Pork Chops Smothered with Peppers and Onions image

4 bone-in pork chops, 1 1/2-inches thick, at room temperature
Kosher salt and freshly ground black pepper
3 tablespoons EVOO
4 cloves garlic
1 large onion
1 to 2 cubanelle peppers
1 red bell pepper, seeded
1 red chile pepper
1 teaspoon fennel seeds
2 tablespoons tomato paste
1/2 cup dry white or red wine
1 1/2 cups chicken stock

Steps:

  • Preheat the oven to 400 degrees F. Sprinkle the chops with liberal amounts of salt and black pepper.
  • Heat 2 tablespoons of the EVOO in a large skillet over medium-high to high heat. When the oil begins to smoke, add the chops and brown on both sides, 3 to 4 minutes per side.
  • While the chops cook, slice the garlic, onion and peppers.
  • Remove the chops from the skillet and add the remaining tablespoon oil. Then add the fennel seeds, garlic, onions and peppers and toss to soften, 5 minutes. Next, add the tomato paste and stir 1 minute. Deglaze the pan with the wine, add the stock and stir. Nest the pork into the pan and move the peppers and onions on top of the meat. Place in the oven and roast to an internal temperature of 165 degrees F, about 10 minutes.

This one-pan dish has flavors reminiscent of the Italian-American classic sausage-and-peppers, but is much lighter. We've swapped the typical sausage for lean and juicy pork tenderloin and added pickled pepperoncini for zip.

1 large pork tenderloin (about 11/2 pounds), trimmed
Kosher salt
3 tablespoons extra-virgin olive oil
1 small onion, thickly sliced
2 red and/or yellow bell peppers, sliced into wide strips
6 cloves garlic, smashed
16 fresh sage leaves
2 tablespoons tomato paste
1/4 cup sliced pickled pepperoncini, plus 2 teaspoons liquid from the jar
1/3 cup dry white wine
2/3 cup low-sodium chicken broth
1/4 cup grated Parmesan

Steps:

  • Preheat the broiler. Slice the pork on an angle into 1-inch-thick pieces; season with salt. Heat a large ovenproof skillet over medium-high heat; add 1 tablespoon olive oil. Add the onion and bell peppers; season with 1/2 teaspoon salt and cook until the vegetables are crisp-tender and slightly browned, 4 to 6 minutes. Transfer to a plate.
  • Add the remaining 2 tablespoons oil to the skillet. Add the pork and sear over high heat until browned, 2 to 4 minutes per side. Transfer the pork to the plate with the onion and peppers.
  • Reduce the heat to medium and add the garlic, sage and tomato paste to the skillet. Cook, stirring, until the tomato paste turns brick-red, about 1 minute. Add the pepperoncini slices and their liquid, then pour in the wine and bring to a boil, scraping up any browned bits with a wooden spoon or spatula. Add the broth and return to a simmer. Arrange the pork in a single layer in the skillet; add the onion and peppers and sprinkle with cheese. Transfer to the oven and broil until the pork is cooked through, 4 to 7 minutes.

2 tablespoons extra-virgin olive oil
1 yellow bell pepper, seeded and sliced
1 orange bell pepper, seeded and sliced
4 red hot Italian cherry peppers, sliced
1/2 cup white wine or chicken stock
2 tablespoons chopped flat-leaf parsley, a handful

Steps:

  • Heat a large skillet over medium high heat. Season chops with salt and pepper. Add 1 tablespoon extra-virgin olive oil to pan -- 1 turn of the pan. Add chops and cook 5 minutes on each side. Transfer to a platter and cover with foil. Return pan to heat and add more extra-virgin olive oil and bell peppers. Saute, stirring frequently, 5 minutes. Add hot cherry peppers and a splash of their brine to the pan, cook a minute. Add wine or stock and scrape up pan drippings. Arrange peppers over chops and serve.

2 yellow bell peppers
2 tablespoons canola oil
1/4 cup balsamic vinegar
4 cloves roasted garlic, smashed to a paste
1 tablespoon clover honey
1/2 cup chopped fresh parsley
Kosher salt and freshly ground black pepper
1/2 cup seeded and chopped hot cherry peppers
2 cups good quality balsamic vinegar (not expensive, just good quality)
2 teaspoons honey
1/2 cup balsamic vinegar
1/4 cup clover honey
1/4 cup canola oil, plus more for cooking
2 tablespoons chopped flat leaf parsley
1 tablespoon finely chopped fresh thyme
4 bone-in center cut pork chops, about 1-inch thick (approximately 12 ounces each)
Kosher salt and freshly ground black pepper
Parsley leaves, for garnish

