6 ounces thickly sliced bacon, cut into 1-inch strips
1/2 medium sweet onion, finely chopped
2 garlic cloves, finely chopped
2 tablespoons tomato paste
1 tablespoon pure maple syrup
2 (15-ounce) cans pink beans with their liquid
3 cups chicken stock or low-sodium broth
Salt
Cayenne pepper
1 jumbo corn muffin (about 5 ounces), cut into 3/4-inch cubes
Chopped scallions, for garnish

Steps:

  • Preheat the oven to 400°. In a medium saucepan, cook the bacon strips over moderately high heat, stirring occasionally, until they are browned and crisp, about 7 minutes. Transfer the crispy bacon to a plate and pour off all but 2 tablespoons of the fat from the saucepan. Add the onion and garlic to the fat in the saucepan and cook, stirring, until they are softened, about 5 minutes. Add the tomato paste and maple syrup and cook over moderate heat, stirring, until thick, about 3 minutes. Add the pink beans and their liquid and cook until slightly thickened, 2 to 3 minutes. Add the chicken stock and bacon strips, season lightly with salt and cayenne pepper and simmer the soup over moderate heat until thickened slightly, about 15 minutes. Meanwhile, spread the corn muffin cubes on a small baking sheet and bake for 7 to 8 minutes, until they are golden and crisp. Let the corn muffin croutons cool slightly. Ladle the soup into deep bowls, garnish with the corn muffin croutons and chopped scallions and serve.

3/4 lb boneless pork loin chops, cut into 2x1/4-inch strips
1 can (15 oz) red beans, rinsed
1/2 cup barbecue sauce
1 cup frozen whole kernel corn (from 1-lb bag), thawed
4 thin slices onion

Steps:

  • Heat gas or charcoal grill. Cut 4 (15x12-inch) sheets of foil. In medium bowl, mix pork, beans and barbecue sauce. Divide pork mixture evenly onto center of each sheet of foil. Sprinkle corn evenly over top. Place onion slice on top of each.
  • To form bundles, bring short sides of foil together; make several 1-inch folds. Fold open edges of foil to seal.
  • When grill is heated, place bundles on gas grill over medium heat or on charcoal grill over medium coals; cover grill. Cook 18 to 20 minutes or until pork is no longer pink in center. Carefully open bundles to allow steam to escape.

Southwestern Pork Soup (For Crock Pot) image

This is a great soup, so flavorful and so easy. Even though the avocado, lime juice and cilantro are "garnishes," the flavor of the lime and the cilantro especially is very key to the balance of flavors. This is good enough for company, really yummy. I think you probably could get away with using chicken meat in this too, although I tried this using the pork. Another find from the Robin Miller show, with my adjustments.

1 -1 1/2 lb pork tenderloin, cut into 1-inch pieces
1 cup onion, chopped
1 green bell pepper (I used an orange one)
1 jalapeno pepper, seeded and minced
2 -4 teaspoons garlic, minced
1 teaspoon dried ancho chile powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
5 cups reduced-sodium chicken broth
1 (14 ounce) can diced tomatoes
1 (14 ounce) can pinto beans, rinsed and drained
1 avocado, diced, for garnish
1 cup fresh cilantro, chopped, garnish
1 lime, juice of, to 2 garnish
cheddar cheese, shredded, garnish (optional)
tortilla chips, garnish (optional)

Steps:

  • In the bottom of a slow cooker, combine pork, onion, bell pepper, jalapeño, garlic, chili powder, cumin, 1/2 teaspoon salt, and 1/4 teaspoon ground black pepper (measuring both the salt and pepper with real measuring spoons, leveled).
  • Stir to combine.
  • Add broth, tomatoes, and beans, cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
  • When ready to serve, test for seasonings, then ladle soup into bowls and top with avocado, some cilantro, and a squirt or two of lime juice over each serving.
  • Serve with some chips and a sprinkling of cheese too if desired.

This is a recipe I've been searching for for a long time. On my trips to Southern California, I would always stop in a restaurant named Keefer's Inn in King City, California. Unfortunately, the restaurant changed hands and this soup served there wasn't the same.In the old restaurant, in their gift shop, burlap bags of pink beans were sold along with a recipe card for this soup. I never bought one because I thought the restaurant would be there forever! I wrote in to a local newspaper food column asking if anyone still had the recipe and lucked out! Pink beans are smallish, sweet, meaty beans sometimes are known as chili beans; however, any pea or bean will work. I just love the pink beans for this savory soup. * cooking time does not include overnight soaking ** a ham bone can certainly be used instead of a ham hock

1 lb pink beans
3 -5 slices bacon
3/4 cup diced celery
3/4 cup diced carrot
3/4 cup diced onion
1 garlic clove, minced
10 -12 ounces ham hocks
1/2 cup tomato sauce
2 quarts water
salt and pepper

Steps:

  • Rinse the beans, checking for stones and debris.
  • Soak beans overnight.
  • Saute bacon until crisp, drain.
  • Add carrots, celery, onions and garlic to bacon grease.
  • Saute 5-10minutes.
  • Drain beans.
  • Put in bean soup pot along with carrots, celery, onions and garlic.
  • Add the cooked bacon.
  • Add the ham hock, tomato sauce and water.
  • Bring to a boil, turn the heat down and simmer for 2 1/2 hours until beans are soft.
  • Remove the ham hock and pull the meat from the bone.
  • Chop and return meat to the soup.
  • Remove 1/4th to 1/3rd of the beans, mash or puree.
  • Return to pot and simmer another 20-30 minutes, stirring occasionally.
  • Skim off unwanted grease.
  • Season with salt and pepper.
  • Serve.

1 carton (32 ounces) reduced-sodium chicken broth

1 bottle (12 ounces) extra pale ale

Steps:

  • Place beans in a large bowl; add cool water to cover. Soak 5 hours or overnight. Drain beans, discarding water; rinse with cool water., In a 6-qt. slow cooker, layer beans, onions, carrots, celery and pork. Add seasonings, broth and ale.
