PORK CHOPS AND SCALLOPED POTATOES
This is the greatest recipe I was ever given. It is a family favorite for us. Simple yet delicious pork chops and scalloped potatoes baked with chicken broth and a hint of paprika.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In sauce pan melt 1 tablespoon butter over medium heat. Add salt, pepper and flour. Pour in the chicken broth, cook and stir until mixture boils. Remove from heat and set aside.
- In skillet brown pork chops in 1 tablespoon butter. Grease a cooking dish with the remaining tablespoon butter and layer potatoes. Pour mixture over potatoes and place browned chops on top. Sprinkle paprika on top.
- Cover and bake for 1 hour. Uncover and bake for an additional 30 minutes.

- Sprinkle pork chops with Italian seasoning and pepper. Arrange in the center of a 13-in. x 9-in. baking dish that has been coated with cooking spray. Combine the potatoes, onion and flour; place around chops. Dot with margarine; sprinkle with green pepper., Cover and bake at 325° for 55 minutes. - Peel squash. Cut squash in half; remove seeds. Cut squash into 1/2-inch slices. Cut apples into quarters; remove cores. Cut apple pieces in half crosswise. Remove excess fat from pork.
- In 3 1/2- to 6-quart slow cooker, layer squash and apples. In small bowl, mix sugar, flour, cinnamon and salt. Coat pork with sugar mixture. Place pork on apples. Sprinkle with any remaining sugar mixture.
- Cover; cook on Low heat setting 8 to 9 hours.

- Preheat oven to 400 degrees F (200 degrees C).
- Heat oil in a large skillet over medium high-heat. Place the pork chops in the oil, and sear.
- In a medium bowl, combine the soup and the milk. Arrange the potatoes and onions in a 9x13 inch baking dish. Place the browned chops over the potatoes and onions, then pour the soup mixture over all.
- Bake 30 minutes in the preheated oven. Top with the cheese, and bake for 30 more minutes.

- In a skillet, brown the pork chops in oil. Place chops in an ungreased shallow baking pan. Toss bread cubes, butter, broth, celery, onion and poultry seasoning. PORK CHOPS AND POTATO STUFFING
This was a recipe my Mother-in-law prepared for her family when my husband was young, in place of Turkey for Thanksgiving, as turkey was more expensive than pork at the time. It is one of my husband's favorite meals. With corn and applesauce as sides, it was very filling.

Steps:
- 1. Pare and cut up potatoes. Place in pan with water to cover. Boil until soft enough to mash. When done, mash, add butter, chopped onions and poultry seasoning.
- 2. While the potatoes are cooking,brown the pork chops in a skillet until partially cooked. Place porkchops in bottom of a casserole. Top with mashed potatoes.
- 3. Place in 350* oven and bake about 1 hour, or until pale brown on top.

Steps:
- Brown chops.
- Remove and add water to the frying pan.
- Place chops in a single layer in a baking dish.
- In a bowl,mix the vegetable packet from from the Stove Top mix with 1 cup very hot water and 1/2 stick melted butter.
- Then add contents of crumb packet.
- Mix well.
- For as many chops,make a ball of stuffing and place on top of each chop.
- Put soup into skillet containing the drippings,mix and pour over the chops and stuffing.
- Bake uncovered, 1 to 1 1/2 hours at 350 degrees.
