Portuguese Pork with Clams | Porco Alentejana image

This combination of Portuguese pork and clams, also known as porco Alentejana, is a superbly comforting and oh-so-satisfying dish of marinated pork shoulder and briny clams in a white wine and red pepper sauce.

3 pounds boneless pork shoulder or butt (cut into 1-inch (2.5-cm) chunks)
1/4 cup red pepper paste
1 3/4 cups dry white wine
6 tablespoons olive oil
2 medium yellow onions (coarsely choppped)
3 cloves garlic (minced)
2 pounds Yukon gold potatoes (peeled and cut into 1-inch (2.5-cm) cubes)
Kosher salt and freshly ground black pepper
3 1/4 pounds small clams (such as cockles, manila, butter, or littlenecks, scrubbed and rinsed)
1/4 cup chopped fresh cilantro leaves

Steps:

  • In a medium bowl, toss the pork chunks with the red pepper paste. Add the wine and toss again. Cover with plastic wrap and refrigerate for at least 24 hours or up to 36 hours.
  • Position a rack in the middle of the oven and crank up the heat to 400°F (200°C).
  • In a colander set over a large bowl, drain the pork, reserving the marinade. Pat the pork dry with paper towels.
  • In a large pot over medium-high heat, warm 3 tablespoons olive oil. Working in batches, add the pork and cook, stirring occasionally, until browned on all sides, 5 to 7 minutes. Add more oil in between batches, if needed. Transfer the pieces to a plate using a slotted spoon. If the bottom of the pot develops a dark coating, tip in some water in between batches and scrape it up.
  • Lower the heat to medium, add the onion, and cook until soft, about 5 minutes. Add the garlic and cook for 1 minute more.
  • Pour in the reserved marinade, return the pork to the pot, and cook, covered, over low heat until the meat is tender, 1 to 1 1/2 hours. If it looks as if the liquid will burble away, spoon in a bit of water.
  • Meanwhile, in a large bowl, toss the potato cubes with the remaining 3 tablespoons oil, season lightly with salt and with plenty of pepper, and scatter in one layer on a rimmed foil-lined baking sheet. Roast, flipping them once or twice, until golden brown, about 45 minutes.
  • Discard any clams that feel heavy (which means they're full of sand), have broken shells, or don't close when tapped.
  • Raise the heat under the pork to high, stir in the clams, cover, and cook until they open, 7 to 10 minutes. Toss out any that refuse to pop open. Taste the broth and season with salt and pepper if needed.
  • To serve, remove half the clams from their shells, and return them to the pot. Toss out the shells. Line the bottom of the serving bowls with the potato cubes, top with the pork and clams and broth, and sprinkle with the cilantro. Have a large bowl at the ready for the shells.

I found this little recipe in the back of a Portuguese magazine. It is so good that I just couldn't keep it all to myself, so thought I would share it with all of you. Try and use fresh clams if at all possible,if not you will have to make do with the frozen ones. Truly hope you enjoy it!

1/2 kg clam
4 pork chops (good size ones)
2 tablespoons olive oil (to fry chop)
1 onion, sliced into thin circles
3 garlic cloves, finely chopped
1/2 kg tomatoes, with skin removed and sliced into circles
1/4 cup white wine
1 bay leaf
1 tablespoon tomato paste
2 tablespoons of chopped parsley (I prefer fresh cilantro)
1 teaspoon salt (or to own taste)
1 teaspoon red pepper flakes (or to your own taste)

Steps:

  • Place the clams into a large bowl with water and salt for a couple of hours, so all the sand can be removed.
  • Season your chops with salt and pepper to your own taste, and fry them in a pan, making sure oil is nice and hot.( when ready set aside in a casserole).
  • Meanwhile peel onion, garlic and tomatoes. Slice the onion and tomatoes, and chop the garlic very finely.
  • In a large skillet pour in the olive oil and add in garlic, once oil is heated add in the onion and stir till it starts turning a golden colour, at this stage add in the wine, tomato paste,tomatoes, bay leaf, and chopped parsley or cilantra ( what ever you like the best). Keep stirring everything, season with salt to your own taste and add in pepper flakes.
  • Meanwhile drain will your clams pass them through running water to make
  • sure all sand has been removed.
  • Place clams into tomatoes mixture, and when they are all open, pour over
  • the chops that are already in a casserole dish.
  • Sprinkle a little more parsley or cilantro over top for garnish, serve with what ever meet your fancy.

