3/4 tsp curry powder, divided
1/4 tsp paprika
1/4 tsp salt
4 boneless center cut pork chops (4 oz. each and about 1/2 inch thick)
1/3 c orange marmalade
1 1/2 tsp prepared horseradish
1 1/2 tsp balsamic vinegar
1/8 tsp red pepper flakes
cooking spray

Steps:

  • 1. Combine 1/4 tsp. curry powder, 1/4 tsp. paprika and 1/4 tsp.salt. Sprinkle pork with the curry mixture. Combine 1/2 tsp. curry powder and all of the marmalade, horseradish, vinegar and pepper in a small bowl.
  • 2. Heat a large nonstick skillet, coated with cooking spray, over medium-high heat. Add the pork, cook for 5 minutes on each side (or until pork loses its pink color and reaches desired temperature).
  • 3. Remove pork chops from pan. Add the marmalade mixture to the pan and cook for 15 seconds, scraping the pan to loosen browned bits. Spoon sauce over pork chops.

1 cup orange juice
1/2 cup unsweetened pineapple juice
1/4 cup reduced-sodium soy sauce
2 tablespoons honey
2 garlic cloves, minced
1/2 teaspoon grated orange zest
1/4 teaspoon pepper
4 bone-in pork loin chops (7 ounces each)
1 tablespoon cornstarch

Steps:

  • In a small bowl, combine the first seven ingredients. Pour a scant 1 cup into a large bowl. Add pork chops; turn to coat. Cover and refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade for sauce., Drain and discard marinade. On a lightly oiled grill rack, grill chops, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. Let stand for 5 minutes before serving., Meanwhile, in a small saucepan, combine cornstarch and reserved marinade. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chops.

3 cups orange juice
1 carrot, chopped
2 tablespoons chopped fresh cilantro
2 tablespoons grated peeled fresh ginger
2 large garlic cloves, sliced
1 jalapeño chili, seeded, minced
1 tablespoon ground cumin
1 tablespoon Thai red curry base
For pork
1/2 cup molasses
1/2 cup reduced-sodium soy sauce
1/4 cup Thai red curry base
1 tablespoon grated peeled fresh ginger
1 1/2 pounds pork tenderloin, trimmed
1 tablespoon vegetable oil
6 tablespoons (3/4 stick) chilled butter, cut into pieces

Steps:

  • Make sauce:
  • Combine orange juice, carrot, cilantro, grated fresh ginger, garlic, minced jalapeño, ground cumin and Thai red curry base in heavy medium saucepan over medium-high heat. Boil mixture until carrot is very tender and liquid is reduced by half, stirring occasionally, about 12 minutes. Puree sauce in blender or processor in batches until smooth. Strain sauce and return to same saucepan. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Make pork:
  • Stir molasses, soy sauce, curry base and ginger in large glass baking dish. Add pork tenderloin and turn to coat. Cover and refrigerate at least 1 hour and up to 4 hours.
  • Preheat oven to 350°F. Remove pork from marinade; discard marinade. Heat oil in heavy large ovenproof skillet over medium-high heat. Add pork and cook until golden brown, about 3 minutes per side. Transfer skillet to oven and cook pork until thermometer inserted into thickest part registers 160°F, about 25 minutes. Transfer pork to platter. Tent with foil to keep warm.
  • Bring sauce to simmer. Remove from heat. Gradually add 6 tablespoons butter, whisking just until melted. Season to taste with salt and pepper.
  • Cut pork into 1-inch-thick slices. Serve with sauce.

3 pounds boned pork shoulder, cut in 1-inch cubes
2 tablespoons vegetable cooking oil
2 tablespoons caramel coloring (see recipe)
3 cloves garlic, peeled and crushed
6 green onion or scallion tops, sliced on the diagonal
Peel of 1 orange, white part discarded, cut in thin juliennes
Peel of 1/2 lemon, white part discarded, cut in thin juliennes
Juice of 1/2 lemon
2 cups of freshly squeezed orange juice
1 3-inch stick cinnamon
1/2 teaspoon freshly ground allspice
1 sprig fresh thyme, or 1/4 teaspoon dried thyme
2 bay leaves
Freshly ground black pepper to taste
1/2 teaspoon salt, or to taste
1 tablespoon flour, mixed with 3 tablespoons fresh orange juice
Unpeeled orange slices or wedges for garnish

Steps:

  • Heat oil in a large pot, add pork cubes and saute over medium-high heat until cubes start to brown, about 10 minutes. The cubes may give off a lot of water; if so, continue cooking and stirring until water evaporates. Add caramel coloring and continue cooking and stirring until pieces are a rich brown. Do not let caramel coloring burn.
  • Add all the remaining ingredients except the flour and orange juice paste. Stir to mix well. Then add flour paste and mix well so there are no lumps in the sauce. Lower heat to barely simmering, cover pan and leave to cook 1 hour or longer, until pork cubes are tender and sauce is thick and unctuous.
  • Serve immediately, removing bay leaves, cinnamon stick and fresh thyme sprig. Garnish with thin slices of unpeeled orange or orange wedges, and serve with rice and beans, and West Indian vegetables, such as yams, yautia and malanga.

