The fruity apple and warm spice flavors in this rub are light and pleasing. Sprinkle it on pork tenderloin, chicken or turkey breasts to completely cover the outside of the meat and grill immediately. This makes enough for a whole chicken, 6 large pork chops, 2 pork tenderloins or a whole turkey breast.

1 cup crumbled dry apple chips
1 1/2 teaspoons black peppercorns
1 teaspoon coriander seeds
1/4 teaspoon whole allspice
1/4 cup sugar
2 tablespoons kosher salt
1 tablespoon sweet paprika
1 teaspoon ground ginger
1/4 teaspoon ground cinnamon

Steps:

  • Grind the apple chips to a very fine powder in a spice grinder. (The drier the powder, the better and the rub will last longer without clumping.) Transfer to a bowl.
  • Grind the peppercorns, coriander seeds and allspice into a fine powder and add it to the apple powder.
  • Add the sugar, salt, paprika, ginger and cinnamon to the apple powder mixture and combine well. If not using immediately, store in an airtight container in a cool, dark place for up to 30 days.

1 tablespoon vegetable oil
6 (1-inch thick) boneless pork loin chops
1 ½ cups water
¼ cup margarine
1 (6 ounce) package pork stuffing mix
1 (21 ounce) can apple pie filling with cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat vegetable oil in a large skillet over medium-high heat; brown pork chops in the hot oil, 3 to 4 minutes per side.
  • Bring water and margarine to a boil in a saucepan; add stuffing mix and cover. Remove saucepan from heat and let stand 5 minutes to absorb water. Remove cover and fluff stuffing with a fork.
  • Spread apple pie filling into the prepared baking dish; layer pork chops onto pie filling layer. Spoon stuffing over pork chops. Cover baking dish with aluminum foil.
  • Bake in the preheated oven for 35 minutes. Remove aluminum foil and cook until pork is no longer pink in the center, about 10 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1 tablespoon all-purpose flour
1 ½ teaspoons rubbed sage
1 teaspoon dried minced garlic
1 teaspoon dried thyme leaves
1 teaspoon salt
½ teaspoon ground allspice
½ teaspoon ground paprika
2 tablespoons olive oil
4 (5 ounce) boneless pork chops, about 1 inch thick
1 medium sweet onion, thinly sliced
2 medium Red Delicious apples, cored and thinly sliced
½ cup apple juice
1 ½ tablespoons brown sugar

Steps:

  • Mix flour, sage, garlic, thyme, salt, allspice, and paprika together in a small bowl. Set aside 2/3 of the spice mixture for later use. Sprinkle remaining spice mixture onto the pork chops, coating all sides.
  • Heat olive oil in a large skillet over medium-high heat. Add pork chops and cook in the hot oil until browned, 3 to 5 minutes per side. Remove pork from the skillet.
  • Add onion to the skillet and cook until tender, about 3 minutes. Add apples; cook and stir for 2 more minutes. Stir in apple juice, brown sugar, and reserved spice mixture; bring to a boil.
  • Reduce heat to low, cover, and simmer until pork is longer pink in the center, and reaches desired level of doneness, about 5 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
