This pork chop skillet dinner is a weeknight meal victory. Ready to serve in under an hour, it couldn't be easier to make! Pork chops, onions, carrots and potatoes come together in a skillet with just a dash of salt and pepper for the perfect pork chop dinner.

4 pork loin or rib chops, 1 inch thick (1 1/2 lb)
1/4 cup Progresso™ beef flavored broth or chicken broth (from 32-oz carton)
4 medium potatoes, cut into fourths
4 small carrots, cut into 1-inch pieces
4 medium onions, cut into fourths
3/4 teaspoon salt
1/4 teaspoon pepper
Chopped fresh parsley, if desired

Steps:

  • Remove fat from pork. Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook pork in skillet about 5 minutes, turning once, until brown.
  • Add broth, potatoes, carrots and onions to skillet. Sprinkle with salt and pepper. Heat to boiling; reduce heat. Cover and simmer about 30 minutes or until vegetables are tender and pork is slightly pink when cut near bone. Sprinkle with parsley.

2 slices OSCAR MAYER Center Cut Bacon, cut into 1-inch pieces
2 Tbsp. flour
1/2 tsp. black pepper
4 boneless pork chops (1 lb.), 1/2 inch thick
1 small onion, sliced
1/2 cup fat-free reduced-sodium chicken broth
1/3 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
3 cups green beans, cooked
3 cups hot cooked brown rice

Steps:

  • Cook and stir bacon in large nonstick skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon, reserving drippings in skillet; drain bacon on paper towels.
  • Mix flour and pepper in shallow dish. Add chops; turn to coat both sides of each chop. Reserve remaining flour mixture. Add chops to reserved drippings; cook 4 to 5 min. on each side or until done (145°F). Remove from skillet, reserving drippings in skillet; cover chops to keep warm.
  • Add onions and reserved flour mixture to skillet; cook and stir 1 min. Stir in broth; cook 5 min. or until thickened, stirring constantly. Remove from heat; stir in sour cream.
  • Spoon sauce over chops. Serve with green beans and rice.

Making this tonight with some left over pork tenderloins (dinner for two. I used items on hand - red potatoes, half an onion, 2 small pieces of tenderloin which I cut into 1" slices and used bacon grease. Been using this recipe for 20+ years. Recipe is from my step daughter, Debbie L

4 pork chops
2 Tbsp flour
1/2 to 3/4 c parmesan cheese
1/4 tsp black pepper
1/2 tsp salt
4 medium potatoes (sliced)
2 medium onions (sliced)
3 beef bullion cubes
3/4 c hot water

Steps:

  • 1. Trim excess fat from chops. Heat in skillet until you have 2 TBLS. Drippings.
  • 2. Roll chops in flour. Brown in fat.
  • 3. Combine cheese, salt & pepper
  • 4. Sprinkle with 2 TBLS mixture over meat.
  • 5. Add onions, sprinkle with cheese mixture, add taters, sprinkle, then onions, sprinkle, top with taters
  • 6. Dissolve bullion cubes in water. Pour over all Then add last of mixture
  • 7. Cover and simmer about 45 minutes or until meat and vegetables are done.