Steps:

  • For the hot and sweet pepper relish: Preheat oven to 425 degrees F. Toss peppers with canola oil and season with salt and pepper. Roast in oven, turning once, until charred on both sides, about 25 minutes total. Remove to a bowl, cover top with plastic and let steam for 10 minutes. Remove the skin and seeds and thinly slice.
  • Whisk together the balsamic, garlic, honey and parsley in a large bowl, season with salt and pepper. Add the red and yellow peppers and cherry peppers and toss to coat. Let sit at room temperature for at least 30 minutes before serving to allow the flavors to meld.
  • Relish can be made up to 8 hours in advance and stored, covered in refrigerator. Bring to room temperature before serving.
  • For the balsamic reduction: Put the vinegar in a nonreactive (such as stainless steel) pan, bring to a boil and cook until reduced to 1/2 cup. Then stir in the honey, transfer to a bowl and let cool to room temperature; it will thicken as it cools.
  • For the pork chops: Whisk together the vinegar, honey, 1/4 cup oil, parsley and thyme and let sit at room temperature for 30 minutes.
  • Remove the pork from the refrigerator 30 minutes before grilling to take the chill off.
  • Heat your grill to high or a cast iron grill pan over high heat. Brush the pork chops on both sides with canola oil and season with salt and pepper. Grill on one side until golden brown, about 4 minutes. Turn over and grill until the other side until golden brown. Brush with some of the glaze, turn, brush with more glaze and turn again until a crust forms and pork is cooked through, (it should register 145 degrees F on instant read thermometer), about 10 to 12 minutes total.
  • To serve: Transfer the chops to a plate, top with some of the relish and drizzle with balsamic reduction. Garnish with parsley leaves.

Steps:

  • Mix together the paprika, brown sugar, chili powder, cumin, chipotle chile powder, garlic powder and 1 teaspoon salt in a small bowl. Toss the pork chops in a container with the oil and lime juice, then rub with the spice mixture. Refrigerate, covered, for at least 30 minutes up to 2 hours before cooking.
  • Heat a cast-iron skillet over medium-high heat until hot. Toss the peppers and onions in a bowl with the oil, lime juice and 1 teaspoon salt. Add the pepper-onion mixture to the hot skillet and cook, stirring occasionally, until the vegetables are tender and the edges are charred, 8 to 10 minutes. Set aside.
  • Prepare an outdoor grill for medium-high heat.
  • Lightly brush the grill grates with oil and grill the pork chops until marked and cooked through, 4 to 5 minutes per side. Transfer to a cutting board, let rest for 10 minutes and then thinly slice.
  • Serve with the warm tortillas peppers and onions, guacamole, sliced pickled jalapenos, lime wedges, shredded pepper jack cheese, salsa, chopped scallions, sour cream.

2 tablespoons olive oil
4 hot cherry peppers (or can use recipe #475540) or 4 sweet red cherry peppers, pickled and sliced (or can use Pickled Cherry Peppers - Canning)
1/2 cup pickling brine from cherry pepper
1 garlic clove, minced
salt and pepper

Steps:

  • Remove stems and seeds from cherry peppers. Slice the peppers into 1/4" strips. Lightly salt and pepper the pork chops on both sides.
  • Place a heavy bottom skillet over medium high heat and add the olive oil. When the oil is very hot and shimmering, add the pork chops. Sprinkle 1/2 of the minced garlic on the chops and cook for about 2 minutes.
  • Add the sliced cherry peppers and cook for another minute or two. When chops are golden brown on the bottom turn them over. Add the rest of the minced garlic and continue cooking for another minute, then add the brine. Turn heat up to high and finish the chops to your taste, just don't overcook.
  • Remove the chops to a warm plate and reduce the pan sauce by half. Spoon the cooked peppers over the chops and pour the pan sauce over all.

  • Preheat oven to 350 degrees. Place chilies and 2 garlic cloves in small baking dish. Spoon 1 tablespoon olive oil over, turn to coat. PICKLE SCHNITZEL-PICKLE-BRINED PORK CHOPS WITH SWEET AND SPICY PEPPERS



Pickle Schnitzel-Pickle-Brined Pork Chops with Sweet and Spicy Peppers image

1 cup dill pickle juice (preferably leftover from a jar of pickles)
1 cup whole sweet piquante peppers from a deli olive bar, such as Peppadews, plus 1/4 cup of the pepper juice
Four 1-inch-thick bone-in pork chops
2 orange bell peppers, sliced 1/2 inch thick
1 medium yellow onion, sliced
1/4 cup olive oil
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
2 large eggs, whisked
2 cups panko breadcrumbs
1/4 cup vegetable oil
8 lemon wedges, for serving

