My husband loves when I make this. I have my local deli grind me fresh pork, and smoked ham...is so yummy with scalloped potatoes, and fresh green beans ...I have also made small ham balls, baked, then crock pot with glaze, and had as an appetizer..never any left.

1 lb ground smoked ham
1 lb ground fresh pork
1 c bread crumbs or cracker crumbs (fine)
2 eggs
3/4 to 1 c milk
1 medium onion diced finely
1 small red bell pepper diced finely (optional) i like the sweetness, and gives nice color
GLAZE
3/4 c brown sugar
1 tsp dry mustard ( i use a little extra, as we like it with a little bite
1/2 c water
1/2 c vinegar

Steps:

  • 1. Ham Loaf : Mix all the ingredients. Shape in a loaf and place in a roasting pan or casserole dish. Bake at 350 degrees for about 1 1/2 hours. After 1/2 hour pour the following sauce over the loaf
  • 2. Glaze: Mix and bring to a boil, reduce heat and simmer till starts to thicken a bit..about 10 min. I sometimes double the sauce, when using it for the meatballs in the crock pot..

2 - 3 lb ham loaf mix or equal parts of ground ham and ground pork
2 eggs, beaten
1/2 medium onion, chopped small
Salt & pepper to taste
1 c crushed saltine crackers
1 c milk
2 Tbsp dried parsley flakes
1 Tbsp mustard
GLAZE
1 1/2 Tbsp prepared mustard
3/4 c brown sugar
3 Tbsp vinegar
2 Tbsp water
1/2 Tbsp dried mustard

Steps:

  • 1. Preheat oven to 350 degree F. In a large bowl, mix milk and cracker crumbs. Let crackers absorb milk a few minutes. Mix all remaining ingredients until well blended. Spray a 9 x13 baking dish. Dump in the mixture and shape into loaf as you would for mess loaf. Place in oven and bake for 1 hour.
  • 2. While baking, place all glaze ingredients into a small saucepan. Bring to a boil, then simmer for a few minutes, stirring often, until sugar is dissolved and starting to thicken some, remove from heat.
  • 3. After hamloaf has baked 1 hour, glaze top and continue baking another 15 minutes. Glaze again, then serve hot. The remaining glaze can be served with.

I just purchase one whole block of smoked ham at the deli and chop it in my processor, or you can use leftover cooked ham from a previous meal, I suggest to not add in any salt until the very end as the cooked ham already has a high salt content, or add it on at the table. This glaze recipe is also good on your cooked hams.

4 tablespoons butter
1 medium onion, chopped
1 small green bell pepper, seeded and finely chopped
1 tablespoon minced fresh garlic
1 (10 ounce) can mushrooms (sliced or whole, drained and coarsley chopped)
1 1/2 lbs ground pork
1 lb smoked ham, finely chopped (I just purchase one whole block from the deli and then chop it up)
1 cup crushed saltine crackers (might have to use a little more)
1 cup full-fat milk
2 large eggs, slightly beaten
1/2 teaspoon cayenne pepper (optional or to taste)
black pepper
salt (optional)
1/2 cup orange marmalade
1/2 cup Dijon mustard
1/3 cup light brown sugar, packaked

Steps:

  • Set oven to 350 degrees.
  • In a medium skillet melt butter, then add in onions, garlic and bell pepper; saute for about 8-10 minutes, or until the veggies are tender; remove to cool slightly.
  • Add in the chopped mushrooms; mix to combine.
  • Using a food processor coarsley chop the cooked ham.
  • In another bowl using clean hands mix together the ground pork, chopped ham, crushed crackers, milk, eggs, cayenne pepper, black pepper and the onion/pepper mixture; mix thoroughly to combine (if the mixture seems to moist then add in a bit more crushed crackers).
  • Transfer the mixture to a 9 x 5-inch baking pan.
  • Using a sharp long knife, make shallow crisscross diamond-shaped patterns in the top of the loaf.
  • Place in oven and bake for 30 minutes.
  • While the loaf is cooking; blend the marmalade, Dijon mustard and brown sugar in a small bowl.
  • After the 30 minutes cooking time, remove the ham loaf from the oven and carefully drain off the fat from the pan.
  • Drizzle about 1/2 of the glaze over the loaf and return to the oven for about 15 minutes, remove and drizzle the remaining glaze over the top and return to oven for about 20 minutes longer or until the loaf is cooked.
  • Transfer the loaf to a platter.
  • Slice and serve with pan juices.

1 cup milk
1 cup dry bread crumbs
1/4 teaspoon pepper
1-1/2 pound ground fully cooked ham
1/2 pound ground pork
GLAZE:
1/3 cup packed brown sugar
1/4 cup cider vinegar
1/2 teaspoon ground mustard
2 tablespoons water

Steps:

  • In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

This is a new-wave meatloaf! I just purchase a 1-pound piece of smoked ham at the deli department for this and chop it finely on my processor, any brand will do as long as it is a smoke flavor ham, or save some of your cooked leftover ham to make this! I have made it two times in one month, including today, and has become a favorite of my familys. You can use regular saltine crackers for this in place of whole wheat crackers, and red bell pepper can be substituted for green, or use both!

4 -6 tablespoons butter
1 medium onion, chopped
1 small bell pepper (green or red bell, seeded and finely chopped, or use half a pepper of both!)
1 1/2 lbs ground pork
1 lb smoked ham, finely chopped
1 cup whole wheat crackers or 1 cup saltine crackers, crushed
1 cup milk
2 large eggs, slighty beaten
salt and black pepper (I use about 1/2 teaspoon salt)
1/2 cup orange marmalade
1/2 cup Dijon mustard
1/3 cup brown sugar, packed

Steps:

  • Set oven to 350 degrees.
  • Melt butter in a medium saucepan over medium-low heat.
  • Add in onions and bell pepper/s; cook until veggies are tender, stirring occasionally (about 8-10 minutes) then cool the mixture completely.
  • In a large bowl mix together ground pork, ham, crushed crackers, milk, eggs, pepper, salt and the cooled onion/pepper mixture; mix well to combine.
  • Shape into an approx 9x5-inch loaf, and place onto a shallow greased baking pan.
  • Using a long knife, make shallow criss-cross (diamond) pattern in the top of of loaf.
  • Bake for 30 minutes.
  • Meanwhile for the glaze blend the orange marmalade, Dijon mustard and brown sugar in a small bowl.
  • After 30 minutes of baking remove from oven and drizzle about 1/3 cup glaze over loaf and return to oven to bake for another 15 minutes.
  • After 15 minutes, drizzle the remaining glaze over loaf and bake for about another 22-25 minutes or until a thermometer inserted in the center of the loaf reads 165°F.
  • Transfer the loaf to a platter; let stand for 10 minutes.
  • Pour the pan juices into a small bowl and whisk to blend.
  • Slice the loaf and serve with the pan juices.
  • Delicious!