2 tablespoons olive or vegetable oil, divided
2 leeks, white part only, rinsed and chopped
1 McIntosh or Granny Smith apple, cored and diced
2 teaspoons dried oregano
1/2 teaspoon dried rosemary
Salt and pepper
1 1/2 cups unseasoned bread cubes (or cut up day-old bread)
1/2 cup reduced-sodium chicken broth or enough to moisten bread
4 (5-ounce) boneless pork chops, about 1-inch thick, trimmed of fat

Steps:

  • Preheat oven to 400 degrees F.
  • Heat 1 tablespoon of oil in a large skillet over medium heat. Add leek and apple and saute 4 minutes, until tender and golden. Add oregano, rosemary, and salt and pepper, to taste, and stir to coat. Transfer mixture to a large bowl and add bread cubes and chicken broth. Mix well and set aside.
  • Using a sharp knife, slice pockets into chops by slicing horizontally into the side, and almost through to the other side. Season the outside with salt and pepper. Stuff chops with apple mixture, allowing stuffing to overflow out of pockets.
  • Heat remaining oil in a large skillet over medium-high heat. Add pork chops and sear on 1 side until browned, 3 to 4 minutes. Flip chops and transfer to oven to finish cooking for 8 to 10 minutes, or until cooked through.

I make these when I really want to impress my guests. Someone actually told me this was the best dish they'd ever tasted outside of a fancy Restaurant. It takes a bit of time, but it'll all be worth it.

8 center-cut pork chops (1/2 inch thick)
1/2 lb raw shrimp
1 cup lump crabmeat
1 tablespoon olive oil
3 tablespoons unsalted butter
1/4 cup zucchini, chopped (small not fine)
1/4 cup summer squash, chopped (small not fine)
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped green bell pepper
1 small onion, finely chopped
1 bunch green onion
2 large garlic cloves, minced
2 teaspoons fresh thyme
1 bunch fresh thyme leave
1 teaspoon fresh rosemary
1 teaspoon fresh oregano
4 cups day old French bread
1 1/2 teaspoons creole seasoning
1 1/2 cups chicken broth
4 tablespoons french garlic and herb goat cheese
4 slices prosciutto ham
1 1/2 cups heavy cream
1/4 cup white wine
kosher salt
fresh ground black pepper

Steps:

