ROLLED PORK FLORENTINE

1 pork loin, about 2 pounds/900 g
Salt and freshly ground black pepper
7 ounces/200 g spinach
2 slices bacon, cut into lardons
1 medium onion, chopped
1 clove garlic, minced
4 tablespoons fresh breadcrumbs
1 tablespoon oil, for frying
1/2 cup/125 ml white wine

Steps:

  • Heat the oven to 375 degrees F. Set the pork on a cutting board and imagine you're going to cut an upside-down letter T into it: in other words, slice half-way through, lengthwise, then half-way through to the left and the right. Open out the meat. Lay plastic wrap over it, and pound flat with a mallet. Season with salt and pepper, and set aside.
  • Rinse the spinach and spin dry, allowing a little water to remain clinging to the leaves. Put it in a saute pan, cover, and wilt, about 5 minutes. Lay the spinach on a clean tea or kitchen towel and squeeze dry. Chop, and set aside.
  • Wipe out the pan and put if back on the stove. Fry the bacon until cooked, remove to drain. Pour off all but a tablespoon or 2 of the fat and fry the onion until golden. Add the garlic and cook 1 minute. Stir through the bread crumbs and spinach. Season with salt and pepper.
  • Pat the stuffing over the meat, leaving a 1-inch border. Roll and tie the pork at 2-inch intervals. Wipe out the saute pan and heat the oil in it. Brown the meat on all sides, pour in the wine, and then transfer to the oven and roast until done, about 45 minutes. Remove from the oven and let the meat rest 10 minutes. Wrap for later, or slice and serve with the pan juices poured over.

My husband and I came up with this recipe one day when I had a pork tenderloin and didn't know what to do with it. It was so good, we invited friends over for a sample the next weekend.

1 pork tenderloin (1 pound)
1/8 teaspoon garlic powder
5 to 6 medium whole fresh mushrooms
1 package (10 ounces) frozen chopped spinach, thawed and well drained, divided
1/2 cup corn-bread stuffing mix
3 tablespoons grated Parmesan cheese, divided
3 tablespoons butter, melted
1 tablespoon sliced green onion
Browning sauce, optional
Dash ground nutmeg

Steps:

  • Cut a lengthwise slit down the center of the tenderloin to within 1/2 in. of bottom. Open tenderloin so it lies flat; cover with plastic wrap. Flatten with the flat side of a meat mallet or rolling pin to 1/4-in. thickness. Remove plastic and sprinkle meat with garlic powder; set aside. , Separate caps from stems of three mushrooms; set caps aside. Chop stems and remaining mushrooms to measure 1/2 cup. In a bowl, combine chopped mushrooms, half the spinach, stuffing mix, 2 tablespoons cheese, butter and onion; mix well. Spread over tenderloin. Roll up, starting with a long edge. Secure with toothpicks. , Place, seam side down, in a greased 13x9-in. baking pan; brush lightly with browning sauce if desired. Top with remaining spinach; sprinkle with nutmeg. Arrange mushroom caps around meat; sprinkle with remaining Parmesan. , Cover and bake at 350° for 30 minutes. Uncover and bake 10 minutes longer or until a thermometer inserted into meat layer reads 160°-170°. Cut into 1-in. slices.

4 -6 pork chops, 1/4 lb. each
salt
pepper
1/4 cup water
1 lb spinach, cooked
3 ounces egg noodles, cooked
2 tablespoons flour
2 1/2 tablespoons butter, melted
2 1/2 cups milk
1/2 cup parmesan cheese, grated

Steps:

  • Brown the chops in a skillet without adding any oil.
  • Add salt and pepper to taste and then add the water. Cover and simmer till tender.
  • Chop the spinach and mix with the onion and mix.
  • Meanwhile, mix the flour, butter and milk and add it to the noodles.
  • Spread spinach over the bottom of a casserole, pour noodles over that and arrange the chops on top of the noodles.
  • Pour pan gravy over all.
  • Sprinkle with grated cheese and bake at 375 degrees F. for 15 minutes.

1 medium onion, sliced thin
1 (26 ounce) jar marinara sauce, italian style
1 (10 ounce) package frozen leaf spinach, thawed and well drained
1 cup mozzarella cheese, shredded

Steps:

  • Heat 1 tbsp of olive oil in a large skillet over medium-high heat.
  • Add the pork chops and cook until browned on both side, then remove and set aside.

