CHIPOTLE PORK CHOPS

2 chipotle chiles in adobo sauce, seeds removed, plus 2 tablespoons sauce from the can
4 cloves garlic
4 bay leaves
1 teaspoon ground cumin
3/4 teaspoon dried thyme
1/4 teaspoon ground cinnamon
Kosher salt
1 large onion, halved and sliced
1 cup canned fire-roasted diced tomatoes
1 cup chopped fresh cilantro
1/3 cup extra-virgin olive oil, plus more for brushing
6 bone-in pork blade chops (1/2 to 3/4 inch thick; about 3 1/2 pounds total)

Steps:

  • Combine the chiles and adobo sauce, garlic, bay leaves, cumin, thyme, cinnamon and 5 teaspoons salt in a food processor and pulse to make a paste. Transfer to a shallow dish and add the onion, tomatoes, cilantro and 1/3 cup olive oil; mix well. Add the pork chops, turning to coat; cover and refrigerate 4 hours or overnight.
  • Preheat a grill to medium. Meanwhile, remove the pork chops from the marinade, scraping off the excess, and transfer to a plate. Transfer the marinade to a skillet; add 1/4 cup water and cook over medium-high heat, stirring occasionally, until the liquid simmers and the onions start sizzling, about 10 minutes. Remove from the heat and set aside for basting. (You can also do this in a cast-iron skillet on the grill.)
  • Brush the chops with olive oil and transfer to the grill. Cook until marked, 7 to 8 minutes, rotating the pork 45 degrees halfway through to create a crosshatch pattern and brushing with the liquid from the marinade. Flip and repeat, brushing with more marinade, including some pieces of onion and tomato. Remove from the grill and let rest 5 minutes.

DOUBLE ELK CHOP WITH LUXARDO CHERRY DEMI-GLACE



Double Elk Chop with Luxardo Cherry Demi-Glace image

2 quarts veal or beef stock
1 quart red wine
Half a 400-gram jar Luxardo cherries
4 russet potatoes
75/25 blended canola and olive oil, for cooking
Kosher salt and freshly ground pepper
1 bunch fresh chervil
1 bunch fresh chives
1 bunch fresh parsley
1 bunch fresh tarragon
Zest and juice of 2 lemons
4 double-bone elk chops
4 ounces butter
1 pound summer squash or seasonal vegetables, sliced

Steps:

  • For the demi-glace: Combine veal or beef stock and red wine in a saucepan and reduce by half, 30 to 45 minutes. Turn off heat and add the Luxardo cherries. Let cool, then reserve in the refrigerator or freeze until ready to use.
  • For the chops: Preheat oven to 375 degrees F.
  • Rub potatoes with some oil, salt and pepper and bake until fork tender, 40 to 45 minutes. Set aside to cool, then cut them in half and scoop out the insides and reserve.
  • Combine chervil, chives, parsley and tarragon in a bowl. Chiffonade the herbs and set aside for seasoning potatoes and elk.
  • Add 1/4 cup oil to a large saute pan on high heat. Once the oil starts to smoke, add the potatoes. Sprinkle with salt and pepper and reduce heat to low. Cook, stirring occasionally, until golden brown. Add half of the zest and juice and add a pinch of the herb mixture. Stir until evenly coated, then turn off the heat and reserve in a warm place.
  • Heat 1 tablespoon oil in an ovenproof saute pan on high heat. Sprinkle the elk chops evenly with salt and pepper. Once the oil starts smoking, add the elk chops to the pan and transfer to the oven. Cook about 10 minutes, then flip the elk chops to sear the other side. Return to the oven and cook about 10 minutes more. Transfer pan to a burner on high heat. Add butter to the pan, then baste the elk with it. Add the remaining zest and juice and a healthy pinch of herbs. Baste for about 1 minute, then remove the elk from the pan and let rest.
  • Meanwhile, heat 2 tablespoons oil in a large saute pan on high heat until it begins to smoke. Add sliced squash or vegetables and cook until tender. Season with salt, pepper and herb mixture.
  • Place the potatoes on the bottoms of 4 plates, followed by the vegetables. Rest an elk chop up against the potatoes and vegetables. Drizzle the demi-glace around the plate and garnish the elk with a few of the cherries.

