PUMPKIN PIE SPICED PORK LOIN WITH SWEET POTATO CASSEROLE



Pumpkin Pie Spiced Pork Loin with Sweet Potato Casserole image

All your favorite seasonal flavors come together in this cozy cool-weather dish. A rub made with brown sugar and warm spices is a quick way to add flavor to tender pork. Pop the sweet potato casserole into the oven when the roast is halfway done, and everything will finish together.

1 cup packed light brown sugar
2 teaspoons pumpkin pie spice
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon mustard powder
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
One 4-pound boneless pork loin roast
2 tablespoons unsalted butter, plus more for the baking dish
2/3 cup packed light brown sugar
Kosher salt
2 1/2 pounds sweet potatoes (about 5)
1 lemon, sliced and seeded
1/2 cup chopped pecans
3 cups marshmallows

Steps:

  • For the pork: In a small bowl, mix together the brown sugar, pumpkin pie spice, garlic powder, onion powder, mustard powder, 1 tablespoon salt and 1 teaspoon black pepper. Stir in the olive oil to combine. Rub onto the pork on all sides. Put in an 8-by-12-inch rimmed baking dish and let sit at room temperature for 1 hour.
  • Position the racks in the top and bottom of a large countertop oven and preheat to 350 degrees F.
  • Transfer the baking dish to the bottom rack of the oven. Cook until the pork is caramel colored and reaches an internal temperature of 145 degrees F, about 60 minutes.
  • For the sweet potatoes: While the pork roasts, bring a large pot of water to a boil. Melt the butter in a medium saucepan and stir in the brown sugar, 1/2 cup water and a pinch of salt. Bring to a boil, then lower the heat to medium and simmer, stirring, until reduced and thickened, about 10 minutes.
  • Meanwhile, peel the potatoes and cut them lengthwise, then lengthwise again, making long quarters. Cut the quarters into 1-inch pieces. Boil the potatoes until they give a bit when poked with a fork, about 5 minutes.
  • Drain the potatoes and arrange in a single layer in a buttered 3-quart baking dish. Pour the syrup on top, making sure it covers the potatoes. Lay the lemon slices on top and bake on the top rack for 35 minutes. The potatoes are done when they are fork tender.
  • When the pork and sweet potatoes are both done, remove them from the oven and increase the temperature to 400 degrees F. Transfer the pork to a carving board and pour the sauce from the bottom of the pan over it. Let rest while finishing the sweet potatoes, 10 to 15 minutes.
  • Remove and discard the lemon slices from the sweet potato casserole and stir in the pecans. Top the casserole with the marshmallows and return to the oven on the bottom rack. Cook until the marshmallows puff and turn brown, about 10 more minutes.

12 oz mushrooms sliced
1 onion sliced 1/4 in thick
4 cups grated cheese

Steps:

  • layer 1/2 of the sliced potatoes in the bottom of a greased 9x13 casserole dish. add salt & pepper drizzle each layer with a little olive oil next layer the 6 pork cutlets on top of potatoes season with garlic salt and pepper add sliced mushrooms on top Add 1/2 of the cheese over this layer then add 1/2 potatoes add salt & pepper add sliced onions on top top with grated cheese cover with foil and bake at 375 1 hr

3/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
6 slices pork loin (can use pork chops)
1 (10 3/4 ounce) can cream of mushroom soup
2/3 cup chicken broth
1/2 teaspoon ginger
8 ounces sour cream, divided
1 (2 7/8 ounce) can French-fried onions, divided

Steps:

  • Combine flour, salt and pepper in a shallow bowl; dredge pork chops.
  • Heat oil in a large skillet; cook pork loin slices for 4-5 minutes per side or until browned.
  • Place in a single layer in an ungreased 13 x 9 x 2 pan. Combine soup, broth, ginger and 4 ounces sour cream; pour over pork.
  • Sprinkle with half of the onions.
  • Cover and bake at 350 degrees for 45-50 minutes.
  • Stir remaining sour cream into sauce.
  • Top pork with remaining onions.
  • Return to the oven; uncovered, for 10 minutes.

I adopted this recipe concept from this site- but, I think I changed it so much , it would be unrecognizable. My family loves it too and I love this recipe because, it's quick and easy. I like the addition of the cinnamon,nutmeg and orange juice with the sweet potatoes.

1 pkg onion soup mix
1/4 c water
1/3 c brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1/3 c orange juice
6 pork rib or loin chops, about 1/2-inch thick
23 oz can sweet potatoes, drainedthick sliced
1 medium apples cut in 6 thick slices, peeled and seeded
1 medium orange, cut into 6 thick slices,optional
TOPPER: OPTIONAL
2 c bisquick baking mix
1/2 c fresh orange juice

Steps:

  • 1. Casserole: Cook chops in skillet until brown on both sides. Place in ungreased 9x13-inch baking dish; sprinkle lightly with salt and pepper. Combine soup mix , water,orange juice, sugar and spices. Mix well. Pour over chops.Cover and bake for 30 minutes at 375^. Arrange potatoes around chops. Spoon juice from pan over chops and potatoes. Top each chop with orange and apple slices. --- Topper: Mix baking mix and the orange juice; beat vigorously 30 seconds. Drop dough by 12 Tablespoons onto chops and potatoes. Bake uncovered until biscuits are light brown, 20-25 minutes. Spoon juice from pan over each serving.