  • Peel your shrimp. In a small sauce pan add your chicken stock, the shrimp peels and the small bunch of thyme stems with leaves still on. Bring to a boil. Turn down heat to low and let simmer for 10 minutes. Then strain broth into bowl. Set aside.
  • In a sauté pan add your tablespoon of olive oil and turn heat to med-high. Add your zucchini, summer squash, red and green bell pepper, onion, chopped green onion tops (set bottoms aside for later), and half your minced garlic. Sauté for 2-3 minutes or until onions start to turn translucent. Add a tablespoon of the butter and remaining herbs. Let cook for another 2 minutes. Season with 1 teaspoon creole seasoning and ground black pepper to taste. Add French bread torn into small pieces. Stir in broth until it resembles a stuffing.
  • In small sauté pan add 2 tablespoons of butter. Add the shrimp and sauté until shrimp is pink on both sides. Remove shrimp from pan leaving the buttery sauce in the pan. Set pan aside for later.
  • Add half of the cooked shrimp lightly chopped with half of the lump crab meat to the stuffing. Gently fold in seafood. Set aside.
  • Heat oven to 350°F.
  • Lay out 4 pork chops in a 12x 8x baking dish. Sprinkle each chop with salt and pepper to taste. Spread a tablespoon of goat cheese on each of the four chops. Spoon about 1/2 of a cup stuffing on top of chop and then cover each chop with another chop. Sprinkle top of chop with salt and black pepper to taste. Wrap each stuffed chop with Prosciutto and bake covered in tin foil for 45 minutes.
  • Meanwhile.
  • In your buttery pan add the green onion bottoms finely chopped, and the rest of the minced garlic. Sauté for 2 minutes and then add the white wine. Simmer for 2 more minutes and then add the 1/2 teaspoon creole seasoning and the heavy cream. Reduce on med heat until sauce coats the back of a spoon. Add the other half of cooked shrimp and the other half of the lump crab meat. Add more creole seasoning and fresh black pepper to taste (optional).
  • Once the pork chops are out of the oven, let them rest for about 10 minutes before serving.
  • Pour the seafood cream sauce over each individual stuffed pork chop when plating.
  • It's great over basmati rice with some steamed green beans or asparagus. Don't forget the fresh baked french bread.
  • I always have left over stuffing. I just put it in a baking dish and cover it with Romano cheese. It can store it in the fridge to bake and serve another day or bake it off then and there. Bake at 350°F just until it browns on top.

1/4 cup plus 1 tablespoon extra-virgin olive oil
3 Turkish or 1 1/2 California bay leaves
1 medium onion, finely chopped (1 cup)
1 medium carrot, finely chopped (1/2 cup)
1 celery rib, finely chopped (1/2 cup)
2 oz Spanish chorizo (cured spiced pork sausage), casing removed and sausage finely chopped (1/3 cup)
1/2 cup drained canned diced tomatoes (from a 14 1/2-oz can)
2 tablespoons tomato paste
3 whole cloves
3/4 teaspoon dried hot red-pepper flakes
1/4 teaspoon black pepper
2/3 cup dry white wine
1 cup reduced-sodium chicken broth (8 fl oz)
24 small hard-shelled clams such as littlenecks (less than 2 inches in diameter), shucked, reserving 2/3 cup juices
Vegetable oil for oiling grill
4 (1-inch-thick) bone-in rib pork chops
2 teaspoons kosher salt
1/3 cup finely chopped fresh flat-leaf parsley

Steps:

  • Put oven rack in middle position and preheat oven to 400°F.
  • Cut 1/4 inch off tops of garlic heads and put heads, cut sides up, on a sheet of foil. Drizzle with 1 tablespoon olive oil and wrap tightly in foil, then roast in oven until garlic is soft when pierced with tip of a knife, about 45 minutes.
  • While garlic roasts, heat remaining 1/4 cup olive oil in a 3- to 4-quart heavy pot over moderately high heat until hot but not smoking. Add bay leaves and cook, stirring, until leaves begin to brown, about 10 seconds. Reduce heat to moderate, then add onion, carrot, celery, and chorizo and cook, stirring occasionally, 2 minutes. Add tomatoes, tomato paste, cloves, red-pepper flakes, and black pepper and cook, stirring occasionally, until vegetables are softened, 6 to 8 minutes. Add wine and bring to a boil, then add broth and reserved clam juice. Simmer, uncovered, until reduced to about 2 cups, about 15 minutes.
  • While tomato sauce simmers, squeeze pulp from garlic cloves and force through a medium-mesh sieve into a bowl using a rubber spatula, discarding solids. Whisk purée into tomato sauce. Discard bay leaves and cloves, then keep sauce warm while grilling chops.
  • Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above grill rack for 3 to 4 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes, then reduce heat to moderate.
  • Pat pork chops dry and sprinkle on both sides with salt. Grill pork chops on lightly oiled grill rack, covered only if using a gas grill, turning over once, until thermometer inserted 2 inches into center of a chop (do not touch bone) registers 145°F, 12 to 14 minutes total. Transfer chops to a plate and keep warm, loosely covered with foil.
  • Add clams to sauce and cook just until clams plump and edges begin to curl, 30 to 45 seconds. Stir parsley into sauce along with any meat juices accumulated on plate.
  • Serve chops topped with clams and sauce.