Steps:

  • Combine the pickle juice, pepper juice and pork chops in a large zipper-top bag. Brine at least overnight and at most 24 hours, flipping the bag halfway through.
  • Preheat the oven to 350 degrees F.
  • Toss the piquante peppers, bell peppers and onions with the olive oil in a bowl. Season liberally with salt and pepper. Transfer to a baking sheet and roast until slightly charred and soft, about 20 minutes. Lower the oven temperature to 200 degrees F and keep warm until ready to serve.
  • Take the chops out of the bag (discard the brine) and dry them off with paper towels. Place a chop between plastic wrap and pound with a meat mallet until 1/2 inch thick. Make sure you pound around the bone but keep the bone intact; this adds flavor and plating dramatics. Repeat with the remaining chops.
  • Set up an F. E. B. station with flour, egg and breadcrumbs in separate shallow containers; season the breadcrumbs with salt and pepper. Season each chop with salt and pepper, then dredge in the flour, coat with the egg and then coat in the breadcrumbs, ensuring the breadcrumbs adhere to all the nooks and crannies.
  • Heat a large skillet over medium heat, add the vegetable oil and heat until very hot. Working in 2 batches, fry the chops 2 at a time until golden on each side, 4 to 5 minutes a side. Keep the chops warm on a wire-racked baking sheet in the oven while you repeat with the remaining chops.
  • Plate each chop over a serving of the peppers and onions and serve with 2 lemon wedges to squeeze on top.

2 pounds boneless pork shoulder, cubed
4 cloves garlic, smashed
1 tablespoon fennel pollen
2 tablespoons kosher salt
2 teaspoons crushed red pepper flakes
1 tablespoon whole fennel seeds
1/2 cup grated Parmesan
Extra-virgin olive oil
Hog casings, from a 1-pound container, soaked in water
Kosher salt
1 large bunch broccoli rabe, woody ends trimmed
Extra-virgin olive oil
1/2 red onion, sliced
4 pickled hot cherry peppers, stemmed, seeded and chopped, plus 3 tablespoons pickling brine
4 seeded hoagie rolls, split leaving one side intact
8 to 10 slices provolone

Steps:

  • Preheat the oven to 400 degrees F. Chill a large metal bowl and all the grinder parts until very cold.
  • For the sausage: Assemble the grinder with the chilled parts using the large-holed grinding plate. Combine the pork, garlic, fennel pollen, salt, crushed red pepper flakes, fennel seeds and Parmesan in the chilled metal bowl. Pass the meat through the grinder back into the chilled metal bowl. Switch to the medium-size plate and pass the ground meat through again. Add 1/4 cup ice water and quickly knead the meat mixture together with your hands.
  • Fit the horn (stuffing attachment) onto the grinder. Grease the horn with oil and gently slide the hog casing onto the attachment, leaving about 2 inches at the end. Add meat to the hopper and turn the grinder on. Let the air run through the casing until the meat starts to come out. Once you see the meat, turn the machine off and knot the casing end. Turn the machine back on and keep feeding the meat mixture into the machine. Using your other hand, guide the casing off the horn as it fills. Continue until you run out of casing, leaving a short tail on the end.
  • Form the filled casing into links by gently pinching and then twisting it. The sausage links should be equal in size, 3 to 4 inches each. Tie each twist with twine and puncture the links all over with a teasing needle or sausage pricker. You should have 8 to 10 links total.
  • For the toppings and assembly: Bring a large pot of lightly salted water to a boil. Blanch the broccoli rabe until bright green, about 30 seconds then use a slotted spoon or spider to transfer to a bowl. Leave the water on the heat for the sausages. When cool enough to handle, Squeeze out the excess moisture in the broccoli rabe and roughly chop. Set aside.
  • Reduce the blanching water to low heat so it is hot, but not bubbling. Carefully drop the sausages into the hot water and poach for 10 to 12 minutes, flipping halfway through, or until they reach an internal temperature of 150 to 156 degrees F. Remove from the poaching liquid and place on a baking sheet.
  • Heat 2 tablespoons olive oil in a medium saute pan and add the onions with a pinch of salt. Sweat the onions until translucent, 5 to 7 minutes, then add the cherry peppers and broccoli rabe. Toss everything together and add a splash of the pickled pepper brine. Season to taste with salt. Remove to a bowl and wipe out the saute pan.
  • Heat 1 tablespoon of olive oil in the same pan over medium heat and brown sausages on both sides, 3 to 4 minutes per side. Lower the heat if they start to burst.
  • Open the hoagie rolls and use your fingers to scoop out some of the bread from the top part of the roll. Brush the cut sides of each roll with olive oil and place open faced on a baking sheet. Toast in the oven until warmed through until lightly golden, about 5 minutes.
  • Lay provolone slices on the toasted rolls and melt in the oven, 3 to 4 minutes. Cut the sausage links apart, remove the strings and slice on a bias. Lay the slices over the melted provolone and top with the broccoli rabe-pepper mix and more provolone. Transfer back to the oven to heat through and continue melting cheese, 3 to 5 minutes.

