloins (1 pound each)
Lime wedges

Steps:

  • In a large saucepan, combine the first 9 ingredients. Bring to a boil; cook 20-25 minutes or until mixture is reduced by half, stirring occasionally., Meanwhile, for pork, mix spices; rub over tenderloins. Grill tenderloins on a lightly oiled rack, covered, over medium heat or broil 4 in. from heat 18-22 minutes or until a thermometer reads 145°, turning occasionally., Let stand 5 minutes before slicing. Serve with salsa and lime wedges.

GRILLED PORK TENDERLOIN AND SWEET POTATOES



Grilled Pork Tenderloin and Sweet Potatoes image

2 tablespoons extra-virgin olive oil, plus more for brushing
3 medium sweet potatoes
Kosher salt and freshly ground pepper
2 Persian cucumbers, chopped
1 cup chopped pineapple
1 scallion, sliced
1/4 cup fresh cilantro, roughly chopped
1 tablespoon white wine vinegar
1 tablespoon packed light brown sugar
1 tablespoon ancho chile powder
2 teaspoons ground cumin
2 small pork tenderloins (about 12 ounces each), trimmed

Steps:

  • Preheat a grill to medium high and brush the grates with olive oil. Pierce the sweet potatoes all over with a fork and microwave until just cooked through, 5 to 7 minutes; let cool slightly, then slice into 1/2-inch-thick rounds. Transfer the sweet potatoes to a medium bowl and gently toss with 1 tablespoon olive oil, 1/4 teaspoon salt and a few grinds of pepper.
  • Meanwhile, toss the cucumbers, pineapple, scallion, cilantro and vinegar in a medium bowl; season with salt and pepper. Set aside. Mix the brown sugar, chile powder, cumin, 3/4 teaspoon salt and a few grinds of pepper in a separate bowl. Rub the pork all over with the remaining 1 tablespoon olive oil and the spice mixture.
  • Grill the pork, covered, turning occasionally, until a thermometer inserted into the center registers 145 degrees F, about 15 minutes. Remove to a cutting board and let rest 5 minutes. Grill the sweet potatoes, turning once, until marked, about 3 minutes. Slice the pork and top with the cucumber-pineapple salsa. Serve with the sweet potatoes.

1 can (20 ounces) unsweetened pineapple tidbits
1 pork tenderloin (1-1/4 pounds)
3 tablespoons brown sugar, divided
2 tablespoons Dijon mustard
1 teaspoon paprika

1/3 cup finely chopped sweet red or green pepper
1/4 cup chopped green onions
1/8 teaspoon crushed red pepper flakes, optional

Steps:

  • Drain pineapple, reserving 1/4 cup juice. Set aside 1 cup of pineapple (save remaining pineapple for another use). Place the pork on a rack in a shallow roasting pan. 1/4 teaspoon lime zest
2 limes, juiced
1 tablespoon honey
1 small shallot, chopped
1 jalapeno, chopped and seeds removed
1 garlic clove, chopped
1/2 cup olive oil
Salt
1/2 pineapple, diced and cored, juices reserved
1 tomato, diced
1/2 red onion, minced
1/2 small jalapeno, diced
1 tablespoon chopped cilantro leaves
1 lime, juiced
Salt and pepper
4 bone-in, center-cut pork chops

Steps:

  • For the marinade:
  • Blend all the ingredients in a large bowl. Place in a resealable plastic bag and add the pork chops. Marinate in the refrigerator for up to 3 hours.
  • For the salsa:
  • Mix all the salsa ingredients in a medium bowl. Taste for seasoning. Set aside for 10 minutes for flavors to meld.
  • Preheat grill to medium heat.
  • Remove chops from marinade. Grill for 5 minutes per side for a medium rare and 8 minutes for medium. Remove chops from grill and let rest 10 minutes before slicing. Spoon the salsa on top.

2 green onions, chopped
1 tablespoon minced fresh cilantro

1 cup fresh pineapple (or mangoes) or 1 cup canned pineapple, finely chopped
1/2 red bell pepper, seeded and finely chopped
1/2 yellow pepper, seeded and finely chopped
1/2 poblano pepper, seeded and chopped
1/4 cup red onion, finely chopped
1 jalapeno pepper, seeded and finely chopped (adjust to taste)
2 tablespoons lime juice
1/4 teaspoon ground cumin
1/4 cup cilantro, chopped
salt & pepper
2 lbs boneless pork chops, cut in 1 inch cubes
3 cups chicken broth
1 1/2 teaspoons salt
4 garlic cloves, minced
1/2 cup onion, chopped
2 fresh jalapeno peppers, seeded and chopped
2 tablespoons dried ancho chile powder (to taste)
2 teaspoons ground cumin (to taste)
1 tablespoon Mexican oregano
1 chipotle chile, chopped and seeded (optional)
1 tablespoon adobo sauce, from canned chipotle chile
1 tablespoon tomato paste
8 -10 inches flour tortillas
1 cup frozen corn, thawed
1 cup black beans, drained and rinsed
2 cups havarti cheese or 2 cups monterey jack cheese, grated

Steps:

  • Pork:.
  • Place pork, chicken broth, salt, garlic, jalapenos and onion in large pot and bring to a slow simmer. Add cumin, oregano, tomato paste, chipotle chiles, adobo sauce and chile powder to meat.
  • Cover and simmer for 1 1/2 hours or until pork is pull-apart tender. Increase heat to evaporate excess liquid. Shred meat with a fork and set aside.
  • Salsa:.
  • Combine salsa ingredients and chill for a minimum of 30 minutes.
  • To assemble:.
  • Lay out tortillas and spread pork mixture on 1/2 of each tortilla. Top with corn, black beans and cheese. Fold over and brown on each side on hot griddle. Place on cookie sheet in warm oven to hold. Serve with pineapple salsa.
