AWESOME MARINADE FOR PORK TENDERLOIN
I'm passing this on from a girlfriend of mine. I made it and all I can say is "Wow"! I actually marinaded the tenderloins for 72 hours because I forgot I had it in the refrigerator and it was wonderful.

- In a shallow glass casserole dish, combine bourbon, brown sugar, soy sauce, cilantro, lemon juice, Worcestershire sauce, water, and thyme, stirring until the sugar is dissolved.
- Add the pork, cover, and marinate in the refrigerator, turning occasionally, for 8 to 12 hours.
- Preheat the oven to 450ºF.
- Coat a baking sheet or the bottom of your roasting pan with tin foil, making sure the entire sheet is covered. The marinade tends to burn on and it's a pain to wash.
- For tenderloin: Place the tenderloins, side by side without touching, on a wire rack in a shallow roasting pan.
- For chops: Place pork chops on a baking sheet.
- Roast for 30 minutes, or until a meat thermometer registers 160ºF, basting occasionally with the marinade. Discard any unused marinade.

- Trim tenderloins of fat and silver skin as much as possible. Place in a large ziploc bag or other container to marinate. In a bowl combine lime juice, zest, honey, salt, and garlic powder. Stir to combine, then pour half over tenderloins, reserving half for sauce. To tenderloins add chiles and adobo sauce. Seal and marinade in fridge. About 30 minutes before you are ready to cook, remove pork from fridge and allow to come to room temperature. Preheat oven to 425°F. In a large, heavy oven-proof skillet (like a cast iron skillet), heat enough oil to coat over medium high temperature. Remove tenderloins from marinade and sear in hot skillet on all sides. Place the skillet in the oven and roast tenderloins for about 15 min. Check temperature with an instant read thermometer. Remove pork from the oven at approximately 140-145, cover pork in skillet with foil. Let rest on the counter for 5-10 minutes or until temperature rises to 150. Remove pork to a cutting board, pour reserved lime juice mixture into skillet with meat juices and heat on high. Allow sauce to reduce and thicken slightly, then pour over sliced pork tenderloins. If you don't have enough sauce or it thickens too much you can add a little water and continue simmering it until it is the quantity and thickness you want. Garnish with freshly chopped cilantro. If you choose to grill, start at step 5 and grill your tenderloins about 15 minutes. Remove from the grill to a platter at 140°F. Pour reserved lime juice mixture over meat and cover with foil. Allow to rest 10 minutes. Then slice, garnish with cilantro and serve.

- In a bowl, whisk together honey, Dijon mustard, soy sauce, garlic, rosemary, and thyme. Season pork on all sides with salt and pepper, to taste. Place pork in a large zip-top plastic bag. Pour half of the marinade over the pork and toss to coat. Seal the bag and refrigerate the pork in the marinade for at least 30 minutes, or up to 24 hours. Rotate the pork occasionally so that the marinade touches all sides. Set aside the remaining ½ of the marinade in a separate bowl, cover, and refrigerate for later. - 1. Rinse pork tenderloin and pat dry. Using a small sharp knife, cut away sinew ( this is also called silver skin) from pork. If left on, this will shrink the meat and make it tough.
- 2. In a large Ziploc bag, combine olive oil, lemon juice, zest, garlic, sage, poultry seasoning, onion powder, and salt. Add tenderloin to bag and coat with the marinade. Squeeze out all the air and seal. Marinate in the refrigerator 2 to 4 hours.
- 3. Remove tenderloin from bag and discard marinade. Blot with paper towel. Sprinkle salt and pepper all over.
- 4. Preheat oven to 400 degrees. Heat 2 tablespoons oil in a large oven-proof sauté pan over medium-high heat. Brown tenderloin in oil on all four sides. Place in the oven and roast for 20 minutes, or until internal temp is 145 degrees. Transfer to serving plate, cover loosely with foil, and let rest for 10 minutes.
- 5. While meat is resting, make a pan sauce. Discard oil from pan, reserving 1 tablespoon. Heat pan over medium high heat. Add 1 cup low sodium chicken stock. Bring to a boil, stirring with a wire whisk to loosen up all the brown bits from the bottom of the pan.Reduce heat to medium. Combine 1 teaspoon cornstarch with 1 teaspoon cold water. Whisk cornstarch mixture into sauce and cook until thickened. Spoon sauce over sliced pork roast.