4 -6 pork chops
1/2 onion, sliced
1 green pepper, sliced
3 -5 potatoes, peeled and sliced
1 can tomato soup (undiluted)
1 teaspoon pepper
1/2 teaspoon salt

Steps:

  • Lay pork chops in a bottom of a baking dish.
  • Cover with onions, potatoes, and green peppers.
  • Season with salt and pepper.
  • Add tomato soup on top (you can add some water to thin it out a little bit if you like) Cover and bake at 350 degrees for at least one hour.

QUICK PORK STEW WITH PEPPERS AND TOMATOES

This is a pretty, quick and tasty stew. I like to serve it over egg noodles and topped with parmesan cheese. If I'm in the mood for spicy and smokey, I add one or two finely chopped chipotles with some of the adobo sauce when I add the tomatoes.

2 lbs boneless pork loin, cut into 1 inch pieces
2 teaspoons kosher salt
1 teaspoon pepper, freshly ground
2 tablespoons olive oil
1 medium onion, chopped
2 large bell peppers, red and yellow if you can find them, cut into one half inch squares
4 garlic cloves, chopped
1 (28 ounce) can whole tomatoes, hand squeezed and juices retained
2 tablespoons fresh basil, chopped
2 tablespoons fresh parsley, chopped

Steps:

  • Trim fat from pork and season with salt and pepper.
  • Heat olive oil in a heavy bottomed pot over medium high heat.
  • Add the pork and cook for about 3 minutes, turning until browned on all sides.
  • Reduce the heat to medium, add the onion and peppers and cook for about 5 minutes, or until onions have softened.
  • Add the garlic after the onions and peppers have cooked for 2 minutes.
  • Stir in the tomatoes and bring to a boil.
  • Reduce heat to low, cover and simmer for 30 minutes.
  • Taste it once simmering and adjust the salt and pepper to suite you taste.
  • Add the chopped basil and parsley, stir once and serve.
  • Note: If using dried basil and parsley, add to the pot when you add the tomatoes.
  • Enjoy!

4 pork chops (about 1 lb/500g, 3/4-inch or 2cm thick)
3 medium red potatoes, halved and thinly sliced
1 medium onion, sliced
1 teaspoon dried oregano leaves
1 (10 ounce) can chicken broth (or reduced-sodium)
1/2 cup diced roasted red pepper
1/8 teaspoon ground black pepper

Steps:

  • In large skillet, heat oil to med-high.
  • Add pork chops and cook until browned; set aside.
  • Combine potatoes, onion, and oregano in skillet.
  • Stir-fry 5 minutes, stirring often.
  • Add chops, chicken broth, red peppers, and black pepper.
  • Heat to boil; reduce to low.

4 boneless pork chops, 3/4 inch thick
2 teaspoons olive oil
1 large red pepper, cut into julienne strips
1 large yellow pepper, cut into julienne strips
1 onion, cut into julienne strips
1 can chicken broth
1/2 cup white wine
3 tablespoons balsamic vinegar
2 tablespoons cornstarch
water, to make paste (about 2-3 tablespoons)
2 tablespoons chopped parsley
salt and pepper (to taste)

Steps:

  • Trim any excess fat from the crops.
  • Heat olive oil in a large non-stick frying pan over medium heat.
  • Brown pork chops in oil, cook until barely done.
  • Remove pork chops from pan, add peppers and onions to pan and cook until crisp tender.
  • Return pork chops to pan, add chicken broth, wine and vinegar to pan and stir, reduce heat and cover.
  • Simmer over a low heat for 5 to 6 minutes until pork chops are tender.
  • In a small bowl combine cornstarch with enough water to make a thin paste.
  • Add a tablespoon or so of the liquid from the pan to the cornstarch paste and blend.
  • Add this mixture to the pan and stir until sauce thickened and smooth.
  • Add salt and pepper to taste.
  • Stir in parsley.
  • Serve with rice or noodles.