2 -3 tablespoons all-purpose flour
1 cup white wine
1 cup milk
2 -3 tablespoons chopped sun-dried tomatoes
1/2 cup frozen chopped spinach, thawed and drained
2 -3 tablespoons grated asiago cheese
sea salt, to taste
fresh ground pepper, to taste

Steps:

  • Preheat oven to 325 degrees.
  • Place tenderloin in baking dish sprayed with non-stick spray.
  • Season with salt and pepper to taste.
  • Bake 35-40 minutes or until desired doneness.
  • When pork is done, remove from pan and keep warm.
  • Pour 2-3 Tablespoons of drippings from the pork into a medium saute pan.
  • Heat over medium high heat; whisk in flour. Cook for 1 minute, stirring constantly with whisk.
  • Slowly whisk in white wine; stir until smooth.
  • Reduce heat and continue cooking until thickened and reduced by half, stirring as needed.
  • Gradually stir in milk; bring to a simmer.
  • Cook over medium heat until smooth and thick, stirring constantly.
  • Add chopped sun-dried tomatoes and spinach.
  • Continue cooking until completely heated through. Mixture will be somewhat thick.
  • Slice pork tenderloin into medallions, approximatley 1/4-1/2 inch thickness.
  • Arrange pork medallions on serving plate, top with spinach-tomato mixture.
  • Season with salt and pepper, if desired.
  • Sprinkle asiago cheese over the top and serve hot!

4 cloves Large cloves garlic, crushed
4 teaspoons Fresh rosemary, chopped
1 teaspoon Fennel seeds, crushed, optional

2 tablespoons Olive oil

Steps:

  • Position rack in the center of the oven and set the temperature to 450 degrees
  • Mix the garlic, rosemary, fennel, and salt and pepper in a small bowl.
  • Make deep incisions in the pork, around four of them. Stuff the incisions with the garlic mixture and spread any remaining over the entire surface of the meat. Rub with 1 to 2 tablespoons olive oil.
  • Roast for 15 minutes. Reduce the oven temperature to 350 degrees and roast until a meat thermometer inserted in the thickest part of the meat registers 150 degrees. About 1 hour. Salt and pepper, to taste
4 tablespoons olive oil, divided
8 cloves garlic, minced
¼ cup bacon pieces, half-cooked
½ cup chicken stock
2 cups heavy cream
1½ cups chopped fresh baby spinach
½ cup chopped fresh tomato
¼ cup grated Parmesan cheese
1 teaspoon Italian seasoning

Steps:

  • Directions Season pork chops on both sides with salt and pepper, to taste. In large skillet, heat 2 tablespoons oil over medium heat. Cook pork chops 4-5 minutes per side until internal temperature reaches 145 degrees. Remove pork chops from pan and keep warm. In same skillet, heat remaining oil over medium heat. Add minced garlic and partially cooked bacon to skillet; cook until tender, about 3 minutes. Add chicken stock and bring to a simmer. Reduce heat to low and add heavy cream. Season with salt and pepper. Add spinach and tomatoes to sauce; let spinach wilt. Stir in Parmesan cheese and Italian seasoning; simmer about 3 minutes. Return pork chops to pan along with juices. 2 lb bone-in center cut pork loin (you may use boneless pork loin but it will not be as succulent or flavorful).
1 sprig(s) fresh rosemary or 1 tbsp dried rosemary
2 clove garlic, minced fine
1 Tbsp fresh lemon juice + 1 tbsp grated lemon peel
1 tsp coarse sea salt
1/4 tsp black pepper

Steps:

  • 1. Preheat oven to 325 degrees.
  • 2. Using a damp paper towel, wipe the pork roast then make small slits here and there on the fat side of pork roast. Place in a shallow roasting pan.
  • 3. Combine the rest of the ingredients:salt, pepper, lemon juice and peel, and the garlic and rosemary. Fill each small slit in the pork with this mixture and rub all over the outside surfaces of the roast.

The original recipe called for just a head of frisée but we can't get that here, so I use whatever salad blend looks the best (usually go for the baby greens since they have frisée in it).

6 racks of baby-back pork ribs
6 garlic cloves
sea salt
pepper
6 sprigs rosemary
1 tablespoon extra virgin olive oil
4 teaspoons red wine vinegar
6 tablespoons extra virgin olive oil
mixed salad green (please read above)
1 cucumber, peeled and cut into 1/8 inch rounds
1 lb ripe cherry tomatoes, halved (grape tomatoes are nice too)

Steps:

  • Chop the garlic and rosemary together (you can use dried if you must) and stir together with some salt (I use coarse salt for this step)and the 1 Tbsp olive oil.
  • Rub the mixture over the ribs.
  • Grill over medium-hot coals for 8-10 minutes per side, or until fully cooked (they will get nice and crisp).
  • Meanwhile dissolve 1/2 tsp of salt (use fine ground for this) in the vinegar in a large salad bowl.
  • Drizzle in the olive oil while whisking.
  • Add the greens, cucumber and tomatoes.
  • Toss well.
  • Place the salad on a serving plate and arrange the ribs on top.
  • The salad should wilt gently.
  • Serve at once.
