1 boneless rolled pork loin roast (3 to 4 pounds)
1/2 teaspoon salt, divided
1/4 teaspoon pepper
1 jar (12 ounces) cherry preserves
1/4 cup cranberry-raspberry juice
2 tablespoons corn syrup
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves

Steps:

  • Place roast fat side up on a rack in a shallow roasting pan. Sprinkle with 1/4 teaspoon salt and pepper. Bake, uncovered, at 350° for 40 minutes. , In a small saucepan, combine the preserves, juice, corn syrup, spices and remaining salt. Bring to a boil. Reduce heat; simmer for 5 minutes. Pour 1/2 cup sauce over roast. Bake 20 minutes longer or until a thermometer reads 145°. Let meat stand for 10 minutes before slicing., Scrape up browned bits and pan drippings; add to remaining sauce. Cook and stir until heated through. Serve with roast.

1 (1-pound) pork tenderloin
Kosher salt and freshly ground pepper
8 bacon slices
1 teaspoon olive oil
8 shallots, halved
1/2 cup dried sour cherries
3/4 cup chicken stock
1 teaspoon cornstarch
Chopped fresh dill, for garnish, optional

Steps:

  • Preheat the oven to 400 degrees F. Pat dry the pork tenderloin and sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper, then wrap with the bacon, overlapping the slices.
  • Heat the oil in a large nonstick skillet over medium-high heat until hot, then brown the pork and shallots, 6 to 8 minutes. Flip the pork tenderloin browned-side up and transfer the skillet to the oven. Roast until the pork reaches 145 degrees F in the center, 15 to 18 minutes.
  • When the pork is done, transfer to a cutting board, leaving the shallots in the skillet. Add the cherries and stock to the skillet and bring to a simmer. Stir together the cornstarch and 1 tablespoon water, then add to the skillet, bring to a boil, whisking until sauce is thickened, about 2 minutes. Season the sauce with salt and pepper. Slice the pork into 8 pieces, divide among 4 plates with the sauce, and sprinkle with dill, if desired.

2 1/2 cups chicken stock
2 ounces dried cherries
1/3 cup balsamic vinegar
4 pork loin chops, 1 inch-thick (bone in)
coarse salt & freshly ground black pepper
1 tablespoon olive oil
1 tablespoon butter
1 sprig of fresh watercress (or Italian parsley)

Steps:

  • Place 2 cups stock, the dried cherries and balsamic vinegar in a small saucepan over medium heat and simmer gently until the sauce is reduced by half.
  • Set aside.
  • Twenty minutes before serving, sprinkle each side of each pork chop with salt and pepper.
  • Place the olive oil and butter in a medium-sized saute pan and heat until the bubble subside.
  • Place each chop carefully in the pan so they are not touching.
  • Leave them to brown without moving for 2 to 3 minutes.
  • When the chops are a brown, turn with tongs and brown the other side.
  • Remove the chops from the pan, pour off any fat, add 1/2 cup chicken stock.
  • Return the chops to the pan, place over low heat, cover, and cook gently for 3-4 minutes, until the chops are just firm when pressed with a finger.
  • Remove the chops and keep warm.
  • Add the balsamic-dried cherry mixture to the saute pan and bring to a boil.
  • Let the sauce simmer for 5 minutes - it should coat the spoon again.
  • Taste, add salt and pepper to taste.
  • Place the chops on warm dinner plates; spoon over the dried cherry sauce.
  • Garnish with sprigs of watercress or Italian parsley.

1 1/4 pounds pork tenderloin, sliced into 1/2-inch thick medallions
1/2 teaspoon salt, divided
1/4 teaspoon pepper
3 teaspoons olive oil, divided
2 tablespoons chopped shallots
3/4 cup low-sodium chicken broth
2 tablespoons balsamic vinegar
1/4 cup dried tart cherries

Steps:

  • Season the pork medallions with 1/4 teaspoon of salt and pepper. Heat 2 teaspoons oil in a large nonstick skillet over a medium-high heat and cook the meat until there is just a slight blush in the center about 3 minutes per side. Transfer the meat to a plate and tent with foil.
  • Add the remaining teaspoon of oil and the shallots to the pan and saute until they begin to soften, about 1 minute. 4 (4 ounce) boneless pork loin chops
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
1 cup cherry preserves
1 teaspoon balsamic vinegar

Steps:

  • Heat a large nonstick skillet over med-high heat.
  • Coat pan with cooking spray.
  • Sprinkle pork with half the salt and pepper.
  • Add pork to pan and cook 4-5 minutes on each side, or until browned and cooked through.
  • Remove and keep warm.

2 teaspoons fennel seeds
2 teaspoons salt
1/2 teaspoon whole black peppercorns
2 (1-pound) pork tenderloins
1/2 pound shallots (about 7), peeled and halved lengthwise
2 tablespoons olive oil
2 cups dry red wine
1 cup dried sour cherries (5 ounces)
1/2 cup sugar
2 (5-inch) sprigs fresh rosemary
Garnish: 40 (1-inch) sprigs fresh rosemary or wooden picks
Special Equipment
an electric coffee/spice grinder; an instant-read thermometer

Steps:

  • Put oven rack in middle position and preheat oven to 400°F.
  • Very finely grind fennel seeds, salt, and peppercorns in grinder, then rub all over pork.
  • Toss shallots with oil in a 13- by 9-inch flameproof roasting pan, then nestle tenderloins among shallots (without crowding) and roast until thermometer inserted into thickest end of pork registers 155°F, about 30 to 35 minutes. Put 2 layers of foil on a work surface and transfer pork to foil. Cool to room temperature, about 1 hour, then wrap in foil and chill until cold, about 2 hours.
  • While pork cools, put roasting pan with shallots over a burner, then add wine and deglaze pan by boiling, stirring and scraping up any brown bits with a wooden spoon, 1 minute. Transfer mixture to a 2- to 2 1/2-quart heavy saucepan. Add cherries, sugar, and rosemary and boil until liquid is reduced to about 2 cups, 15 to 20 minutes. Discard rosemary sprigs (do not discard any leaves that have fallen off stems). Transfer mixture to a food processor and pulse until coarsely chopped. Transfer to a bowl and chill, uncovered, until cold, about 1 1/2 hours.
  • Cut chilled pork with a carving knife or an electric meat slicer diagonally into 3/4-inch-thick slices. Roll up each slice into a cornet (cone) shape and pierce in center with a rosemary sprig to secure. Fill opening of each cornet with about 1/2 teaspoon cherry sauce. Discard rosemary sprigs when eating.