PORK LOIN BRAISED IN WINE AND RED PEPPERS

I have made this pork loin so many times it is absolutely the best! I prefer a bone-in loin but you can use either bone-in or without the bone! You can also do this with thick-cut pork chops too! If you want a thicker sauce you can thicken it up after cooking with some flour and cold water. Plan ahead the pork needs to marinate overnight. Serve this with crusty buns to soak up the sauce. Cooking time is only estimated depending on the size of the porl loin. If desired you can omit stuffing the roast with garlic cloves. If you are serving this to more than 6 people then prepare two pork loins. This complete dish can be prepared a day in advance, just place half of sauce in an oven proof dish, top with pork slices, the cover with remaining sauce, cover and refrigerate, the following day, cover dish and rewarm in a 325 degree oven until heated through, serve with more sauce. This is delicious!

2 -3 teaspoons seasoning salt
black pepper
1 tablespoon minced fresh garlic
10 large whole garlic cloves, sliced in half (can leave them whole)
1 pinch allspice
1 (2 lb) pork loin roast, rolled and tied (if you are using a bone-in roast then it will weigh more)
1/4 cup olive oil
2 medium onions, chopped
1 -2 tablespoon chopped fresh garlic
2 large red bell peppers, coarsley chopped (or sliced)
1 lb fresh small bottom mushroom
1 1/2 cups dry white wine
2 cups crushed tomato puree
2 cups beef broth
2 large bay leaves
1 1/2 tablespoons dried marjoram, crumbled
salt and pepper

Steps:

  • In a bowl, combine the seasoning salt, black pepper, minced garlic and pinch allspice.
  • Cut small slits in the loin about 3/4-inch deep and stuff with the halved garlic cloves.
  • Rub the loin with the seasonings on all sides.
  • Place in a glass dish, cover and refrigerate overnight.
  • Set oven to 350 degrees.
  • Remove from the fridge and let the loin rest on top of the counter to come down to almost room temperature before browning.
  • Heat olive oil in a Dutch oven over medium-high heat.
  • Add in the pork loin and brown on all sides (this should take about 10-15 minutes) remove to a plate.
  • Add in onions (adding in more oil if needed) saute for about 10 minutes.
  • Add in chopped garlic and red bell peppers; saute for about 5 minutes.
  • Add in wine, crushed tomatoes, beef broth, bay leaves, button mushrooms and marjoram; mix to combine with a wooden spoon.
  • Add in the browned pork loin (fat side-up) and all the drippings from the plate; bring to a boil.
  • Cover with an oven-proof tight fitting lid and place in oven to cook for about 45-60 minutes, or until the pork is tender (might take longer than 1 hour).
  • Transfer the loin to a serving plate and let rest for 15 minutes.
  • Season the sauce with salt and pepper to taste.
  • *NOTE* although this next step is only optional, I prefer to reduce the sauce slightly, but you do not have to do this, just serve the sauce as is without reducing.
  • Place the Dutch oven on top of the stove and boil the sauce (uncovered) to reduce slightly while the pork is resting (about 15 minutes).
  • Slice the pork and drizzle the sauce on top, pass the rest of the sauce at the table.
  • Delicious!

12 ounces tiny new potatoes
8 ounces pork tenderloin
2 teaspoons olive oil
8 ounces whole onion or 7 ounces ready-cut julienned onion (1 2/3 cups)
16 ounces whole green and red peppers or 14 ounces ready-cut julienned peppers (4 cups)
2 tablespoons balsamic vinegar
1/4 teaspoon salt

Steps:

  • Scrub potatoes, but do not peel. Cover with water, and boil in a covered pot, about 20 minutes.
  • Cut pork into 4 equal pieces. Heat one teaspoon of the oil in a nonstick pan, and brown the pork on all sides.
  • Cut whole onions and peppers into eighths. Slice in food processor. When pork is browned, set aside. Add remaining oil to pan, and cook onions and peppers over medium-high heat until they soften, about 5 minutes.
  • Stir in vinegar and pork, and cook another minute or two.
  • Drain potatoes and place in shallow serving dish; mash coarsely and season with salt; spoon in the pork and vegetables.

4 tablespoons Irvine Spices Calgary Steak Seasoning
Salt
Pepper
1/2 cup olive oil
10 to 15 long hot peppers, cut into strips
3 to 4 yellow bell peppers, cut into strips
1/2 bunch basil, leaves chopped fine
6 cloves garlic, left whole

Steps:

  • Heat your grill. Season pork chops with steak seasoning, salt and pepper. Heat olive oil in a saute pan and add hot peppers, yellow bell peppers, basil and garlic, cooking over medium heat until light golden brown. Grill pork chops to desired doneness and arrange on serving platter with peppers and garlic mixture.