6 medium cloves garlic, peeled
2 teaspoons sea salt
2 teaspoons crushed red pepper
1 tablespoon Spanish paprika
1 cup Portuguese or good olive oil
1 1/2 pounds boned pork loin, trimmed and cut into 1/2-inch cubes
1 cup small diced onions
2 cups dry white wine
100 cockles or small littleneck clams in the shell, scrubbed and purged
Sea salt, to taste
1 loaf crusty bread
1/4 cup finely chopped fresh parsley leaves

Steps:

  • In a small food processor, combine garlic, salt, pepper flakes and paprika. Process until smooth. Add 1/2 cup of the oil and process until smooth. In a glass mixing bowl, toss the meat with the pureed mixture. Cover with plastic wrap and place in the refrigerator, to marinate at least 8 hours, overnight if possible. In a cataplana (or a large saute pan with a lid), over medium heat, add the remaining 1/2 cup of oil. When the oil is hot, add the onions. Season with salt. Saute for 2 minutes. Add the pork and saute for 4 minutes. Add the wine and bring to a simmer. Add the clams, and season with salt. Cover and cook for 15 to 20 minutes, shaking the pan occasionally. Remove from the heat and leave covered for 5 minutes. Remove any shells that do not open. Stir in the parsley. Serve in individual serving bowls with crusty bread.

1 1/2 pound pork loin
2 tablespoons chili sauce
4 tablespoons lard
2 pounds clams

Steps:

  • Mix the garlic and salt and crush into a paste. Brush the meat with the paste, then chili sauce, cover and refrigerate for 24 hours.
  • Cut the meat into 1 to 2-inch cubes.
  • Wash the clams thoroughly in several changes of water. Fry the meat in the lard for 10 minutes, or until brown. Add the clams and cook over a high heat so they open quickly, discard any that do not open.
  • Serve at once.

1 ½ cups dry white wine
1 teaspoon paprika
2 ½ teaspoons salt
¼ teaspoon black pepper
2 cloves garlic, peeled and cut in half
1 bay leaf
2 pounds pork loin, cut into 1 inch cubes
3 teaspoons olive oil, divided
2 onions, peeled and thinly sliced
2 teaspoons finely chopped garlic
2 tomatoes - peeled, seeded and chopped
¼ teaspoon crushed red pepper flakes
24 small clams in shell, scrubbed
¼ cup chopped fresh parsley

Steps:

  • In large bowl, combine wine, paprika, salt and pepper, blend well. Add garlic cloves, bay leaf, and cubed meat, turn meat in marinade to coat pieces. Marinate for 6 hours, turning occasionally.
  • Drain pork; reserve marinade. Pat cubes completely dry. Discard garlic and bay leaf. Melt 1 teaspoon of oil in large skillet. Add pork cubes, stirring frequently so that the meat colors quickly and evenly. Transfer with slotted spoon to a bowl.
  • Pour reserved marinade into skillet and bring to a boil over high heat, scraping off any brown particles clinging to the inside of pan. Boil briskly uncovered until marinade is reduced to 1 cup. Pour over pork and set aside.
  • In 6 to 8 quart pan, heat remaining 2 teaspoons oil; add onion and cook for 5 minutes, stirring frequently until onion is soft but not brown. Add garlic, tomatoes and crushed red pepper. Simmer, stirring constantly for 5 minutes.
  • Spread the clams, hinged side down, over the tomato sauce; cover the pan tightly and cook over medium to high heat for ten minutes or until clams open. Stir in reserved pork and juices. Simmer for 5 minutes to heat thoroughly. Sprinkle with parsley.