2 tablespoons butter, divided
1/2 cup chopped onion
1 cup water
1-1/2 cups diced unpeeled tart apples
1/2 cup raisins, optional
3 tablespoons orange marmalade
2 tablespoons lemon juice
1 to 2 tablespoons curry powder
4 teaspoons sugar
1/2 teaspoon pepper
2 tablespoons all-purpose flour
1/4 cup cold water
Hot cooked rice or macaroni

Steps:

  • In a large skillet over medium heat, brown pork chops in 1 tablespoon of butter; drain and set aside. , In the same skillet, saute onion in remaining butter until tender. 1 cube chicken bouillon
½ teaspoon garlic powder
¼ teaspoon dried rosemary
¼ teaspoon dried thyme

½ teaspoon ground red pepper (cayenne), or more to taste
1 pound pork tenderloin, cut into strips
2 ½ tablespoons all-purpose flour
1 cup coconut milk
¼ cup natural peanut butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat water, dried onion, chicken bouillon, garlic powder, rosemary, thyme, and salt in a microwave-safe bowl for 1 minute in the microwave; let stand until onion is rehydrated and bouillon is dissolved.
  • Heat coconut oil, curry powder, and ground red pepper in a large oven-proof skillet over medium heat, stirring constantly, until oil takes on the color of the curry powder, 5 to 6 minutes.

ONE-POT PORK WITH ORANGE, OLIVES & BAY



One-pot pork with orange, olives & bay image

A Provençal-style pork casserole with vibrant citrus flavours, sweet shallots, new potatoes and sundried tomatoes

85g sundried tomato in oil, roughly chopped, plus 2-3 tbsp oil from the jar
1kg pork shoulder , cut into chunky cubes
2 tbsp plain flour , seasoned
400g shallot (see tip, below)
1 onion , thinly sliced
3 bay leaves
few thyme sprigs
5 garlic cloves , thinly sliced
400ml red wine
strip of zest and juice from 1 orange
350ml chicken stock
400g can chopped plum tomato
800g large new potato , peeled & halved or cut into fat slices, depending on size
70g pack dry black olive

Steps:

  • Heat 1 tbsp of the sundried tomato oil in a large, flameproof casserole dish. Toss the pork in the flour, tap off any excess, then brown it in 2 batches, transferring to a large bowl once golden and crusted. Use a splash more oil for the second batch if needed.
  • Tip 1 tbsp oil, shallots, onion, bay leaves and thyme into the pan and fry for 5 mins until golden here and there. Stir in the garlic and sundried tomatoes, cook for 1 min more, then tip onto the pork.
  • Splash the wine and orange juice into the dish, add the orange zest and boil hard for 5 mins. Add the meat and onions back in.
  • When ready to cook, heat oven to 160C/140C fan/gas 3. Stir the stock, canned tomatoes, potatoes and olives into the casserole, then bring to a simmer. Prod the potatoes as far under the surface of the liquid as you can. Cover, leaving a slight gap to one side, then cook in the oven for 2½ hrs, or until the meat is tender enough to cut with a spoon. Spoon away any excess fat and let the stew rest for a few mins before ladling into shallow bowls.

2 pounds country-style pork ribs, or boneless steaks cut from shoulder, about 3/4 to 1 inch thick
Salt and pepper
1 1/2 cups freshly squeezed orange juice
1/4 teaspoon cayenne, or to taste
1 teaspoon ground cumin
1 shallot, minced
Vinegar or fresh lemon or lime juice, if necessary
1 teaspoon grated orange rind
1/4 cup chopped fresh parsley leaves

Steps:

  • Heat oven to 450 degrees or heat broiler, adjusting rack so that it is about 4 inches from heat source. Put an ovenproof skillet large enough to hold pork in one layer on stove top and turn heat to high. Sprinkle meat with salt and pepper. Brown meat quickly on both sides, then transfer skillet to oven or broiler.
  • Meanwhile, combine orange juice, cayenne, cumin and shallots in a small saucepan and turn heat to medium. Cook, stirring, until it reduces to about 1/3 cup; taste and add salt as necessary, a touch more cayenne and cumin if you like, and some vinegar or lemon juice if sauce lacks acidity.
  • If broiling, turn meat once; if roasting, don't bother. When meat is firm but not tough and a little pink in center (about 10 minutes if broiling, 15 if roasting), remove it to a platter. Combine orange rind with parsley. Spoon sauce over meat, then top with orange rind-parsley mixture. Serve.

1 tablespoon Madras curry powder (hot)
1 tablespoon brown sugar

3 lbs country-style pork ribs
ground black pepper
1/2 cup peanut butter (I use chunky)
1/2 cup low-fat plain yogurt
1 teaspoon soy sauce
1 teaspoon sesame oil
1 teaspoon hot chili oil
1/2 teaspoon curry powder
1/4 cup boiling water

Steps:

  • Combine the orange juice, onion, garlic, brown sugar, curry powder, ginger and red pepper.
  • Place the ribs in a large glass pan and pour the marinade over. Cover and refrigerate about 8 hours or overnight, turning ribs over a couple of times.
  • Preheat oven to 325°F.
  • Coat a large baking pan with rack with non-stick cooking spray.
  • Remove the ribs from the marinade; reserve the marinade.
  • Place the ribs on rack in baking pan, cover with foil and bake 1 hour.
  • Uncover and sprinkle with the salt and pepper and continue baking another 45 minutes, basting occasionally with the marinade.
  • Serve with Spicy Peanut Sauce.
  • SPICY PEANUT SAUCE:.
  • Stir together peanut butter, yogurt, soy sauce, sesame oil, hot chili oil and curry powder. Slowly add boiling water, stirring until smooth.
  • Serve immediately.
