Pork Chops with Tomato Chutney image

For a quick appetizer, spread softened goat cheese or cream cheese on crackers, and spoon chutney on top. It can also be used as a filling for omelets or as a topping for baked potatoes.

3 tablespoons olive oil
1 medium onion, chopped (about 1 cup)
1 teaspoon mustard seeds
1 can (14.5 ounces) whole tomatoes, with juice
1/4 cup cider vinegar
1/4 cup golden raisins
4 teaspoons dark-brown sugar
Coarse salt and ground pepper
4 pork loin chops, (each 1/2 inch thick and 6 to 8 ounces)

Steps:

  • Make chutney: Heat 1 tablespoon oil in a small skillet over medium heat. Add onion and mustard seeds; cook, stirring occasionally, until onion is golden, about 8 minutes.
  • Add tomatoes, breaking them up with a spoon. Stir in vinegar, raisins, sugar, and 1/4 cup water; season with salt and pepper. (Yellow raisins, which are plumper and sweeter than dark ones, are often used to make chutneys.) Bring to a boil, and reduce heat; simmer, stirring occasionally, until mixture has thickened, about 15 minutes. Set chutney aside.
  • Meanwhile, generously season both sides of pork chops with salt and pepper. In a large skillet, heat remaining 2 tablespoons oil over medium-high heat. Cook pork (in two batches, if necessary) until browned and cooked through, 3 to 4 minutes per side. Serve with chutney.

PORK WITH GREEN TOMATO CHUTNEY



Pork with Green Tomato Chutney image

Don't pick up soft green colored heirloom tomatoes for this recipe! The chutney here needs tart, firm underripe green tomatoes that are easy to find towards the end of tomato season. They can be simmered without totally losing their shape and balance the bit of sweetness expected in a chutney.

3 tablespoons extra-virgin olive oil
1/2 sweet onion, chopped
1 stalk celery, sliced
1 yellow bell pepper, chopped
2 unripe green tomatoes (about 1 pound), cored and chopped
1 teaspoon finely chopped fresh thyme, plus 1 large sprig
Kosher salt and freshly ground pepper
1/4 cup apple cider vinegar
3 tablespoons packed light brown sugar
4 boneless pork chops (about 1 inch thick; 8 ounces each)
2 cups microwavable wild rice blend, for serving
1/4 cup chopped fresh parsley, plus more for sprinkling

Steps:

  • Heat 1 tablespoon olive oil in a medium saucepan over medium-high heat. Add the onion, celery and bell pepper. Cook, stirring, until softened, about 5 minutes. Add the tomatoes, thyme sprig, 3/4 teaspoon salt and a generous grinding of pepper; stir well to coat. Add 1 cup water, the vinegar and brown sugar and bring to a simmer. Cook, stirring and mashing the tomatoes as they soften, until the mixture thickens but is still chunky, adding a splash of water toward the end if needed, 20 to 25 minutes.
  • Meanwhile, season the pork all over with salt, pepper and the chopped thyme. Heat the remaining 2 tablespoons olive oil in a large skillet over medium-high heat. Add the pork and cook, turning, until just cooked through but still a touch rosy in the center, about 7 minutes per side. Transfer to a cutting board to rest, 5 minutes.
  • Divide the rice among plates. Stir any accumulated juices from the pork into the tomato chutney along with the parsley. Divide the pork and chutney among the plates. Top with more parsley.

2 tablespoons olive oil, divided
4 boneless pork loin chops, pounded thin
1 large onion, sliced
½ teaspoon sugar
2 teaspoons chili powder
½ teaspoon fennel seeds, crushed
½ teaspoon red pepper flakes
1 teaspoon dried oregano
1 (8 ounce) can tomato sauce
2 fluid ounces water
1 teaspoon Worcestershire sauce
salt and pepper to taste

Steps:

  • Heat the oil in a skillet over high heat, and quickly brown the pork chops on both sides. Transfer chops to platter, and keep warm.
  • Reduce skillet heat to medium, and cook the onion until tender. Mix in the sugar, chili powder, fennel, red pepper flakes, and oregano. Stir in the tomato sauce, water, and Worcestershire sauce, and bring to a boil.
  • Return the pork chops to the skillet. Cover, reduce heat to low, and cook 10 minutes. Remove cover, and continue cooking 15 minutes, or to desired doneness.

4 thick cut boneless pork chops

10 ounces fresh mushrooms, sliced
1 (14 ounce) can stewed tomatoes, with juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

A great dish I created when I had an abundance of cherry tomatoes. My family loves this dish. This recipe can easily stretch for six. Just cook two extra chops. Make sure to reduce liquids before adding pork, so as not to boil them. Pork will finish cooking very quickly, so be careful not to overcook.

4 (1-inch thick) pork chops
salt and ground black pepper to taste
1 ⅔ tablespoons olive oil, divided
½ onion, minced
2 cloves garlic, minced
1 pint cherry tomatoes
1 tablespoon brown sugar
¼ cup bourbon whiskey
¾ cup beef broth
1 tablespoon minced fresh flat-leaf parsley

Steps:

  • Season pork chops with salt and black pepper.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook pork chops in hot oil until nearly cooked through, 3 to 5 minutes per side. Remove pork chops to a plate, retaining oil and drippings in the skillet.
  • Pour 1 teaspoon olive oil to the reserved drippings and reduce heat to medium. Cook and stir onion in oil mixture until translucent, about 5 minutes. Stir garlic into onion; cook and stir until fragrant, 1 to 2 minutes. Remove onion mixture to a bowl.
  • Pour remaining 1 teaspoon oil into the skillet and increase heat to medium-high. Add tomatoes to oil and cook until seared on all sides and the skins begin to crack, about 10 minutes. Sprinkle brown sugar over the tomatoes; stir.
  • Pour bourbon over the tomatoes; bring to a simmer and cook until some of the alcohol evaporates, about 2 minutes. Add onion mixture and beef broth to the tomatoes; bring to a simmer and cook until the liquid reduces by half and the tomatoes are soft, about 5 minutes.
  • Return pork chops and juices to the skillet, cook until no longer pink in the center, about 3 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Serve dish sprinkled with parsley.
