- In a large skillet, cook bacon over medium heat until crisp. Drain on paper towels; discard all but 2 tablespoons drippings. Saute pepper, celery and onions in drippings until almost tender. Add rice, water and seasonings. Cover and simmer 10 minutes. Add peas and bacon; simmer 10 minutes longer. Discard bay leaf.

PORK CHOPS WITH HOPPIN' JOHN
This is an easy top of the stove meal, and another way to make pork chops. Another way is use red beans and rice, substitute a 15-16 oz can of red kidney beans, drained, for the black-eyed peas.

Steps:
- Brown pork chops in skillet; if thick, simmer slowly, covered, to partially cook. Lift out chops and pour all fat from skillet.
- Add remaining ingredients and place chops on top. Bring to a boil. Stir; cover and lower heat.
- Cook 20-25 minutes or until rice is tender, most of liquid is absorbed and chops are done.
