RIB-EYE STEAKS WITH PORCINI RUB



Rib-Eye Steaks with Porcini Rub image

1/4 cup dried porcini mushrooms, broken up
2 tablespoons kosher salt
2 tablespoons whole black peppercorns
2 tablespoons granulated sugar
1 tablespoon granulated garlic or minced garlic
1 tablespoon red pepper flakes
Three 1 1/2-inch-thick rib-eye steaks
Olive oil, for the pan
6 ounces baby arugula
Juice of one lemon
Oven-Dried Tomatoes, recipe follows
Balsamic vinegar, for drizzling
1 pint cherry tomatoes, sliced in half
Olive oil
Kosher salt and freshly ground black pepper
Crushed red pepper flakes, optional

Steps:

  • For the steaks: Process the mushrooms in a spice grinder until they form a powder; place it in a jar. Process the salt and peppercorns in the same grinder and add it to the mushroom powder. Process the sugar in the grinder and add it to the mushroom mix. Process the garlic and red pepper flakes in the grinder, add it to the mix and shake it all up.
  • Place the mixture on a sheet pan and coat all sides of the steaks with the rub.
  • Lightly coat a grill pan with olive oil and heat it over medium-high heat. Place the steaks on the hot pan and cook for 7 minutes on each side. Allow the steaks to rest on a platter while you make the salad.
  • For the salad: Put the arugula in a bowl and toss with the lemon juice. Slice the steaks crosswise.
  • Place the salad on a platter and arrange the sliced steak on top. Sprinkle Oven-Dried Cherry Tomatoes over the steak and drizzle with balsamic vinegar before serving.
  • Preheat the oven to 300 degrees F.
  • Place the tomatoes in a bowl and drizzle with olive oil. Sprinkle with salt, black pepper and pepper flakes, if using. Toss well and place on a sheet pan in a single layer. Place the sheet pan in the oven and roast for 3 hours, tossing occasionally.

Pan-Seared Rib-Eye Steaks with Porcini and Rosemary Rub image

2 2-inch-thick grass-fed boneless rib-eye steaks (about 3 pounds total)
1/2 cup soy sauce
1/4 ounce dried porcini mushrooms* (half of 1/2-ounce package)
1 tablespoon finely chopped fresh rosemary
2 teaspoons coarsely ground black pepper
1 tablespoon olive oil

Steps:

  • Place steaks and soy sauce in large resealable plastic bag. Seal bag, releasing excess air; turn to coat. Let steaks marinate at room temperature 2 hours, turning occasionally.
  • Process porcini mushrooms in spice mill to fine powder. Mix 1 1/2 tablespoons mushroom powder, rosemary, and pepper in small bowl (reserve any remaining powder for another use).
  • Drain steaks; pat dry. Sprinkle mushroom-rosemary rub generously over both sides of steaks, pressing to adhere.
  • Heat oil in heavy large skillet (preferably cast-iron) over medium-high heat. Fry steaks until browned and cooked to desired doneness, about 8 minutes per side for rare, adjusting heat to medium if browning too quickly.
  • Transfer steaks to plate; tent with foil to keep warm. Let rest 10 minutes. Cut into 1/2-inch-thick slices and serve.
  • *Available in the produce section of many supermarkets and at specialty foods stores and Italian markets.

DRY-RUBBED RIB-EYE WITH CHILI LOBSTER



Dry-Rubbed Rib-Eye with Chili Lobster image

3 tablespoons kosher salt
1 1/2 tablespoons brown sugar
1 tablespoon porcini mushroom powder
2 teaspoons chile de arbol powder
2 teaspoons garlic powder
One 1 1/2-inch-thick bone-in rib-eye steak
Extra-virgin olive oil
3 tablespoons coriander seeds
2 stalks celery, cut in half
1 head garlic, halved, plus 5 cloves garlic
1 lemon, halved
1 bunch thyme
1/4 bottle white wine
Kosher salt
One 1 1/2-pound lobster
3 tablespoons Calabrian chili paste
2 cups baby arugula, plus more for steak garnish
1/2 red onion, thinly sliced
2 teaspoons chopped fresh parsley

Steps:

  • For the steak: Preheat a convection oven to 400 degrees F.
  • Mix together the salt and brown sugar and the porcini, chile de arbol and garlic powders in a bowl, using your fingers to make sure all the ingredients are evenly distributed. Rub the steak generously on all sides with the spice rub. Wrap tightly in plastic wrap and leave to sit at room temperature for 20 minutes.
  • Preheat a cast-iron pan over high heat. When the pan is hot, add enough olive oil to coat the bottom. Unwrap the steak and add it to the pan; cook until well charred on all sides. Remove the steak to a baking sheet, transfer to the oven and roast until medium-rare, about 6 minutes. Allow the steak to rest for 4 to 5 minutes, then cut the steak off the bone and slice it across the grain, on the bias.
  • For the chili lobster: Bring a large pot of water to a boil. Add the coriander, celery, halved garlic head, lemon, thyme, white wine and a good amount of salt.
  • Add the lobster and poach for 6 minutes. Remove the lobster to a baking sheet to cool.
  • In a large saute pan, add enough oil to coat the bottom. Add the 5 garlic cloves, chili paste and some salt and cook over medium heat until the garlic turns golden brown and the mixture fragrant.
  • Pull the claws off the lobster and set aside. Set the body upside down on a cutting board and slice the entire lobster in half lengthwise. Discard the contents inside the head and body cavities, leaving the tail meat intact. Remove the meat from the claws and add it to the garlic-chili sauce; cook just until the meat is warmed through. Remove the meat from the pan and set aside. Place the lobster halves cut-side down in the sauce and sear for 1 to 2 minutes. Remove the lobster to a plate. With the pan off the heat, stir in the parsley.
  • In a small bowl mix together the arugula, red onion and a tablespoon of the garlic-chili sauce from the pan. Season with salt and toss to coat.
  • Assembly: Place some of the arugula reserved for garnish on one side of a serving platter and lay the sliced steak over it. Pour any meat juices from the baking sheet over the steak. Arrange the lobster halves on the other side of the platter and fill the cavities with some of the arugula salad. Top with the warmed claw meat and pour a couple tablespoons of the garlic-chili sauce over the lobster.
  • Drizzle both steak and lobster with big fat finishing oil (extra-virgin olive oil).