FLORENCE'S PORK TENDERLOIN IN ROSEMARY, MUSTARD, APPLE MARINADE
This looks like a long recipe, but it's very easy to make and absolutely Incredible in flavour. I usually have everything but the pork and rosemary on hand. My MIL always made this for X-mas and I finally asked for the recipe. She said she got it from a magazine, but I'm not sure which one. I don't normally have Port on hand so I always have used H2O.

- In small bowl, whisk together juice concentrate, 2 Tbsp mustard, 1 Tbsp oil, rosemary and garlic.
- Reserve 3 Tbsp of this mix for basting.
- Place pork in a shallow glass baking dish and pour marinade over, turning to coat.
- Cover and refrigerate at least two hours.
- Preheat oven to 450°F.
- In small bowl or jar combine shallots, port, vinegar, salt, pepper, remaining oil and mustard.
- Whisk or shake until blended.

- Adjust honey& cayenne for sweet& heat.
- This mix is enough to do two (2) tenderloins.
- Mix all ingredients together in a large bowl, set aside.
- Cut tenderloin (s) into small puck shaped pieces.

- Most tenderloins will yield 12-15 pieces.
- Place pieces into marinade& mix thoroughly.

- Top with onions and garlic (if using) with hands, distribute the onions and garlic over the pork.

- 1. PORK TENDERLOIN:Use boneless pork tenderloin (about 5 lb in all). Mix ingredients and set meat in marinade in zip lock plastic bag the day before you cook it.Turning roast occasionally to coat well with marinade. Keep refrigerated.
- 2. Preheat oven to 350 degrees and cook time according to the size of tenderloin. Peel and cut Irish Potatoes, place them around the tenderloin, Pour marinade over potatoes. Turn them once while cooking and re baste meat. You may add 2 sprigs of Rosemary across the potatoes, I love the taste. Check meat to see if it is done when potatoes have finished cooking. Cook cream corn, green beans, fried okra and homemade rolls to serve with Tenderloin.
- 3. MARINADE FOR PORK CHOPS OR CHICKEN (I use the breast). Mix all marinade ingredients together in gallon zip lock bag, add the meat and turn to coat well. Continue to marinade one hour. Spray roasting pan with cooking spray. Bake in a 350 degree oven until juices run clear from meat. May place cooked meat in a fry pan with 2 Tbsp Olive oil with strips of Red and green pepper, chopped onion.and 1/2 tsp hot pepper flakes. Serve over rice with a side salad.
ROAST PORK TENDERLOIN WITH SPRITE MARINADE & HARISSA
Steps:
- PREPARE THE MARINADE: Whisk together Sprite, 1 tbsp hot madras curry, 1 tsp ground cinnamon, cloves, ginger, garlic together in a Tupperware bowl large enough for the pork tenderloin. MARINATE: Poke a few holes in the tenderloin and place in the marinade. Put lid on the Tupperware and place in the fridge. Marinate for 4 hours, turning a few times throughout to thoroughly coat. PREP: Preheat oven to 400 F. Take pork out of the fridge, dry it completely with paper towels and rub with salt, pepper, and curry powder. ROAST: Coat a large ovenproof pan generously with olive oil. Heat on stovetop on medium-high until the oil just starts to shimmer. Add pork to the pan and sear on all sides, 10 minutes total. Remove from heat, coat the pork on all sides with harissa, add a couple of whole dried chiles and transfer the pan to the oven. After 10 minutes, add chicken broth and butter. After another 10 minutes, add clementine segments and baste with pan juices or simply flip the pork. Keep in oven, basting occasionally to maintain moisture, until you achieve desired doneness. I kept it in my oven for a total of 55 minutes. SERVE: Remove from oven when done and DO NOT CUT IMMEDIATELY! Let the meat rest for 10 minutes so the juices stay inside when you cut it. When you serve, squeeze the clementines on top of the meat, sprinkle cinnamon and pour pan juices over the slices.