CHERRY GLAZED PORK CHOPS WITH SMASHED POTATOES

1 pound baby yellow potatoes
7 tablespoons olive oil
2 teaspoons fresh thyme leaves, chopped
Kosher salt and freshly ground black pepper
4 boneless pork chops (about 6 ounces each)
1 shallot, chopped
2 tablespoons sweetened dried cherries
1/4 cup plus 2 tablespoons balsamic vinegar
1/4 cup cherry jam
5 ounces mixed baby salad greens (about 4 cups)

Steps:

  • Position an oven rack 5 to 6 inches below the heat source and preheat the broiler to high.
  • Pierce the potatoes all over with a fork. Put the potatoes on a microwave-safe plate with 2 tablespoons water and cover tightly with plastic wrap. Microwave until tender, about 10 minutes. Let cool 5 minutes.
  • Carefully uncover, drain the potatoes and transfer them to a baking sheet. Top with 2 tablespoons olive oil and half the chopped thyme. Sprinkle with salt and pepper and toss to coat. Smash each potato by pressing down with a metal spatula until it flattens. Set aside.
  • Heat 2 tablespoons olive oil in a large ovenproof nonstick skillet over medium-high heat. Pat the pork chops dry with paper towels and sprinkle both sides with salt and pepper. Sear until golden brown on one side, about 2 minutes, then flip and cook until golden brown on the second side, about 2 minutes more (the pork chops will not be cooked through at this point). Transfer to a plate.
  • Reduce the heat to medium. Add the shallot, dried cherries and the remaining thyme and cook until softened, about 3 minutes. Add 1/4 cup balsamic vinegar and 1/4 cup water and simmer until slightly thickened, about 3 minutes. Stir in the cherry jam and season to taste with salt and pepper. Remove from the heat.
  • Transfer 2 tablespoons of the glaze and the remaining 2 tablespoons balsamic vinegar to a large bowl and whisk to combine. Slowly whisk in the remaining 3 tablespoons olive oil to make a vinaigrette. Set aside.
  • Broil the potatoes until warm and golden, about 5 minutes. Set aside.
  • Stir 2 tablespoons water into the remaining glaze in the skillet and bring to a simmer over high heat. Add the pork chops and any juices that have accumulated on the plate and turn over several times to coat with glaze. Return the pan to the oven and broil until the glaze is bubbly and thick and the pork chops are cooked through, about 2 minutes. (The pork chops should reach an internal temperature of 145 degrees F when measured with an instant-read thermometer.)
  • Meanwhile, add the salad greens to the bowl with the dressing and toss to coat. Transfer the pork chops to a serving dish and pour the remaining glaze on top. Serve with the smashed potatoes and salad.

1 teaspoon olive oil
1 cup fresh or frozen pitted dark sweet cherries, halved
1/3 cup ruby port wine
1 teaspoon balsamic vinegar
1/8 teaspoon salt
PORK CHOPS:
1 teaspoon coriander seeds, crushed
3/4 teaspoon ground mustard
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a small saucepan, saute shallot in oil until tender. Stir in the cherries, wine, vinegar and salt. 8 bone-in pork loin chops (7 ounces each)
1 small onion, finely chopped
1/3 cup chopped chipotle peppers in adobo sauce
1/4 cup packed brown sugar
2 tablespoons red wine vinegar

1 can (15 ounces) tomato sauce

4 thick loin pork chops, bone in
1 teaspoon dried Italian seasoning
1 tablespoon olive oil
1 (14-ounce) can reduced sodium chicken broth (see NOTE)
1 canned chipotle pepper, finely chopped, or 1 teaspoon chipotle hot sauce
3 tablespoons whole-fruit cherry preserves

Steps:

  • Season the pork chops with the seasoning on both sides. Heat the oil in a large skillet over medium-high heat. Brown the pork chops on both sides and remove to a plate. Pour off the excess oil from the pan.Add the broth to the pan and boil until it is reduced to about half of its volume. Reduce the heat so the broth simmers return the pork chops to the pan and simmer, turning once or twice, until they feel resilient to the touch, about 3 minutes. Transfer the chops to a platter.Add the chipotle pepper and cherry preserves to the pan increase the heat to medium-high and boil until the pan liquid thickens slightly. Pour over the pork and serve.NOTE: Because the broth is going to be reduced to make a sauce, it is important to use a reduced-sodium broth for this recipe. 1/2 cup fresh or frozen pitted tart cherries, thawed
2 tablespoons chopped sweet onion
1 tablespoon honey

1 teaspoon cold water

Steps:

  • In a 1-1/2-qt. slow cooker, combine the first 5 ingredients; top with pork chops. Cover and cook on low until meat is tender, 3-4 hours., Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into the pan.