PORCINI-RUBBED BEEF RIB ROAST

Using dried porcini mushrooms as the base of the rub for this dramatic centerpiece roast gives it the funky, earthy flavor usually associated with expensive dry-aged beef.

1/3 cup dried porcini mushrooms (about 1/2 ounce)
2 tablespoons kosher salt
1 tablespoon whole black peppercorns
1 teaspoon marjoram or oregano leaves
1 (4-rib) bone-in rib roast (about 10 pounds)
Flaky sea salt and Horseradish-Yogurt Sauce (for serving; optional)

Steps:

  • Pulse mushrooms, kosher salt, peppercorns, and marjoram in a spice mill or mini food processor until coarsely ground. Pat meat dry, then rub mushroom mixture all over. Transfer to a wire rack set inside a rimmed baking sheet. Let sit at room temperature 1 hour (for even more flavor, chill, uncovered, overnight, then let sit at room temperature 1 hour before roasting).
  • Preheat oven to 225°F. Roast meat until an instant-read thermometer inserted into the center registers 120°F (for medium-rare), about 4 hours. Tent with foil and let sit at room temperature at least 30 minutes and up to 1 hour.
  • Increase oven temperature to 500°F. Remove foil and roast meat until browned and crisp, 5-10 minutes. Immediately transfer to a cutting board. Cut off ribs in 1 piece, then slice into individual ribs. Carve roast into 1/2" slices and arrange on a serving platter along with ribs. Season with sea salt and serve with Horseradish-Yogurt Sauce, if desired.

1/2 cup steak rub
4 tablespoons paprika
2 tablespoons course black pepper
1/2 tablespoon white pepper
1/2 tablespoon cayenne pepper
4 tablespoons rib rub
5 tablespoons minced garlic
1/2 cup brown sugar
6 tablespoons balsamic vinegar
1 tablespoon sea salt
1/4 cup chopped fresh rosemary
1/4 cup chopped fresh tarragon
1/4 cup chopped fresh thyme
Olive oil, as needed
15 steaks

Steps:

  • Combine all ingredients, except oil, in a large bowl. While stirring, add olive till the mixture is a "slushy" consistency. Submerge steaks in mixture, rubbing it into the surface of the steaks. Marinate steaks in mixture for approximately 30 minutes. Preheat grill to 425 to 450 degrees F and place steaks on grill, flipping halfway through. To cook a 16-ounce steak to preferred doneness, cook for: rare, 2 to 3 minutes on each side, medium-rare, 4 to 5 minutes on each side and medium, 6 to 7 minutes on each side

DRY-RUBBED RIB-EYE

3 tablespoons salt*
2 tablespoons brown sugar
1 teaspoon pulverized crushed red pepper
2 teaspoons pimenton (Smoked Spanish Paprika)
1 teaspoon garlic powder
Oil, for brushing grill
2 (22 to 24-ounce) bone-in rib-eye steaks
Extra-virgin olive oil

Steps:

  • Combine all of the dry ingredients in a bowl. Use your fingers to make sure that all of the ingredients are evenly distributed. Rub the outside of each steak generously with the rub. Wrap each steak in plastic wrap and refrigerate for at least 24 hours, 2 to 3 days is better. This will make the steak taste like it has been aged.
  • Preheat a gas or charcoal grill. Brush and oil the grill to loosen and remove any crud. Remove the steaks from the refrigerator about 20 to 30 minutes before cooking. Right before cooking remove the plastic wrap and lightly oil the steaks. Place the steaks on a very hot grill to put a char on both sides of the steak. When both sides of the steak have become well charred move the steak to a cooler part of the grill to continue cooking for 6 to 7 minutes per side for medium rare. Remove the steak from the grill and let rest in a warm spot for 7 to 8 minutes. Cut the steak off the bone and slice on the bias across the grain. Drizzle with extra-virgin olive oil and serve immediately.

PORCINI-RUBBED RIB OF BEEF

This rib of beef is a real showstopper and packed with umami flavour, but it's so easy to make too. Rub in the porcini powder and salt 24 hours before cooking and let it do the hard work for you

dried porcini mushrooms
3kg grass-fed rib of beef (3 bones)
1 tbsp smoked sea salt (I like to use Maldon)

Steps:

  • Tip the porcini mushrooms into a food processor and blitz to a powder. Put the beef in a roasting tin and rub all over with the porcini powder, smoked salt and plenty of freshly ground black pepper, do this at least 24 hrs before cooking. Cover loosely and place in the fridge overnight.
  • Remove the beef from the fridge at least 3 hrs before you want to cook it. Heat oven to 140C/120C fan/gas 2. Uncover the beef and cook for 1 hr 20 mins.
  • Turn the oven up to 220C/200C fan/gas 7 and cook for another 25 mins for medium rare until the fat is blistered and browned. If you have a meat thermometer, the core temperature should be 55C for rare, 65C for medium and 75C for well done (bear in mind that the beef will keep cooking and the temperature will continue to rise slightly as it sits). Leave to rest under a piece of foil for at least 20 mins and serve with our bone marrow stuffing, sautéed wild mushrooms and umami gravy.
