This is another rediscovered recipe from the depths of my file folders, hidden for many years. I don't think I have ever made this since we don't eat much pork, but it looks delicious and I think I'll make it with the other white meat..chicken.

1/2 cup melted butter
1 tablespoon oil
24 ounces pork chops
1 cup white wine
1 cup whole berry cranberry sauce
1 small onion, chopped
1/4 cup fresh thyme, chopped
salt and pepper

Steps:

  • Lightly brown the chops in the oil in a skillet.
  • In a small bowl, combine the butter, cranberry sauce, and white wine.
  • Arrange the chops in the bottom of the stoneware in the crock pot. Sprinkle the salt and pepper, onions, and thyme over the meat.
  • Pour the sauce into the pot and cook on low for 6 hours or on high for 4.

1 tablespoon oil
4 -6 pork loin chops, 1-inch thick
2 leeks, cleaned and sliced, white only
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup madeira wine or 1/2 cup orange juice
1/4 cup orange marmalade
1/2 cup dried cranberries

Steps:

  • In a large skillet, heat oil to med-hi.
  • Add 3 chops and brown on both sides. Transfer to slow cooker. Repeat with remaining chops.
  • Drain fat from the pan and reduce heat to medium.
  • Add leeks and cook until soft.
  • Add garlic, salt & pepper. Stir and cook for 1 minute. Stir in port, marmalade and cranberries and bring to a boil.
  • Pour over chops in crock pot. cover and cook on low for 5 hours or high for 2-1/2 hours.
  • Serve immediately.
  • This is good with egg noodles.

Another recipe from my Aunt's collection. I'm not sure where she orginally got it from, but it is delicious. This recipe doubles very easily.

1 tablespoon butter
2 (5 ounce) boneless pork chops
1/3 cup dry white wine
1/3 cup cranberry sauce
3 green onions, chopped
1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme

Steps:

  • Melt butter in heavy medium skillet over medium heat.
  • Sprinkle pork with salt and pepper.
  • Sauté pork until brown and cooked through, about 5 minutes per side.
  • Transfer pork to plate.
  • Add wine to same skillet.
  • Bring to simmer, scraping up browned bits in bottom of pan.
  • Stir in remaining ingredients.
  • Reduce heat to medium-low and simmer until slightly reduced, stirring occasionally, about 3 minutes.
  • Season sauce to taste with salt and pepper.
  • Return pork and any juices to skillet.
  • Cook until heated through, about 1 minute.
  • Spoon sauce over and serve.

6 lean pork loin chops
1 (16 ounce) can jellied cranberry sauce
1/2 cup cranberry juice
1/4 cup sugar
2 tablespoons spicy brown mustard

Steps:

  • Place chops in slow cooker. Sprinkle with salt and pepper or seasoning of your choice. Combine remaining ingredients in bowl. Stir well till blended and smooth. Pour over chops. Cook on low 4-5 hours.

I found this in a cookbook I took out from the library (title forgotten). This sounds delicious! You can also substitute a boneless pork shoulder butt roast (3 lbs) for the pork chops. Brown the roast on all sides and then proceed as directed. Haven't tried yet.

4 -6 pork chops (1 inch thick)
2 leeks, white part only, cleaned and thinly sliced
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon cracked black peppercorns
1/2 cup madeira wine or 1/2 cup orange juice
1/4 cup orange marmalade
1/2 cup dried cranberries

Steps:

  • In a nonstick skillet, heat oil over medium-high heat. Brown pork chops on both sides and transfer to slow cooker. Drain fat from pan.
  • Reduce heat to medium. Add leeks and cook, stirring, until softened. Add garlic, salt and peppercorns. Cook, stirring for 1 minute. Stir in port, marmalade and cranberries and bring to a boil.
  • Pour mixture over pork. Cover and cook on low for 5 hours or on high for 2 1/2 hours, until pork is tender and just a hint of pink remains. Serve immediately.
