PORK, BEEF, AND BLACK BEAN CHILI

Steps:
- Heat olive oil in heavy large pot over medium-high heat. Add ground pork and ground beef and sauté until brown, about 3 minutes. Add cubed beef and garlic and sauté 5 minutes. Add 2 cups water; bring to boil. Add cumin, chili powder, oregano, salt, and cayenne pepper. Reduce heat, cover, and simmer 10 minutes. Add tomato paste and sugar and simmer 5 minutes. Add tomatoes, onions, and peppers and simmer until vegetables are tender, about 30 minutes.
- Add black beans and cilantro to chili. Add beef broth 3/4 cup at a time, until thinned to desired consistency. (Can be prepared 1 day ahead. Refrigerate uncovered until cold, then cover and keep refrigerated.) Bring chili to simmer. Ladle hot chili into bowls; top with grated cheddar cheese and serve.

Steps:
- In a large pot, cover beans with water and bring to boil; cook for 2 minutes.
- Cover and remove from heat. Let stand 1 hour.
- Drain liquid and cover with 8 cups of cold water.
- Bring to a boil, reduce heat and let simmer for about 1 1/2 hours or until beans are tender.
- Drain and reserve. Meanwhile, heat oil in a large saucepan on high heat and brown meat cubes on all sides.
- Remove from pan and set aside. Add onions and garlic to pan; cook on medium heat until tender about 5 minutes.
- Add chili powder, paprika, oregano, cumin and chili pepper flakes; cook, stirring for 1 minute. Return meat to pan along with tomatoes, including juice, stock and vinegar.
- Bring to boil, let simmer, partly covered, for 1 1/2 hours or until meat is tender.
- Add beans and peppers; season with salt and pepper.
- Cover and cook 15 minutes more or until peppers are tender.
- Add chopped parsley or chopped coriander.

PORK AND BLACK BEAN CHILI MOLE
Think I might have nabbed this from the newspaper. Generally speaking, moles are made with turkey or chicken, but this was quite the tasty surprise that doesn't take at all long to make. Recipe doesn't call for it, but I think a squirt of lime might brighten it up a tad And would be lovely as filling for a taco!

- Spray a 4 quart saucepan with nonstick spray coating. Place onion, garlic, jalapeno and pork in pan and cook over medium high heat, stirring occasionally, until vegetables are tender and meat is lightly browned. Add tomato paste, chicken broth, chili powder and cumin. Cover, heat to a boil, reduce heat and simmer 15 minutes. Stir in chocolate, beans and cilantro and simmer 10 minutes.

BLACK BEAN CHILI WITH PORK, CHORIZO AND CHIPOTLES
Steps:
- Cook beans in a large pot. Cover with unsalted water to cover by two inches and bring to a boil. Maintain a gentle boil and cook until beans are tender, about 2 hours. Heat oil in a large heavy pot such as a dutch oven over medium heat. Add pork and chorizo and saute until completely browned. Add onions and continue to cook until soft, about 5 minutes. Add garlic, paprika, red chili pepper, cumin, oregano, corriander, black peper and salt and cook 1 minute more. Pulse tomatoes and chipotle peppers in a food processer for about 30 seconds. Add to chili in pot. Add chicken stock and water and bring to a boil. Adjust heat and simmer chili for an hour. Add water if chili gets too dry. Drain beans and add to chili with lime juice and cilantro. Stir to incorporate all ingredients. Ladle into bowls to serve and garnish with sour cream if desired.

- For chili:
- Heat olive oil in heavy large pot over medium heat. Add chopped onions and garlic and cook until onions are translucent, stirring often, about 8 minutes. Add chili powder and ground cumin and stir 1 minute. Add 14 cups water, black beans, dried oregano, and grated orange peel. Bring mixture to boil; reduce heat to medium-low, cover with lid slightly ajar, and simmer until black beans are tender, about 2 hours. Add chipotle chiles and season chili to taste with salt. Simmer until black beans are creamy, mashing coarsely with potato masher to desired consistency, adding more water by 1/2 cupfuls if too thick, and stirring frequently, about 30 minutes longer. Season chili to taste with more salt. DO AHEAD: Chili can be made 3 days ahead. Refrigerate uncovered until cold, then cover and keep chilled.
- For salsa:
- Char poblano chiles over gas flame or in broiler until blackened on all sides. Place in large bowl, cover with plastic wrap, and let stand until cool enough to handle, about 20 minutes. Peel, seed, and chop chiles. Place chiles in medium bowl. Add onion and salsa verde. Season to taste with salt and pepper. DO AHEAD: Can be made 2 days ahead. Cover and refrigerate.
- For crema:
- Stir sour cream and minced chipotle chiles in medium bowl. Cover and refrigerate.
- For pork:
- Heat oil in heavy large skillet over high heat. Sprinkle pork ribs with salt and pepper. Working in batches, add pork ribs to skillet and cook until browned, about 7 minutes per batch. Transfer pork ribs to medium bowl. Return all pork ribs and any juices to skillet. Add chicken broth, cover, and reduce heat to low. Cook until pork is tender, stirring occasionally, about 40 minutes. Transfer to another medium bowl.
- Meanwhile, rewarm chili. Stir cilantro and cumin seeds into salsa.
- Divide chili among bowls. Top with pork, salsa, chipotle crema, and cheese.
- Ingredient tip:
- New Mexico chili powder can be found at specialty foods stores and at Latin markets. Canned chipotle chiles in adobo and fresh poblano chiles (sometimes called pasilla chiles) can be found at some supermarkets and at specialty foods stores and Latin markets.
INSTANT POT PORK AND BLACK BEAN CHILI
I love black beans. I wanted to make a different twist on chili and it turned out fantastic!

- To prepare beans: rinse and pick through beans and add to saucepan with baking soda and water. Bring to a boil and boil 2 minutes (the water will turn blue green). Drain and rinse well. Return to a fresh pot of boiling hot water and let soak for 1 hour.
- Brown meat in skillet then put in pressure cooker. In the same skillet, saute onions and peppers for 2-3 minutes till slightly soft.
- Drain beans and add to pressure cooker. Add remaining ingredients and cook on beans/lentils setting for 25-30 minutes. Remove meat from pot and debone and chop, return to pot and stir. Enjoy.
PORK AND BLACK BEAN CHILI
Steps:
- Saute pork in butter until lightly browned; add vegetable to lightly brown. Cook about 5 minutes. Add the rest of ingredients including the undrained black beans and cover.
- Heat until bubbling over medium high approx. 30 minutes. Top with chopped cilantro and serve. Can be served over cooked rice also.
