This is the simplest, easiest ways to make a pot roast ever. No lost time thawing a large piece of meat. Just toss the frozen chuck roast in, add your veggies, broth, and seasoning, and set your crockpot timer. It literally couldn't be any easier. :)

3 to 4 lbs chuck roast ((arm or rump roast also work))
1 cup chicken broth ((or water))
1 batch ranch seasoning mix ((about 7 tbsp - see recipe below))
1 batch organic Italian seasoning ((3 tbsp + ¾ tsp - see recipe below))
onions ((as desired))
carrots ((as desired))
potatoes ((as desired))
2 to 4 tbsp flour ((or arrowroot powder for making gravy - optional))
coconut oil
1 sprig fresh herbs ((I added rosemary))
3 tbsp dried parsley
1 tbsp dried dill weed
1 tbsp onion powder
2 tsp dried basil
1 ½ tsp garlic powder
¾ tsp sea salt
¾ tsp black pepper
1 tbsp dried oregano
¾ tsp garlic powder
1 ½ tsp onion powder
1 ½ tsp dried parsley
¾ tsp sea salt
½ tsp black pepper
½ tsp dried basil
¼ tsp dried thyme

Steps:

  • You can build the complexity of this dish's flavor by tossing your veggies in to caramelize before adding them to the crock pot. Onions and carrots are delicious this way. Potatoes, not so much. :)
  • Place any veggies you want to include (onions, carrots, potatoes, etc) into the crock pot, then add the roast.
  • Pour one cup of broth/water around the roast. Sprinkle seasoning over the top and cover.*
  • Set slow cooker/crockpot to high and cook for 5-6 hours, or low and cook for 8-10 hours, or until meat is tender. Add spices if you haven't already.
  • When the roast is ready, make gravy using one of these two methods - I use arrowroot powder instead of cornstarch. Add salt if desired.

1 cup hot water
1/4 cup sugar
3 tablespoons cider vinegar
2 tablespoons reduced-sodium soy sauce
1 tablespoon ketchup
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon chili powder
1 large onion, halved and sliced
1 boneless pork loin roast (2-1/2 pounds), halved
4 medium potatoes (about 1-3/4 pounds), peeled and cut into 1-inch pieces
1 package (16 ounces) frozen sliced carrots, thawed
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • In a small bowl, whisk the first nine ingredients until blended. Place onion in a 5-qt. slow cooker. Place roast, potatoes and carrots over onion. Pour sauce mixture over top. Cook, covered, on low 6-8 hours or until pork and potatoes are tender., Remove roast and vegetables from slow cooker; keep warm. Transfer cooking juices to a small saucepan; skim fat. Bring juices to a boil. In a small bowl, mix cornstarch and water until smooth; stir into cooking juices. Bring to a boil; cook and stir 1-2 minutes or until thickened. Serve with roast and vegetables.

1 Pork Roast (small enough to fit in pot)
6-8 potatoes cut up
1 small bag of crrouts cut up
1 pk. lipton onion soup mix
cooking sherry

Steps:

  • - Pour 3 cups of water in crock pot - Add your cut up potatoes and carrots - Lay out 2 sheets of aluminum foil on top of each other - Place roast on foil - Turn up ends of fol so that sherry won't drip off Pour 3 tbs. of cooking sherry on roast - Sprinkle onion soup mix over roast - Fold up foil and seal closed - Lay foil roast on top of potatoes and carrots - Cover pot Cook on low 8-10 hours
