3/4 lb ground pork
1/4 cup flour
1 egg
2 tablespoons onions, minced
1/2 teaspoon salt
1/2 teaspoon coriander
1/2 teaspoon sage
1/2 teaspoon thyme
1/8 teaspoon black pepper
1/2 cup water
5 tablespoons margarine
1/2 cup onion, chopped
1 cup mushroom, sliced
2 tablespoons flour
1 1/2 cups water
2 teaspoons beef bouillon
1/8 teaspoon black pepper
1/2 cup sour cream
boiled potato, to serve

Steps:

  • In a small mixer bowl at low speed, beat pork, 1/4 cup flour, egg, minced onion, salt, coriander, sage, thyme, and 1/8 teaspoon pepper just until blended. Slowly add 1/2 cup water and beat until mixture is smooth and light.
  • In a large skillet over medium-low heat, heat 2 tablespoons of the margarine until foam subsides. Drop about 1/4 cup of the pork mixture at a time into skillet and shape into patties about 1/2 -inch thick. Sauté 7 minutes or until a rich medium-brown crust forms. Turn patties and cook 7 minutes longer or until no longer pink in the center. Drain on paper towels and keep warm.
  • In a medium saucepan over medium heat, sauté chopped onion in 1 tablespoon of the margarine 3 minutes. Add mushrooms and sauté 2 minutes longer. Remove to a small bowl; set aside.
  • In the same saucepan over medium heat, melt remaining 2 tablespoons margarine. Add 2 tablespoons flour. Cook and stir 1 minute or until lightly browned. Stir in 1 1/2 cups water, bouillon granules, and 1/8 teaspoon pepper. Stirring, bring to a boil and boil 3 minutes or until thickened. Remove from heat. Return onion and mushrooms. Stir in sour cream until blended. Cook over low heat just until heated through (do not boil).
  • Serve with potatoes. Pass gravy separately.

These are wonderful grilled, of course you may season the ground pork to suit your taste, but I find if you are grilling the pork burgers, that they are better mixed with just the bare basics such as salt and pepper, Worcestershire sauce and mustard (if using) as the middle filling has a lot of flavor. I just stated the basics LOL! The filling alone, can be prepared up to a day ahead, also the pork burgers can be stuffed a day ahead, covered an refrigerated until ready to grill. This recipe produces a lot of pork patties (around 12-14) I most always prepare/stuff the patties and freeze half for next time, unless that is, you are feeding a gang of hungry people! I have used half ground pork and half ground beef for this also.

1 1/2 cups thinly sliced fresh mushrooms
1/2 cup thinly sliced green onion
2 -3 minced fresh garlic cloves
1 -2 tablespoon butter or 1 -2 tablespoon margarine
3 lbs ground lean pork
1 tablespoon Worcestershire sauce (or to taste)
1 teaspoon seasoning salt
black pepper
2 tablespoons prepared mustard (optional and to taste)

Steps:

  • In a skillet, saute the mushrooms, onion and garlic until tender in butter (about 2-3 minutes); set aside to cool.
  • In a bowl, combine ground pork, mustard (if using) Worcestershire sauce, seasoning salt and pepper; mix well.
  • Shape into 24 even size patties about 4-5-inches in diameter (this is for the top and bottom patties).
  • Divide and spoon the mushroom mixture evenly onto center of 12 patties; place another pattie on top, and seal the edges of the meat tightly all around.
  • Place patties on grill about 6-inches over medium coals.
  • Grill about 20-22 minutes turning once until the patties are thoroughly cooked.
  • Serve on buns.

My DH cannot eat red meat for health reasons, so I have to get creative sometimes! I made this up last week. DH keeps telling me I need to post this recipe on here because he loved it, so here it is!

1 lb ground pork
5 mushrooms, sliced and sauteed
4 garlic cloves, pressed and sauteed
3 dashes Worcestershire sauce

Steps:

  • Sauté mushrooms and garlic.
  • Mix with ground pork.
  • Add 3 splashes of Worcestershire sauce.
  • Mix thoroughly.
  • Broil in oven 10 minutes (depending on oven), flipping once.
  • *I would also probably add some chopped onion to the sauté, but DH can't have those, so I haven't tried it.
